CAULIFLOWER, EGG & POTATO CURRY
Even a cauliflower-hater will love the warm coconut and flavours of this vegetarian curry dish

Steps:
- Heat a large, deep non-stick frying pan, wok or shallow saucepan over a low heat. Add the oil, stir in the onion and fry over a medium heat for 8-10 minutes, stirring occasionally, until softened and starting to turn golden.
- Stir the chilli, garlic and ginger into the onion mixture and fry for 2 minutes. Raise the heat a little, add the potatoes and cook for 3-4 minutes, stirring frequently, until the outsides are just softening. Stir in the curry paste, cook for 1 minute, then toss in the cauliflower and stirfry for a further 1 minute to coat.
- Pour the coconut milk into the pan and stir thoroughly. Add some salt, raise the heat and bring to the boil, stirring frequently, then half cover the pan and reduce to a slow simmer. Cook the curry for 20-25 minutes, stirring often, until the sauce has thickened slightly and the vegetables are tender.
- Half bury the eggs yolk-sides up in the sauce, then cover and continue to simmer gently for a further 1-2 minutes to heat through. Serve with a scattering of toasted almonds, if liked, and coriander.

Steps:
- Boil cauliflower in enough salted water to cover, until JUST tender- no more.
- Drain well.
- Arrange in a shallow ovenproof dish with the chopped egg.
- Put flour, margarine, curry powder and milk in a saucepan.
- Bring slowly to the boil, stirring well, until thickened and smooth.
- Stir in the thyme and seasoning and simmer for 1-2 minutes.
- Remove from heat, and stir in 3/4 of the cheese.
- Pour the sauce over the cauliflower and egg.
- Top with remaining cheese and the croutons.
- Brown under a hot grill so the cheese is bubbling.

- Cook cauliflower in boiling salted water until tender-crisp.
- Drain.
- Put cauliflower in an oven-safe casserole dish.
- Combine milk, soup, mayonnaise, cheese and curry powder.
- Pour over cauliflower.
- Combine butter and cracker crumbs.
- Sprinkle over cauliflower.
- Bake at 350 degrees F for 30 minutes.
CURRIED CAULIFLOWER
Found this in a grocery store magazine and we enjoy it very much . Also, a vegetarian friend claims it is very good over brown rice. Seasonings can be adjusted to taste.

Steps:
- Heat oil in large saucepan.
- Add ginger and cumin and cook for about 1 minute.
- Add tumeric, salt, sweet potatoes and water.
- Cover and simmer on medium heat for about 10-12 minutes stirring from time to time.
- The potatoes will become quite soft.
- Add cauliflower, cover tightly and cook for 10 minutes.
- Meanwhile, lightly toast pecans in a dry skillet for about 5 minutes.
- When cauliflower is just fork tender and sweet potatoes very soft (You can combine with some of the water to make a bit of a sauce) tip into a serving bowl and garnish with nuts.
- Also good with a dollop of Greek yoghurt on top.

QUICK CAULIFLOWER CHEESE
Everyone's favourite side dish, using mature cheddar and a hint of onion for extra flavour - the perfect accompaniment to a roast

Steps:
- In a small bowl, mix the cheese with the breadcrumbs and parsley, and set aside. Put the cauliflower florets in a large saucepan, cover with water and a splash of milk (this stops the cauliflower smelling) and bring to the boil. Cook for 2-3 mins until tender, then drain.
- In a separate saucepan, pour in the milk, add the onion and some seasoning, bring to the boil, then take off the heat. In a small saucepan, make a roux by melting the butter slowly, then adding the flour, stirring to make a paste. While still over a low heat, add the boiled milk, discarding the onion. Using a whisk, beat the milk together with the roux and bring to the boil. Cook for 2 mins until the sauce is lovely and thick - make sure the heat is not too high, otherwise it will catch on the bottom and burn.
- Heat oven to 200C/180C fan/gas 6. Transfer the cooked cauliflower to a casserole dish, pour over the sauce and top with the cheese and breadcrumb mix. Bake in the oven for 20 mins until golden and bubbling.

This is a traditional Easter cheese, that is quite bland. In fact, it really isn't a cheese at all. The cheese that you see on the plate is 1/3 of the recipe. Steps:
- Make a double thick cheesecloth bag that's rounded and about 4" in diameter.
- Pour milk into large bowl and add eggs, salt, and pepper.
- Beat until foamy.
- Pour into saucepan and cook over LOW heat until it becomes SOFT scrambled eggs. Be careful and keep stirring because it burns easily.
- Pour mixture into cheesecloth, twist the open end, tie, then hang from the inside of a kitchen cabinet, with a bowl underneath. Let it hang drain overnight.
- Carefully remove cheese from bag to avoid breaking and cool in refrigerator. You can make this cheese a few days ahead of Easter, and store it in your refrigerator.

CURRIED CAULIFLOWER

- Steam cauliflower until tender (try not to overcook or else it will break up in the sauce).
- In the meantime, melt butter with flour in the microwave for approximately 30 seconds. Add milk. Cook another 5-7 minutes until you get a nice, thick sauce, stirring occasionally. Add seasoning.

Steps:
- Boil cauliflower and onion in enough salted water to cover, until they are just tender. (10 - 15 minutes) Be careful not to overcook. Drain well.
- Arrange the cauliflower and onion in a shallow ovenproof dish, and scatter over the chopped egg.
- Put the flour, curry powder and butter/margarine in a saucepan, and cook gently, stirring constantly, to a smooth paste. Add the milk gradually, stirring all the time, gradually bring to the boil, stirring well, until thickened and smooth.
- Stir in the thyme and seasoning and allow the sauce to simmer for a minute or two.
- Remove from the heat, and stir in about 3/4 of the cheese.
- Pour the sauce over the cauliflower, scatter over the croutons, and sprinkle with the remaining cheese.
- Brown under a hot grill until golden and serve. Delicious with thick crusty bread.
