CHOCOLATE BERRY PARFAITS
This creamy dessert is easy to make for weekday dinners, yet pretty enough for company. Instant chocolate pudding is layered with a mixture of pureed strawberries and whipped cream to create yummy parfaits. For quicker results, use whipped topping rather than whipping cream...or serve in a single bowl.

Steps:
- In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set; set aside. Drain strawberries (discard the juice or save for another use); place berries in a blender. Cover and process until smooth; set aside. , In a large bowl, beat cream and sugar until stiff peaks form. Gently fold in strawberry puree. Divide half of the chocolate pudding among four or six parfait glasses. Top with half of the strawberry mixture. Repeat layers. Garnish with a strawberry slice if desired.

Steps:
- Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in 1/2 cup COOL WHIP.
- Spoon half the berries into 8 parfait glasses. Stand 3 wafers around inside edge of each glass. Spoon half the pudding evenly over berries in glasses; cover with layers of remaining berries and pudding.
- Refrigerate 1 hour. Top with remaining COOL WHIP and wafers just before serving.

CHOCOLATE ANGEL FOOD AND RASPBERRY PARFAIT
Steps:
- Using a hand held mixer, beat together the cream, sugar, cocoa powder and vanilla until stiff peaks form, keep cold.
- Place a few cubes of the angel food cake in the bottom of 4 parfait glasses and drizzle with 1 teaspoon of framboise. Top with a few tablespoons of the chocolate cream, a few tablespoons of raspberries and a grated chocolate. Repeat to make 4 layers ending with chocolate cream. Garnish with a few raspberries and grated chocolate.
CHOCOLATE BERRY PARFAIT
Another recipe from Jemco that I haven't tried. It seemed like a nice alternative when craving chocolate. I think it would probably be just as good with vanilla pudding mix. (Some may even want to add chopped nuts?)

- Whisk together pudding mix and milk for two minute
- Gently add 1/2 cup whipped topping.
- Divide 1 cup of mixed berries into 8 parfait glasses.
- Use 3 wafers around edge of each glass.
- Divide 1/2 of pudding mix between the 8 glasses.
- Divide the rest of the berries among the glasses, and add the rest of the pudding.
- Refridgerate four one hour or until ready to serve. Top with remaining whipped topping and wafers.
