QUICK & EASY CHOCOLATE MUG CAKE
This easy chocolate mug cake recipe is the perfect quick fix dessert. No need to make an entire cake with the satisfying single-serving treat.

- This includes the egg yolk, milk, oil and vanilla.
- This includes the flour, cocoa powder, baking powder and sugar.
- Make sure there are no dry bits of batter on the bottom of the mug.
- This mug cake cooks for me in 2 minutes, but the time may vary depending on the strength of your microwave. I'd start with 1 minute 45 seconds and then check the cake. It is done when it has risen nicely and is firm on the top when you press it gently with your finger. (Careful, it will be hot.)
- Let the mug cake cool for a few minutes. It will be very hot! Then add your favorite toppings. I'm always partial to caramel sauce, sprinkles, ice cream or chocolate sauce.

Steps:
- Add 4 tbsp self-raising flour, 4 tbsp caster sugar and 2 tbsp cocoa powder to the largest mug you have (to stop it overflowing in the microwave) and mix.
- Add 1 medium egg and mix in as much as you can, but don't worry if there's still dry mix left.
- Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding 2 tbsp chocolate chips, nuts, or raisins, if using, and mix again.
- Centre your mug in the middle of the microwave oven and cook on High for 1½ -2 mins, or until it has stopped rising and is firm to the touch.
