1 cup warm water (105-115 degrees F)
¼ cup warm milk (105-115 degrees F, whole milk is best)
1 tablespoon instant (rapid-rise) yeast
2 tablespoons granulated sugar
1 ½ teaspoons salt
1 egg
2 cups all purpose flour
1 ½ cups white whole wheat flour
2 tablespoons unsalted butter (at room temperature, cut into 4 pieces)
1 egg
1 tablespoon milk

Steps:

  • Line a baking sheet with parchment paper or a silicone baking mat.
  • Combine the warm water, warm milk, yeast and sugar in the bowl of a stand mixer. Stir gently to combine. Let stand for 5 minutes.
  • Add the salt and egg to the bowl. Use the paddle attachment to combine on low speed.
  • Add both flours and mix on low speed until combined, then mix in the butter pieces.
  • Switch to the dough hook and knead for 8 minutes. The dough will be very soft and slightly sticky.
  • Transfer the dough to a floured work surface and knead a few times with your hands to form it into a ball. Cut the dough into 8 pieces. Shape each piece into a round ball and place on the prepared baking sheet.
  • Loosely cover the dough balls with a clean kitchen towel and let rest for 15 minutes.
  • Meanwhile, preheat oven to 400 degrees F.
  • Combine the egg and 1 tablespoon milk in a small bowl, stirring with a fork. Remove the towel and brush the tops of the buns with the egg wash. Bake hamburger buns in the oven for 13-15 minutes, until tops are golden.

This step by step recipe for soft, buttery brioche buns is the only recipe you'll need! Make large or regular buns, or even sliders with the same recipe. INTERMEDIATE - This recipe will be easy for anyone who has baked bread before. The dough is slightly harder to manage than regular lean dough. A stand mixer is recommended, as this will make the kneading process easier. An overnight proofing is required. US based cup, teaspoon, tablespoon measurements. Common Measurement Conversions. Weight measurements are recommended for accurate results.

½ cup warm milk (around 110 F)
2 ½ tsp active dry yeast (about 9 g)
2 tsp honey
4 large eggs
2 yolks from large eggs
2 tsp vanilla
2.1 oz granulated white sugar (5 tbsp)
17.6 oz AP flour
1 ½ tsp sea salt (fine grind)
8.8 oz unsalted butter (very soft)
1 egg (whisked, for the egg wash)
Sesame seeds ((optional))
Everything bagel seasoning ((optional))

Steps:

  • Measure all the ingredients.
  • Add the milk, yeast and honey into the mixing bowl and whisk gently to combine. Set aside for 10 minutes to allow the yeast to activate.
  • Add the eggs and yolks, vanilla, and sugar, and whisk gently to break the egg yolks.
  • Add the flour and sea salt, and mix with a spatula or dough whisk to form a scraggly dough.
  • With the dough hook attachment, knead the dough on speed 2 or 3 for about 3 - 5 minutes.
  • Add the first portion of butter, in increments, after the first minute of kneading. Allow the butter to be mixed well into the dough. This should take about 1 - 2 minutes.
  • Repeat with the other 3 portions of butter, kneading the dough for about 2 minutes after each addition.
  • Make sure to stop the mixer to scrape down the sides of the bowl (and the bottom) between adding butter and kneading. You will have incorporated all the butter in about 9 - 10 minutes of kneading time.
  • Once all the butter is incorporated, scrape down the sides and bottom of the bowl, and knead the dough for a further 5 - 15 minutes on speed 5 or 6.
  • The dough will have been kneaded enough when it can be lifted fairly cleanly off the bottom of the bowl when picked up with the dough hook. It will be very soft and tacky to the touch, but shouldn't stick to your fingertips. Rather than strictly going by time, knead the dough until you have reached this consistency.
  • Flour your work surface, and turn the dough out onto the floured surface. Lightly flour your hands and the surface of the dough to prevent the dough from sticking to your palms. Then flatten the dough with your hands to deflate.
  • Fold in the edges of the dough towards the middle and gently press them into the dough (see pictures in my brioche bread loaf post for more information). Carefully flip the dough over, and then with the heel of your palms, shape the dough to form a tight ball.
  • Carefully pick up the dough ball and place it back in the mixer bowl (or another large bowl).
  • Let it rise until it has doubled in size, in a warm place (72°F), for about 1 hour.
  • Turn the proofed dough out onto a lightly floured surface, and fold in the edges again as before towards the middle and press them in. Carefully flip the dough over (seam side down now). Tighten the dough into a ball with a smooth, taut surface (using the edges of your palms). Transfer the dough into the mixer bowl again.
  • Cover and let it chill in the fridge for at least 8 hours, or up to 24 hours.
  • Remove the chilled dough from the fridge. The dough will be much easier to work with now.
  • Line a few baking trays with parchment paper. Keep a bowl of flour, a scale, and a dough cutter ready.
  • Turn the dough out onto a lightly floured surface. Deflate the dough by flattening it lightly.
  • Measure the weight of the dough, and then divide it into 16 pieces (about 75 g per portion).
  • Each portion will bake into a burger bun that is 9 - 9.5 cm in diameter. Please see the table in the post for different sizes and yields.
  • Place each dough portion on your work surface, with the smooth side down. Fold in the edges towards the middle. Pinch the seams together.
  • Dip the smooth side of the dough in a little flour. Carefully flip the dough over, and then using a cupped palm, and with the seam side down, roll the dough portion on your work surface until you get a smooth dough ball.
  • Place the smooth, rolled dough on the parchment paper-lined baking tray; 6 buns on a baking tray plus 2 more on another tray.
  • Repeat with the other dough portions to get 16 smooth dough balls.
  • After arranging the dough balls on your baking trays, flatten them slightly. Cover the buns loosely with plastic wrap. This is important to prevent a skin from forming on the dough as it proofs.
  • Proof the bread in the covered loaf pans for about 2 hours at room temperature, or until doubled in size. Preheat the oven to 350°F / 180°C before baking the buns. You can check if the buns are proofed by doing the indentation test (see recipe notes).
  • Once proofed, brush the tops with an egg wash. Optional - sprinkle sesame seeds on top. For more flavor, you can sprinkle everything bagel seasoning as well.
  • Bake in preheated oven until golden brown on top, and the internal temperature registers 190°F / 88°C. This can take about 10 - 12 minutes.
  • Remove from the oven and let the buns cool slightly.
  • Transfer the buns to a wire rack and let them cool down to room temperature. They're ready to be served now.
  • I prefer to bake one tray at a time. But you can bake two at a time as well, just make sure to switch the tray positions halfway through the baking time. To prevent over-proofing, refrigerate the remaining baking trays with the proofed buns (still covered in plastic wrap) until they're ready to be baked.

Our ultimate brioche recipe utilizes an Asian technique called Tangzhong to create the perfect cross between a soft potato roll and buttery bun for sandwiches and more.

215g milk
1 packet yeast (2 ¼ teaspoons)
25g sugar
40g milk powder
1 large egg, room temperature
2 teaspoons salt
370g bread flour
55g unsalted butter, room temperature

Steps:

  • Gather the ingredients. Line two baking sheets with parchment paper.
  • To make the tangzhong, combine the milk and flour in a medium saucepan. Cook over medium heat, stirring constantly, until the mixture thickens into a paste, about 1 minute.
  • Transfer the tangzhong to the bowl of an electric stand mixer, then add the cold milk and mix with a spatula to combine (this will help cool the mixture slightly before adding the remaining ingredients).
  • Add the yeast, sugar, milk powder, egg, salt, and flour to the mixture. With the hook attachment, mix the dough on medium speed until it is smooth, elastic, and pulling away from the sides of the bowl, about 10 minutes.
  • Add the butter to the bowl and mix until fully incorporated, about 8 minutes.
  • Very lightly flour a work surface, then turn the dough out onto it. Use a bench scraper to bring the dough into a tight ball. Transfer to a greased bowl, then cover with plastic wrap. Place in a warm spot to proof until doubled in size, about 2 hours.
  • Turn the dough out onto a lightly floured work surface. Divide the dough into 9 portions, about 90 grams each. Working with one ball of dough at a time, flatten out the dough, then pull in the corners of the dough to make a ball. Turn the ball seam-side down and roll tight, using the tension from the counter to roll tightly. (Avoid over flouring the surface because it makes shaping difficult and if too much flour is incorporated into the dough it will make the buns dry.) Set the buns aside on the counter and cover lightly with plastic wrap. Repeat with the remaining pieces of dough, keeping about an inch of space between each.
  • Let the buns rest for about 10 minutes to let the dough relax, then give them a final roll to tighten back up. Place on the the prepared baking sheets, leaving space between (do not place more than 5 on a baking sheet).
  • Cover the buns with some lightly greased plastic wrap. Leave the buns to rise again until puffy and doubled in size, about 1 1/2 hours. When there is about 10 minutes left, position two racks in the upper and lower third of the oven and heat to 375 F.
  • To make the egg wash , whisk together the egg and milk. Gently, brush the buns all over with the egg wash. Sprinkle all over with sesame seeds.
  • Bake until deep golden brown, flipping the pans in the oven half way through baking, about 15 minutes total.
  • Let cool on the baking sheets for 10 minutes, then transfer to a wire rack. Slice and served with butter or make your favorite sandwich.

Yield Makes 2 pounds dough, enough for 32 small rolls

1/4 cup plus 2 tablespoons whole milk
1/4 cup sugar
1 1/4 teaspoons active dry yeast (from one 1/4-ounce envelope)
1 1/4 cup plus 2 tablespoons unbleached bread flour
1 1/4 cup plus 2 tablespoons all-purpose flour, plus more for surface
1 teaspoon salt
5 large eggs, plus 1 large egg and 1 large yolk, lightly beaten, for egg wash
8 ounces (2 sticks) unsalted butter, softened, plus more for pan
Vegetable oil cooking spray, for bowl

Steps:

  • Combine milk, sugar, yeast, and 1/2 cup bread flour in the bowl of a mixer. Mix until just combined. Sprinkle with remaining 3/4 cup plus 2 tablespoons bread flour, the all-purpose flour, and salt to cover; do not mix. Let stand for 45 minutes.
  • Using the dough-hook attachment, mix dough to combine. Add 4 eggs, and continue to mix until dough is smooth and does not stick to sides of bowl, about 5 minutes. Mix in remaining egg. Add butter, 1 tablespoon at a time, mixing until incorporated. Continue mixing until dough is smooth and comes together in a ball around the dough hook, about 5 minutes more.
  • Coat a large bowl with cooking spray. Transfer dough to bowl, and cover with plastic. Let stand in a warm place until doubled in volume, about 1 1/2 hours.
  • Punch down dough, and re-cover. Refrigerate for 1 1/2 hours. Punch down dough again, re-cover, and refrigerate overnight.
  • Preheat oven to 425 degrees. Turn out dough onto a lightly floured surface, and punch down. Working in batches (refrigerate remaining dough as you work), evenly divide dough into thirty-two 1-ounce pieces. Punch down each piece using the palm of your hand, and press each into a tight ball using the heel of your hand.
  • Butter small Turk's-head or similar shaped cast-iron pans. Place dough balls inside molds (dough should fill three-quarters of each mold section). Loosely cover pans with plastic; let stand in a warm place until dough balls are soft and springy to the touch, about 30 minutes.
  • Lightly brush tops with egg wash. Bake for 10 minutes. Reduce heat to 350 degrees, and continue to bake until tops are dark gold (time will vary depending on size of pans). Remove from oven, and immediately remove brioche rolls from pans, by gently tapping, and transfer to a wire rack. Let cool completely.

3 cups bread flour
1/3 cup all-purpose flour
1 1/2 teaspoons salt
2 1/2 tablespoons unsalted butter, softened

Steps:

  • In a glass measuring cup, combine 1 cup warm water, the milk, yeast and sugar. Let stand until foamy, about 5 minutes. Meanwhile, beat 1 egg.
  • In a large bowl, whisk flours with salt. Add butter and rub into flour between your fingers, making crumbs. Using a dough scraper, stir in yeast mixture and beaten egg until a dough forms. Scrape dough onto clean, unfloured counter and knead, scooping dough up, slapping it on counter and turning it, until smooth and elastic, 8 to 10 minutes.
  • Shape dough into a ball and return it to bowl. Cover bowl with plastic wrap and let rise in a warm place until doubled in bulk, 1 to 2 hours.
  • Line a baking sheet with parchment paper. Using dough scraper, divide dough into 8 equal parts. Gently roll each into a ball and arrange 2 to 3 inches apart on baking sheet. Cover loosely with a clean kitchen towel and let buns rise in a warm place for 1 to 2 hours.
  • Set a large shallow pan of water on oven floor. Preheat oven to 400 degrees with rack in center. Beat remaining egg with 1 tablespoon water and brush some on top of buns. Bake, turning sheet halfway through baking, until tops are golden brown, about 15 minutes. Transfer to a rack to cool completely.

These are super easy, super quick buns. I get requests to take them everywhere we go. They are great for those last minute dinner guests, or a nice surprise for breakfast. They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

4 1/2 teaspoons dry yeast (2 8g packages)
1 cup milk

  • Mix 2 C flour& yeast in a large bowl.
  • In a separate bowl, heat milk, water, oil, sugar& salt to lukewarm in microwave.

  • Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).

Yield Makes 16 small buns or 12 larger ones

Number Of Ingredients 8

250ml warm water
2 tsp dried yeast (not fast-action)
3 tbsp warm milk
2 tbsp golden caster sugar
450g strong flour, plus extra for dusting
4 tbsp unsalted butter, softened
2 large eggs, plus 1 beaten egg, for glazing
sesame seeds, for sprinkling

Steps:

  • Mix the warm water, yeast, warm milk and sugar in a bowl. Let it stand for 5 mins until it becomes frothy - this is how you know the yeast is working.
  • Tip the flour and 1 tsp salt into a large mixing bowl, add the butter and rub together with your fingertips until the mixture resembles fine breadcrumbs.
  • Make a well in the centre of the buttery flour and add the warm yeast mixture and the eggs.
  • Use your hands to mix it into a sticky dough - don't worry if the mixture feels a little wet at this stage, it will come together when kneading. Tip the dough out onto a floured work surface.
  • Knead the dough for 10 mins by stretching it on the work surface - it will still be very sticky at this stage but don't be tempted to add too much flour.
  • The dough is ready when it feels soft and bouncy - this means that the gluten strands have developed. Place in an oiled bowl, cover with cling film and set aside to rise for 1-3 hrs or until doubled in size.
  • Once the dough has doubled in size, knock the air out and knead again for 2 mins. The dough should be much less sticky now, but add a little flour if it needs it.
  • Divide the dough into 12-16 even pieces. Roll into balls and arrange on lined baking trays. Loosely cover with oiled cling film and leave for about 1 hr or until doubled in size again. Heat oven to 200C/180C fan/gas 6 and place a shallow baking tray at the bottom.
  • Uncover the trays, brush the buns with egg and sprinkle with sesame seeds. Pour a cup of water into a baking tray at the bottom of the oven to create steam (see Tips for success, left). Bake for 20 mins or until golden, then leave to cool on a wire rack.

A fresh brioche can be served with jelly or other preserves to accompany tea or coffee, or with pate or hors d'oeuvre. The tops of the small ones can easily be pulled away, giving space for a sweet or savory filling. Brioche dough can also be used for wrapping other ingredients such as beef for boeuf-en-croute, a salmon filling for a koulibiaca, or a spicy garlic sausage.

1 tablespoon active dry yeast
⅓ cup warm water (110 degrees F)
3 ½ cups all-purpose flour
1 tablespoon white sugar
1 teaspoon salt
4 eggs
1 cup butter, softened
1 egg yolk
1 teaspoon cold water

Steps:

  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, stir together the flour sugar and salt. Make a well in center of the bowl and mix in the eggs and yeast mixture. Beat well until the dough has pulled together, then turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.
  • Flatten the dough and spread it with one third of the butter. Knead this well. Repeat this twice to incorporate the remaining butter. Allow the dough to rest for a few minutes between additions of butter. This process may take 20 minutes or so. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough, cover with plastic wrap, and refrigerate 6 hours or overnight. It needs time to chill in order to become more workable.
  • Turn the dough out onto a lightly floured surface. Divide the dough into two equal pieces, form into loaves and place into prepared pans. Cover with greased plastic wrap and let rise until doubled in volume, about 60 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease two 9x5-inch loaf pans (see Cook's Note to make rolls). Beat the egg yolk with 1 teaspoon of water to make a glaze.
  • Brush the loaves or rolls with the egg wash. Bake in preheated oven until a deep golden brown. Start checking the loaves for doneness after 25 minutes, and rolls at 10 minutes. Let the loaves cool in the pans for 10 minutes before moving them to wire racks to cool completely.

500 g bread flour
250 g milk
2 eggs
50 g sugar
15 g instant yeast
5 g salt
1/2 cup butter, diced (unsalted)
1 egg white (mixed with a little water)

Steps:

  • Mix everything together in your mixer until you get a nice really smooth dough. This can take a while. In my case it took about 15 minutes, scraping down the dough every few minutes from the dough hook in the mixer.
  • After it's mixed, place the dough in a lightly oiled bowl, turn to coat (so it won't dry out) then let it rise in a draft-free place until doubled. This might take as much as 2 hours since the large amount of butter will slow the rise. WAIT!
  • After rising, de-gas the dough, cut it into about 12 equal pieces, press them fairly flat then add some chocolate chips.
  • Roll the dough into a round shape and place on parchment paper to rise, covered for about 45 minutes. If you want, you can instead place the filled dough balls in a lightly greased muffin tin to maintain the round shape. They do come out much prettier that way! Let the dough rise in the tin until they overflow the tops a little to make the traditional 'mushroom' top.
  • Pre-heat the oven to 365 F (185 C). Just before placing in the oven, brush gently with a wash of egg white and water. Sprinkle with sesame seed if you want. I think it make them tastier but it's just a matter of taste. Bake for 10 minutes, turn them 180 degrees for even baking, them bake another 10 minutes.

450g strong white flour
2 tsp fine sea salt
50g caster sugar
7g dried active yeast
100ml whole milk
4 eggs at room temperature, beaten, plus 1 for egg wash
190g salted butter , cubed and softened

Steps:

  • Put the flour in a bowl of a stand mixer with a dough hook. Add the salt to one side and sugar to the other. Pour in the yeast to the side with the sugar. Mix each side into the flour with your hands, then mix it all together with the dough hook.
  • Heat the milk until warm to the touch, but not hot. Mix into the flour mix until combined. With the dough hook on medium, gradually add the eggs and mix for 10 mins.
  • Gradually add the softened butter, one or two cubes at a time, until combined. This will take 5-8 mins. Scrape down the sides, the dough will be very soft.
  • Scrape the dough into a large bowl, cover with a tea towel and leave for 1 hr 30 mins-2 hrs until doubled in size and well-risen. Once risen, put in the fridge for 1 hr.
  • Line the bottom and sides of a 900g loaf tin with baking parchment. Portion the dough into seven equal pieces (the easiest way to do this accurately is to weigh it). Lightly dust a work surface with flour, take a piece of dough and pull each corner into the middle to form a circular shape. With a bit of pressure, push down and roll into ball. 2 tablespoons active dry yeast
1 cup plus 2 tablespoons warm water (110° to 115°)
1/3 cup vegetable oil
1/4 cup sugar
1 large egg, room temperature
1 teaspoon salt
3 to 3-1/2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add oil and sugar; let stand for 5 minutes. Add the egg, salt and enough flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 3-5 minutes. Do not let rise. Divide into 12 pieces; shape each into a ball. Place 3 in. apart on greased baking sheets. Preheat oven to 425°., Cover and let rest for 10 minutes. Bake until golden brown, 8-12 minutes. Remove from pans to wire racks to cool.

  • Optional: Let rise until doubled in size, covered with a damp, warm towel, then punch down and move on to next step.
  • Divide into 8 equal pieces (or 12 - 16 for sliders). Shape each dough ball, by pinching the bottom of teh dough ball together and tehn cupping your hand on top of it on the counter. Circle your hand over top of the ball, rolling the dough ball around gently until the top is smooth. Pinch together the bottom if needed and set on lined baking tray. Cover with a towel.

  • Knead the dough with your stand mixer for about 5-7 minutes until the dough is smooth and elastic then turn out onto a lightly floured work surface. Divide your dough into 8-10 buns (I usually make eight fairly large 4" buns).
  • Shape the dough portions into round dough balls and place on a parchment paper lined baking sheet, leaving about 3 inches spacing between each bun and also the baking sheet edges. Cover lightly with oiled plastic wrap or a damp towel and allow to rise for 10 minutes. *These buns only require one rise, no need for a second rise!
