Chicken chow mein is so much better than takeout! It is filled with chicken, veggies, classic chow mein noodles and the best homemade chow mein sauce. You will love this one pan dinner!

1 lb chicken breast (boneless, skinless)
3 tbsp oil
12 oz chow mein noodles ((uncooked noodles))
2 cups cabbage
1 large carrot (julienned)
1/2 batch green onions
2 garlic cloves
6 tbsp oyster sauce
3 tbsp low sodium soy sauce
3 tbsp light sesame oil ((not toasted))
1/2 cup chicken broth
1 tbsp cornstarch
1 tbsp granulated sugar

Steps:

  • In a small mixing bowl, use a whisk to combine oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth and cornstarch. Set aside.
  • Cook your noodles according to package instructions then drain, rinse with cold water and set aside.
  • Heat a large wok or pan with olive oil over medium-heat. Cut your chicken breasts into bite-sized strips and cook them in the oil until golden brown. Remove strips and set aside.
  • Add carrots, cabbage and pressed garlic and saute for a few minutes until veggies are slightly softened and the cabbage is a bit translucent.
  • Add chicken and noodles back into the pan. Pour sauce over the top and continue cooking all the ingredients together for another 2 minutes.
  • Garnish your chow mein with chopped green onions and serve the noodles straight from the pan and piping hot!

200g /6 oz chicken breast or thigh fillets (, thinly sliced (Note 1 tenderise option))
4 cups green cabbage (, finely shredded (Note 3))
1 1/2 tbsp peanut oil ((or other cooking oil))
2 cloves garlic (, finely chopped)
200g /6 oz chow mein noodles ((Note 2))
1 carrot (, julienned)
1 1/2 cups bean sprouts
3 green onions (, cut into 5cm/2" pieces)
1/4 cup (65 ml) water
2 tsp cornflour / cornstarch
1 1/2 tbsp soy sauce (, all purpose or light (Note 4))
1 1/2 tbsp oyster sauce ((sub Hoisin))
1 1/2 tbsp Chinese cooking wine (OR Mirin (Note 5))
2 tsp sugar ((reduce to 1 tsp if using Mirin))
1/2 tsp sesame oil
White pepper ((sub black))

Steps:

  • Mix together cornflour and soy sauce, then mix in remaining ingredients.
  • Alternative: Use 1/3 cup Chinese All Purpose Stir Fry Sauce, if you have some in stock.
  • Marinate Chicken: Pour 1 tbsp of Sauce over the chicken, mix to coat, set aside to marinate for 10 minutes.
  • Noodles: Prepare the noodles according to the packet instructions (my pack says soak in boiled water for 1 minute), then drain.
  • Heat oil in wok or large fry pan over high heat.
  • Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't let it burn!
  • Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.
  • Add the cabbage, carrot, and the white pieces of shallots (i.e. from the base of the stalk). Stir fry for 1 1/2 minutes until the cabbage is mostly wilted.
  • Add the noodles, Sauce and water*. Stir fry for 1 minute, tossing constantly.
  • Add bean sprouts and remaining shallots/scallions. Toss through for 30 seconds or until the bean sprouts just start to wilt.
  • Remove from heat and serve immediately.

3 ounces dried chuka soba noodles, or other Chinese egg noodles
1/4 cup, plus 2 tablespoons peanut oil
Kosher salt
1/2 cup chicken broth, homemade or low-sodium canned
3 tablespoons oyster sauce
1 tablespoon dark soy sauce, plus more for the table
2 teaspoons cornstarch
1 teaspoon sugar
1 boneless, skinless chicken breast (about 6 ounces), cut into thin 2-inch-long strips
1 teaspoon dark Asian sesame oil
1 heaping tablespoon minced peeled fresh ginger
3 cloves garlic, minced
1 scallion, white and green minced
Freshly ground black pepper
1/2 medium yellow onion, thinly sliced
1 stalk celery, thinly sliced on the diagonal
10 dried shittake mushrooms, rehydrated, drained, and thinly sliced
1/3 cup thinly sliced canned water chestnuts
6 ounces fresh mung bean sprouts
3 cups cooked white rice, hot

Steps:

  • Boil the noodles according to package instructions. Drain in a colander in the sink and rinse under cold running water. Shake the colander to drain off excess water and pat the noodles dry with a towel. Heat 1/4 cup of the peanut oil in a large seasoned or non-stick skillet over high heat. Add the noodles, spreading them out to evenly cover the skillet, and fry, turning once, until golden brown and crispy, about 8 minutes. (Break the noodles up, by stirring, near the end of the cooking). Transfer noodles to a paper towel-lined plate and season with salt to taste. Set aside. Discard any excess oil and wipe out the pan. Whisk together the chicken broth, oyster sauce, soy sauce, cornstarch, and sugar in a small bowl, and set aside. Season the chicken with the dark sesame oil, salt, and pepper, and set aside. Heat the skillet over high heat. Heat the remaining 2 tablespoons peanut oil until very hot. Add the ginger, garlic, and scallion and stir-fry, until fragrant, about 30 seconds. Add the chicken and stir-fry, until lightly browned, about 1 1/2 minutes. Add the onion, celery, and mushrooms and stir-fry, until crisp-tender, about 2 minutes. Add the water chestnuts and spread the ingredients to the outside of the pan to form a well in the center. Pour the chicken broth mixture into the well, bring to a boil, and stir to coat the chow mein mixture. Stir in the bean sprouts and remove from the heat. Season generously to taste with pepper. Transfer chicken chow mein to a warm platter and top with the fried noodles. Serve immediately with rice. Pass more soy sauce at the table.

6 ounces chow mein noodles or 6 ounces thin spaghetti
1 cup chicken broth
2 teaspoons cornstarch
1/2 teaspoon salt
16 ounces cooked chicken
1 teaspoon olive oil
1 onion, chopped
1/4 teaspoon ginger
3 garlic cloves, minced
1 cup frozen mixed vegetables

Steps:

  • Cook noodles according to directions. Drain and set aside.
  • In a small dish, combine the broth, cornstarch and salt; set aside.
  • Heat the oil in a large skillet or wok, then add the onion, ginger and garlic. Stir-fry until you can smell it, about 1 minute. Add the veggies, until thawed, maybe 4 minutes.
  • Add the chicken and broth. Cook, stirring constantly, until the mixture boils and thickens, about 2 minutes. Remove from heat.
  • Stir the veggie mixture into the noodles.

3 garlic cloves, crushed
good chunk fresh root ginger, grated
1 red chilli, deseeded and chopped
1 tbsp soy sauce
2 tbsp tomato purée
2 chicken breasts, cut into chunky strips
3 blocks dried egg noodles
½ a head broccoli, broken into florets
3 carrots, cut into thin sticks
1 tbsp vegetable oil
300g pack beansprout
3 spring onions, halved and sliced into long strips
1 tbsp oyster sauce

Steps:

  • Mix together the garlic, ginger, chilli, soy sauce and tomato purée, then add the chicken and leave it to marinate while you prep the rest of the ingredients.
  • Boil a large pan of water, add the noodles, broccoli and carrots, then cook for 4 mins before draining.
  • Heat the vegetable oil in a wok, tip in the chicken and its marinade, then stir-fry for 4-5 mins until cooked. Toss in the noodles, vegetables, beansprouts and spring onion to warm through, then mix the oyster sauce with 2 tbsp water and stir this in just before serving.

6 oz spaghetti, broke in 1/2 before boiling. drained.
1 c chicken broth
2 Tbsp apple juice
2 tsp cornstarch
1 tsp soy sauce
1 lb boneless chicken breast, cut into bite sized pieces
1 medium onion, chopped
1 Tbsp fresh ginger, minced
3 clove garlic, minced
1 green bell pepper, chopped
1 stalk of celery, chopped
canola, peanut or vegetable oil
chow mein noodles to garnish
NOTE: USE ANY VEGETABLE YOU'D LIKE

Steps:

  • 1. Cook the spaghetti and drain.
  • 2. In a bowl, combine broth, apple juice, soy sauce, and cornstarch. Set aside.
  • 3. Heat 2 teaspoons of oil until a drop of water sizzles in it. Add chicken and cook through, about 5 minutes. Transfer to a plate.
  • 4. Put in 2 teaspoons of oil again until hot and add onion, celery and green pepper. Stir and cook on low heat with a lid on pan until the vegetables are just soft and tender.
  • 5. Remove lid, turn up heat to medium and stir in ginger and garlic. Stir and cook 2 minutes more until the flavors are together.
  • 6. Add the broth mixture and stir until it thickens. Add chicken and stir another minute. Salt and pepper to taste.
  • 7. Put spaghetti in compotes or bowls and serve the chicken mixture on top of it. Add chow mein noodles on top to garnish.

  • Melt the butter in a skillet or wok over medium-high heat. Add the onion and cook, stirring frequently, until the onion is soft. Add the chicken, celery, and remaining vegetables. Cook, stirring frequently, for 2 minutes. Combine the broth, soy sauce, and sugar in a bowl or measuring cup and mix well to dissolve the sugar. Add to the chicken and bring to a simmer. Let simmer, uncovered, for 30 minutes, stirring occasionally. Combine the cornstarch and water and add to the liquid in the pan. Stir well then let simmer for 4-5 minutes longer or until the sauce has thickened. Serve the chow mein over rice or noodles.

450 gms boneless chicken (a little under 1/2 kg)
450 gms dried spaghetti noodles (standard 1 pack)
1/4 cup oil
2 tsp garlic paste or 2 tbsp freshly chopped garlic
1 tsp salt or to taste
1 tbsp crushed red chili flakes
2 medium Sliced bell peppers (green and red)
1 medium shredded carrot
3 green onions sliced (only the white/pale green root)
Chopped green onion leaves for garnish.
4 tbsp vinegar
4 tbsp Soy sauce
4 tbsp Oyster Sauce
2 tbsp Sriracha sauce (or hot sauce)

Steps:

  • In a large pot, add 1 tsp salt and parboil the egg noodles or spaghetti (slightly under-cooked) according to the instructions on the packet of your noodles.
  • Strain your noodles, coat with a little oil and set aside.
  • Add all the sauces in a bowl, mix and set aside.
  • Cut the boneless chicken into smaller cubes.
  • Keep a non-stick pan or a wok on medium flame and add 2 tbsp of oil, chicken chunks and garlic paste.
  • Saute chicken until water dries up and add red chili flakes and salt.

  • Adjust the seasoning and salt according to your taste and turn off the flame.

2 cup chow mein noodles, boiled
½ cup chicken breast piece
½ cup cauliflower florets
¼ cup broccoli florets
¼ cup mushroom
2 tablespoon tomato sauce
1 tablespoon garlic slice
2 tablespoon barbeque sauce
2 tablespoon olive oil
1 teaspoon salt
1 teaspoon soy sauce

Steps:

  • Boil chow mein until tender but not overcooked. Wash it with cold water and mix oil to the boiled chow mein. For mixing oil it will help not to stick with each other. Keep the boiled chow mein aside.
  • Cut chicken breast into 2×2 inch sizes. Separate cauliflower and broccoli florets. Boil cauliflower and broccoli florets with salt until fork tender.
  • Heat olive oil in a pan over medium heat. Put garlic slice to the olive and fry until the aroma comes out. Add chicken pieces to the heated oil. Fry the chicken fillets and then sauté the mushroom till they turn translucent. Add salt to taste.
  • Add cauliflower and broccoli florets to the chicken fry. Then add tomato sauce, barbeque sauce, and soy sauce one by one.
  • Add boiled chow mein to the chicken and vegetable mixture. Coat with them. Sprinkle chili flakes into the chicken chow mein and mix with them. Check salt and if needed add to taste.
  • Turn off the burner. Transfer the chow mein to a serving dish and sprinkle white sesame over the healthy chicken chow mein.

2 tbsp light soy sauce

400g organic chicken thigh fillet, fat trimmed and thinly sliced
1 tbsp vegetable oil
2 cloves garlic, finely chopped
1 carrot, finely shredded
2 pak choy, chopped
2 cups (140g) green cabbage, finely shredded
3 green onions, cut into 2 cm long pieces, plus extra for garnish
280g chow mein noodles, rinsed and drained
¼ cup (60ml) water
2 cups (140g) bean sprouts

Steps:

  • Combine sweet chilli sauce, soy sauce, oyster sauce and sesame oil in a bowl. Stir in white pepper and cornflour and mix well
  • Spoon 2 tbsp of the sauce into the chicken and toss to coat
  • Heat oil in a large wok over high heat. Add garlic and cook for 10 seconds. Add chicken and stir-fry for 2-3 minutes or until golden and seared
  • Add pak choy, cabbage, carrot and the green onions. Stir fry until vegetables have just wilted
  • Toss through noodles, sauce and water. Stir fry for 1 minute
  • Add bean sprouts and stir fry until mixed through. Remove from heat and serve immediately with extra sweet chilli sauce and extra green onions
