- In a large bowl, combine the vegetables, soup and chicken. Transfer to an ungreased 9-in. pie plate. In another bowl, combine egg, milk and biscuit mix just until moistened. Pour over chicken mixture. , Bake at 400° for 30-35 minutes or until golden brown.

JAMIE OLIVER'S QUICK AND EASY CHICKEN PIE
Steps:
- Preheat the oven to 200°C / 400°F.
- Wash, dry and dice the chicken fillet into bite-sized cubes. Combine them with the corn flour, soy sauce and black pepper and set aside to marinate for 15 minutes. The corn flour will help to keep the chicken tender while the soy sauce will help the chicken to brown better.
- Heat a large non-stick pan (deep enough to hold liquid) over high heat and add in some oil. Turn the heat down to medium and sear the chicken pieces until browned on all sides. Do this in a few batches (adding more oil if necessary) if your pan cannot hold all the chicken pieces in a single layer. Remove the seared chicken (they don't have to be fully cooked) with a slotted spoon and place them on a large plate.
- Keeping the pan over medium heat, add in the sliced mushrooms and sauté until the mushrooms have reduced in size. Season with a little salt and black pepper. Add in the seared chicken and the potato cubes. Add in the chicken stock, flour and butter and turn the heat up to high and bring the mixture to a boil. Add in the dried sage and cook until the mixture has thickened. Stir in the sour cream and turn off the heat.
- Transfer mixture to a 8x8-inch greased baking tray. Cover with puff pastry / shortcrust pastry, and make decorative patterns on the edges if desired. Cut 3 slits to release steam
- Brush the top with the beaten egg and bake for 20 minutes, until the pastry is golden-brown and the chicken juices are bubbling and overflowing.
- Let the chicken pie rest for 5 to 10 minutes before serving.
CHICKEN PIE

- Strip carcass of chicken, cutting meat into large pieces. If you prefer you can buy uncooked boneless chicken but you would need to pre cook it at this stage.
- Saute leek (or onion), bacon and mushrooms in the butter and oil. When soft, add flour.
- Add stock, stirring continuously then add the milk so that the sauce is rich and creamy. If the sauce is a little thick, add more liquid.
- Add the pre cooked chicken, and stir carefully until meat is completed coated and empty contents into a large pie dish. Again if you prefer to make this like a more traditional pie you can line the pie dish with the rolled out short crust pastry before putting in the filling.
- Cover with pastr chosen pastry, making a vent in the pie top, and brush with milk.
- Bake in oven on a high temperature (200C/400F/gas 6) for around 25mins or until golden.
- Tip:
- With the stockcube and bacon, there is no need for extra seasoning however, you could substitute some of the stock with a little leftover white wine.
QUICK ROTISSERIE CHICKEN POT PIES
Why fuss with making a traditional pot pie? You can finish this easy stove-top version in half the time. Topping the finished filling with golden, buttery pieces of puff pastry is a delicious, fast and pretty finish to this bowl of comfort.

- Preheat oven to 375 degrees F. Have rack 1 rung up from center in oven.
- Gather your ingredients.
- Lightly flour work surface and roll out dough a bit; cut into 4 to 6 portions (I cut rectangles to keep it easy and based on how many people I'm feeding). Cut a small hole in center of each piece of dough with a 1-inch round or heart shaped cookie cutter, or freehand cut some slits or designs with tip of sharp small knife. Using a fork, beat an egg in a small dish with a splash of water. Line a baking sheet with a sheet of parchment and arrange dough pieces. Brush dough with egg wash and bake until puffed and golden, 20 to 22 minutes.
- Peel and chop the onion and potato. Halve the celery and carrot lengthwise and chop. Halve the leek, trim top tough greens and roots and run under cold water while fanning the leek to release grit. Shake the leek of excess water and thinly slice. Peel and slice planks off the apple around the core, then stack and dice 1/4 inch.
- Heat a Dutch oven or large deep skillet over medium to medium-high heat. Melt butter and when it foams add the onion, potato, celery, leek, apple, bay and herb bundle and season with salt, pepper and nutmeg. Cook to soften, 8 to 10 minutes, partially covered and stirring occasionally. Add flour and stir a minute. Add stock and whisk in to thicken a bit.
- Separate the chicken from the bones and skin and pull meat. Add to sauce to reheat. Remove bay and herbs. Remove chicken from heat and stir in Dijon mustard, cream and lemon juice.
- Serve the chicken and vegetables in bowls and top with pastry.

- Preheat the oven to 425 degrees F. Put the chicken in a 2-quart casserole dish. Combine the broth and soup in a medium saucepan and bring the mixture to a boil. - In a large saucepan, melt butter over medium-high. Add onion, celery, and carrots and cook until onion is translucent, about 4 minutes. Add flour and cook, stirring, 1 minute. I'm making chicken pot pie in a pan, which is usually still called chicken pot pie, but it shouldn't be since it really is a completely different, far superior, species with a much higher crust-to-filling ratio, making it even more savory and deeply delicious.

- Preheat the oven to 425 degrees F (220 degrees C).
- Melt butter in a 12-inch cast iron skillet over medium-high heat. Add diced onion and salt. Cook, stirring, until onions start to soften, and the edges begin to brown, 3 to 4 minutes. Add chicken, and cook, stirring, until the chicken loses its pink color, and starts to brown in spots, 3 to 4 minutes.
- Sprinkle flour over top, then cook and stir for about 2 minutes. Pour in the broth and bring to a simmer, scraping the bottom of the pan with a spatula. Stir in carrots, celery, black pepper, and cayenne.
- Cook the mixture, stirring occasionally, until it's as thick as you want, 5 to 10 minutes. For a thick, sticky filling once baked, reduce until the sauce coats the back of a spoon. For a saucier filling, don't reduce the mixture at all.
- Turn off the heat and stir in the peas and thyme. Taste for seasoning and reserve until needed.
- Roll out pie or pastry dough to form a circle about 14 inches in diameter.
- Fold over 1/2 inch of dough all the way around, and then crimp the edge to make a decorative scalloped design. Cut or punch out a 1-inch hole in the center of the dough.
- Place the pan on top of a sheet pan in case filling bubbles over in the oven. Carefully place the dough over the filling, and adjust until it's centered. Press the crust lightly into the filling. Brush the top with an egg wash if desired.
- Bake in the preheated oven until crust is browned and filling is bubbling, about 40 minutes. Let rest for 5 minutes before serving.

- Divide evenly into 2 deep dish pie plates (I use the Pampered Chef one).
- Remove one of the refrigerated pie crust rolls and let warm to room temperature.

- Let stand for 15 minutes before serving. Yummy!
