This recipe dates back quite a few years. My mother made it for me when I was a child, and I'm now in my 70s.

3 large eggs
1 cup sugar
3 tablespoons cold water
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
FILLING:
1 cup sugar
3 tablespoons all-purpose flour
1 large egg, lightly beaten
3/4 cup water
1/4 cup lemon juice

Steps:

  • Preheat oven to 375°. Line a greased 15x10x1-in. baking pan with waxed paper. Grease the paper; set aside. In a large bowl, beat eggs for 3 minutes. Gradually add sugar; beat for 2 minutes or until mixture becomes thick and lemon-colored. Stir in water. Combine dry ingredients; fold into egg mixture. Spread batter evenly in prepared pan. , Bake for 12-14 minutes or until cake springs back when lightly touched. Cool cake in pan on a wire rack for 5 minutes. , Invert onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack., For filling, in a small saucepan, combine the sugar, flour, egg, water and lemon juice. Cook and stir over medium heat until mixture comes to a boil. Cook and stir for 1 minute or until thickened. Remove from the heat; cool to room temperature. , Unroll cake; spread filling evenly over cake to within 1 in. of edges. Roll up again. Place seam side down on a serving platter. Cover and refrigerate for 1-2 hours. Store in the refrigerator.

  • In a mixing bowl, beat eggs and sugar until thick and smooth.
  • Add water.

  • Spread batter evenly in pan.
  • Bake at 375 for 12-14 minutes or until cake springs back when lightly touched in center.

  • Turn cake out onto a kitchen towel.
  • Gently peel off the waxed paper.
  • Beginning with short side, roll up cake, jelly roll style.
  • Cool completely on a wire rack.
  • For filling, in a saucepan, combine sugar, flour, egg, water and lemon juice.
  • Cook and stir over medium heat until mixture comes to a boil.
  • Cook and stir 1 minute longer until thickened.
  • Remove from the heat; cool to room temperature.
  • Unroll cake; spread cooled filling to within 1 inch of edges.
  • Roll up again.
  • Cover and chill for 1-2 hours before serving.
  • Sprinkle with powedered sugar before serving, if desired.
  • Store in the refrigerator.

1 1/2 cups confectioners' sugar, plus more for dusting
1/4 cup vegetable oil
1/4 cup whole milk
1 vanilla bean, split lengthwise and seeds scraped
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
5 large egg whites
1 1/3 cups granulated sugar
1 vanilla bean, split lengthwise and seeds scraped
Pinch of salt
3 sticks unsalted butter, cut into pieces, at room temperature
1 tablespoon finely grated lemon zest, plus 2 tablespoons fresh lemon juice
1/2 cup lemon curd

Steps:

  • Make the cake: Preheat the oven to 375 degrees F. Coat an 11-by-17-inch rimmed baking sheet or jelly roll pan with cooking spray; line the bottom with parchment paper and spray the parchment. Beat the egg whites and lemon juice in a large bowl with a mixer on medium speed until soft peaks form, about 3 minutes. Add 1/2 cup confectioners' sugar. Increase the speed to medium high and beat until stiff peaks form, 3 to 4 minutes.
  • Whisk the egg yolks with the vegetable oil, milk and vanilla seeds in a separate large bowl until smooth. Sift the remaining 1 cup confectioners? sugar, the flour, baking powder and salt into a medium bowl; whisk into the yolk mixture until smooth. Stir about one-third of the whites into the batter with a rubber spatula, then fold in the remaining whites in two batches. Spread the batter in the prepared pan; bake until the cake springs back when gently pressed, 12 to 14 minutes.
  • Immediately sift confectioners' sugar generously over the top of the warm cake and loosen the edges with a knife; lay a clean kitchen towel (not terry cloth) over the cake. Place another baking sheet over the towel and flip the cake with the baking sheets to invert it onto the towel. Remove the top baking sheet and parchment. Starting at a short end, roll up the cake and the towel together into a spiral. Transfer seam-side down to a rack and let cool completely.
  • Meanwhile, make the frosting: Whisk the egg whites, granulated sugar, vanilla seeds and salt in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Cook, whisking, until the sugar dissolves, 2 to 3 minutes. Transfer the mixture to a stand mixer and beat with the whisk attachment on medium-high speed until cooled and stiff peaks form, 6 to 8 minutes. Beat in the butter, 1 piece at a time, until combined (the mixture may look curdled). Add the lemon zest and juice. Switch to the paddle attachment and continue to beat until smooth, about 2 minutes.
  • Gently unroll the cake. Spread 2 cups of the frosting over the cake about 1/4 inch from the edges, then top with a layer of the lemon curd; swirl together. Reroll the cake (without the towel). Trim the ends with a serrated knife. Transfer to a platter and spread the remaining frosting on the top and sides of the cake.

1 3/4 cups Betty Crocker™ Super Moist™ yellow cake mix
1/3 cup water
2 tablespoons lemon juice
2 tablespoons vegetable oil
2 tablespoons powdered sugar
1 cup whipping cream
2 tablespoons powdered sugar
4 teaspoons grated lemon peel
1 tablespoon powdered sugar

Steps:

  • Heat oven to 375°F (350°F for dark or nonstick pan). Line bottom only of 15x10x1-inch pan with foil or waxed paper; spray foil and sides of pan with baking spray with flour. Place paper baking cup in each of 8 regular-size muffin cups.
  • In large bowl, beat eggs with electric mixer on high speed about 5 minutes or until thick and lemon colored. Add cake mix, water, lemon juice, oil and 2 teaspoons lemon peel. Beat on low speed 30 seconds, then on medium speed 1 minute, scraping bowl occasionally. Pour 3 1/4 cups batter into foil-lined pan; spread evenly. Divide remaining batter among muffin cups.
  • Bake 13 to 15 minutes or until cake (or cupcakes) springs back when lightly touched in center. If necessary, run knife around edge of pan to loosen cake. Turn cake upside down onto clean kitchen towel sprinkled with 1/4 cup powdered sugar; carefully remove foil. While hot, carefully roll up cake and towel from narrow end. Cool completely, seam side down, on cooling rack, about 1 hour 15 minutes. Remove cupcakes from pan; cool completely and freeze for another use.
  • In chilled large glass or metal bowl, beat whipping cream and 2 tablespoons powdered sugar on medium speed until foamy, then on high speed until stiff peaks form. Fold in 4 teaspoons lemon peel.
  • Unroll cake carefully and remove towel. Spread filling evenly over cake; roll up cake. On serving platter, arrange cake, seam side down; cover loosely and refrigerate at least 1 hour. Before serving, sprinkle with 1 tablespoon powdered sugar. Store covered in refrigerator.

I found this in one of my pampered chef recipe books and it has become my favorite dessert to serve. This recipe makes two rolls, and once I brought one roll to a potluck, and wrapped the other one in wax paper and put it in a ziplock bag and froze it!! We pulled it out a few weeks later and it was just as delicious even after being defrosted! Enjoy!

1 (16 ounce) package angel food cake mix
3/4 cup powdered sugar (divided)
1 (11 3/4 ounce) jar strawberry ice cream topping (divided)
1 (8 ounce) package cream cheese (softened)
1 -2 lemon
7 drops yellow food coloring (optional)
1 (8 ounce) container frozen light whipped dessert topping, thawed, divided
powdered sugar
12 whole strawberries (with stems and lemon slices for garnish)

Steps:

  • Preheat oven to 350 degrees.
  • Cut 18 inch long piece of parchment paper, press into bottom and up sides of cookie sheet or pan.
  • Prepare angel food cake mix as directed on box, pour batter over parchment (spread evenly).
  • Bake 30-35 minutes or until top springs back when lightly touched with fingertip.
  • Remove and allow to cool.
  • Sprinkle ½ cup of powdered sugar over cake. Place sheet of parchment over cake and carefully turn cake over onto clean dish towel.
  • Remove pan, and starting on the short end, roll up cake with towel and parchment. Leave rolled up and cool completely in fridge.
  • Unroll cake and transfer to clean surface, discard parchment on top.
  • Spread ¼ cup of strawberry ice cream topping on cake, press lightly.
  • Combine cream cheese and ¼ cup of powdered sugar.
  • Add 1 T of lemon zest ( I personally like about 2 T and lots of juice to make it really a strong lemon flavor).
  • Add food coloring and mix well.
  • Fold in 1 cup of the whipped topping, gently spread over the strawberry topping (within 1 inch of the edges).
  • Reroll the cake (without the parchment paper!).
  • Sprinkle with additional powdered sugar and slice with serrated knife.
  • Garnish with whipped topping, fresh strawberries and lemon slices.

1/4 cup powdered sugar
2 teaspoons lemon zest

1/4 cup Chambord raspberry liquor (optional)
1 (6 ounce) jar raspberry pastry filling

Steps:

  • Grease a jelly roll pan and line with waxed paper.
  • Grease and flour paper.
  • Mix cake according to package directions and pour into prepared pan.
  • Bake 15 minutes at recommended temperature until lightly browned.
  • Remove from oven and turn onto powdered sugar coated kitchen towel.

  • Garnish with powdered sugar, lemon slices and raspberries.

1/2 cup warm 2% milk (110° to 115°)

3 to 3-1/2 cups all-purpose flour
FILLING:
1/2 cup sugar
2 teaspoons grated lemon zest
1/2 teaspoon ground cinnamon
1 tablespoon poppy seeds, optional
1/4 cup butter, melted
1 cup slivered almonds, toasted
GLAZE:
1/2 cup sugar
1 can (12 ounces) frozen lemonade concentrate, thawed
1 tablespoon butter
2 teaspoons grated lemon zest

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine milk, butter, egg, sugar, salt, yeast mixture and 2 cups flour; beat on medium speed until smooth. The bright burst of lemon in these breakfast or coffee rolls is delightful. It's a lot like Monkey Bread, and I expect refrigerated crescent rolls would be a good, fast alternative for the bread dough (without the rising times).

1/4 cup butter, melted
1/2 cup sugar
4 ounces cream cheese, softened
2 teaspoons Grand Marnier or 2 teaspoons orange liqueur

1 tablespoon fresh lemon juice

Steps:

  • Thaw bread dough for two hours at room temperature or twelve hours overnight in refrigerator.
  • Cut dough into 12 equal portions.

Steps:

  • Make filling:
  • Combine sugar and cornstarch in heavy medium saucepan. Whisk in 1 1/4 cups buttermilk and lemon juice. Whisk in egg yolk. Simmer mixture over medium heat until thick, stirring constantly, about 1 minute. Stir in butter, lemon peel and food coloring. Remove from heat. Transfer to medium bowl. Whisk in 2 tablespoons buttermilk. cover surface of filling with plastic wrap; cool to room temperature. (Can be made 1 day ahead. Chill.)
  • Make cake:
  • Preheat oven to 375°F. Spray 13 1/4 x 9 1/4 x 3/8-inch jelly roll pan with vegetable oil spray. Line pan with waxed paper and spray paper. Lightly coat paper with flour; tap out excess.
  • Combine flour and baking powder in medium bowl. combine eggs and egg whites in large metal bowl. Set bowl over saucepan of simmering water (do not allow bowl to touch water). Whisk eggs until just warm to touch, about 2 minutes. Remove bowl from over water. Add sugar and salt. Using electric mixer, beat egg mixture until fluffy, thick and pale, about 6 minutes. Sift flour mixture atop egg mixture; gently fold in. Fold in butter (do not overmix or batter will deflate).
  • Transfer batter to prepared pan. Tilt pan to coat thinly. Bake until top springs back when touched and edges are light golden, about 12 minutes.
  • Sift powdered sugar over hot cake. Place 2 paper towels over cake. Place rimless baking sheet atop cake and invert cake onto baking sheet. Remove waxed paper. Trim edges of cake to form 13 x 8-inch rectangle. Starting at 1 short end of cake, roll up jelly roll style, discarding paper towels. Cool completely.
  • Unroll cake. Whisk filling to smooth. Spread filling evenly over surface of cake. Starting at 1 short end of cake re-roll cake jelly roll style. Transfer cake, seam side down to platter. Cover with plastic wrap and refrigerate 2 hours. (Can be prepared 1 day ahead. Keep chilled.) Cut cake into eight 1-inch slices. Garnish with lemon slices and mint sprigs, if desired.

Steps:

  • Line a 15x10x1-in. baking pan with waxed paper; lightly coat paper with cooking spray and set aside., Preheat oven to 350°. Add vanilla and cream of tartar to egg whites; beat on medium speed until soft peaks form. Gradually beat in sugar, 2 Tbsp. at a time, on high until stiff glossy peaks form and sugar is dissolved. Fold in flour, about 1/4 cup at a time., Gently spread batter into prepared pan. Bake 15-20 minutes or until cake springs back when lightly touched. Cool 5 minutes. , Turn cake onto a kitchen towel dusted with 1 tablespoon confectioners' sugar. Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack. , In a large saucepan, combine sugar and cornstarch; stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes. Remove from heat. Stir a small amount of hot mixture into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes. , Remove from heat. Gently stir in lemon juice, zest and, if desired, food coloring. 1 lemon roulade, rolled into a 10-inch-wide log, at room temperature or slightly cooled (see recipe)
2/3 cup sweet orange marmalade (do not use bitter orange marmalade) or apricot preserve
1 teaspoon lemon juice
Powdered sugar
Lemon filling, thoroughly cooled (see recipe)
1/4 cup heavy (whipping) cream
Powdered sugar, for dusting

Steps:

  • To ready the cake roll: if lemon roulade has been refrigerated or frozen, set out to warm almost to room temperature. Combine marmalade and 1/2 tablespoon water in a small saucepan over medium-high heat. Simmer, stirring, for 1 1/2 minutes and remove from heat. Stir in lemon juice. Strain marmalade mixture through a medium-fine sieve and set aside until cooled and thickened but still spreadable.
  • Carefully unroll roulade on a large sheet of wax paper dusted with powdered sugar. Spread marmalade mixture evenly over cake surface using a spatula or large knife. Lightly cover with wax paper.
  • To prepare lemon cream: In a mixing bowl with mixer set on high speed, beat cooled lemon filling until completely smooth. In another mixing bowl with mixer set on high speed, beat heavy cream until firm peaks form. Beat lemon filling into whipped cream until smoothly incorporated.
  • Spread roulade surface evenly with lemon cream, stopping about 1 inch from edges (to prevent filling from squeezing out during rolling). Roll up cake neatly, but not so tightly that filling squeezes out. Wrap tightly in wax paper, twisting ends of paper to keep cake from unrolling. Transfer to a tray or baking sheet and refrigerate for at least 4 hours and up to 48 hours.
  • To serve: Trim ends of roll using a serrated knife. Dust length of cake roll with sifting of powdered sugar. Cut cake crosswise into slices using a sharp serrated knife.

3/4 cup water

Steps:

  • To Make Clear Lemon Jelly Filling: Mix sugar, cornstarch and salt in saucepan.
  • Stir in water gradually. Cook, stirring constantly, until mixture thickens and boils.
  • Boil and stir 1 minute. Remove from heat. Add lemon peel and butter.
  • Stir in lemon juice and food color; cool. If filling is too soft, refrigerate until set. Saliva can break down the filling; avoid tasting and douple dipping the spoon.
  • For the Cake: Preheat over to 375 degrees. Line a10-x-15-inch jelly roll pan with parchment paper, then grease and dust the parchment with flour, tapping our any excess.
  • Beat the eggs with a rotary beater until thick, about 4 minutes. Gradually beat in 1 cup sugar. Beat in all at once water and vanilla.
  • Sift together and beat in all at once flour, baking powder and salt. Beat just until smooth. Pour into prepared pan.
  • Bake in the preheated oven for 12 to 15 minutes.
  • Immediately turn upside down on a towel sprinkled with confectioners' sugar and remove parchment paper.
  • Spread cake at once with clear lemon jelly filling and roll up beginning at short end.
