Quick Thai Green Curry image

This is an easy and versatile, quick meal. Use any type of cooked meat and serve this over steamed rice or cooked noodles. Use low-fat coconut milk if you like. I found this in the Chicago Tribune.

1 tablespoon vegetable oil
2 shallots, minced
1 inch piece gingerroot, minced
1 -2 tablespoon thai green curry paste
1 (14 1/2 ounce) can chicken broth
2 cups cooked beef or 2 cups cooked pork
1 (16 ounce) can coconut milk
1 (8 ounce) can sliced bamboo shoots, drained
1/4 teaspoon salt
1 cup shredded basil leaves
lime wedge

Steps:

  • Heat oil in a large skillet or wok over high heat; add shallots and ginger. Stir-fry until fragrant, about 1 minute. Reduce heat to medium; stir in curry paste. Stir in chicken broth; cook until broth is reduced by half, about 10 minutes.
  • Stir in chicken, coconut milk, bamboo shoots and salt; heat to a boil. Reduce heat; simmer 5 minutes. Stir in basil.
  • Serve in bowls over steamed rice or noodles with lime wedges on the side for squeezing over.

1 tablespoon Thai Green Curry Paste
270 milliliter Coconut Milk
500 gram Boneless Pork Chops
5 cup Mixed Vegetables
2 teaspoon Brown Sugar
2 teaspoon Fish Sauce
to taste White Rice

Steps:

  • In a wok, add Thai Green Curry Paste (1 tablespoon). Stir on medium-high heat until fragrant and bubbling slightly.
  • Add Coconut Milk (270 milliliter). Stir together until sauce starts to simmer. Add Boneless Pork Chops (500 gram). Cook while stirring for about 2 minutes, until everything is coated in sauce.
  • Add Mixed Vegetables (5 cup) and stir in. Cover the wok and allow to simmer for 5 minutes, or until vegetables are tender.
  • Add Brown Sugar (2 teaspoon) and Fish Sauce (2 teaspoon). Stir to combine.
  • Serve with White Rice (to taste) and enjoy!

  • Once the protein is cooked through, remove from the pan, and set aside. Reduce the heat to low and then add the sliced onion, and chopped garlic, and ginger to the pan juices and also add the green curry paste. Then sauté for about 1 minute or until fragrant.
  • Add the coconut milk to the pan and stir to combine. Bring to a boil and let simmer on low for approximately 4-5 minutes stirring occasionally.
