Breakfast quiche is the answer to all your breakfast prayers! This savory breakfast pie is sure to become a staple in your home.

1 Pie Crust
1 cup mushrooms (sauteed)
1 cup bacon (diced)
1 cup Mozzarella cheese (shredded)
3 eggs
1 cup heavy cream
1 tsp salt (adjust to taste )
1/2 tsp black pepper (adjust to taste )

Steps:

  • On a lightly floured surface, unroll the pastry. Transfer the crust into a pie pan (8-9 inches wide and 2 inch deep). Trim pastry off the edges of the pie pan.
  • Cover the pie crust with parchment paper. Fill it with rice or peas to hold the pie crust down. Bake at 350 °F for 30 minutes. Remove the pie crust from the oven, let it cool down and remove the rice from the crust.
  • Fill crust with mushrooms, bacon and sprinkle with mozzarella.
  • Whisk eggs together with heavy cream, pour over filled pie crust.
  • Bake at 375 °F for about 30 minutes or until a knife inserted near the center comes out clean.

This Easy Quiche Recipe starts with a premade pie crust but no one has to know! It's loaded with ham, cheese and green onions and is the perfect easy breakfast or dinner! You can really add anything you want to this easy quiche recipe -- other vegetables, different cheeses or seasonings.

1 refrigerated pie crust
6 large eggs
¾ cup milk (or cream)
¾ teaspoon salt
¼ teaspoon black pepper
1 cup cooked ham (chopped)
1 ½ cups shredded cheese (divided)
3 tablespoons green onions

Steps:

  • Preheat oven to 375°F.
  • Unroll pie crust and press into a 9" pie plate, crimping the top edges if desired.
  • In a large bowl, whisk together eggs, milk, salt and pepper.
  • Sprinkle ham, 1 cup of cheese, and green onions into the pie crust and pour the egg mixture over top. Sprinkle remaining ½ cup cheese on top of egg mixture.
  • Bake for 35-40 minutes until the center is completely set. Let cool for 5-10 minutes before slicing and serving.

10 ounces Simply Potatoes® Shredded Hash Browns
2 tablespoons vegetable oil
6 eggs, whisked or 6 egg substitute
4 slices cooked bacon, chopped
1 cup shredded cheese, divided

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, combine hash browns and vegetable oil.
  • Using a mini-cupcake pan (spray first), fill 12 mini-cups with hash brown mixture, about halfway up. Cook for 20 minutes in oven.
  • Remove from oven and add bacon and half of the cheese, enough to cover the hash browns.
  • Pour eggs into each one until it is even with the top.
  • Add other half of the cheese, then cook for 15 minutes, or until slightly brown on top.
  • Allow to cool for 5 minutes, then remove from pan and enjoy!

1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter
3 to 5 tablespoons ice water
FILLING:
12 bacon strips, cooked and crumbled
1/2 cup shredded pepper jack or Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese
1/3 cup finely chopped onion
4 large eggs
2 cups heavy whipping cream
3/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon cayenne pepper

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.

12 eggs
1 (8 ounce) bag shredded monterey jack pepper cheese (or your favorite)
1 (10 ounce) can cream of mushroom soup (or any cream soup of your choice)
1 1/2 cups ham (substitute cooked vegetable like broccoli or asparagus for a vegetarian version) or 1 1/2 cups bacon (substitute cooked vegetable like broccoli or asparagus for a vegetarian version)
1 tablespoon butter (for cooking) or 1 tablespoon margarine (for cooking)

Steps:

  • Butter a 9" X 12" baking dish well and press Simply Potatoes Hash Browns along the bottom and up sides of the dish.
  • Crack eggs into blender and add canned soup. Blend well.
  • Add remaining ingredients and pour over hash browns in prepared baking dish.

Steps:

  • Press thawed hash browns between paper towels to remove moisture. Press hash browns into a greased 10-inch pie plate, and brush with melted butter. Bake at 425 degrees for 25 minutes.
  • Meanwhile, prepare Mediterranean vegetables according to package directions. Stir diced vegetables, and yogurt together with cheese and half and half. Pour into prepared potato crust, and bake 30 to 40 minutes in a 350-degree oven or until knife inserted comes out clean. Salt and pepper to taste.
