QUICK AND EASY MEATBALLS
Super, simple meatballs that are great alone or in spaghetti. Using lean ground beef will reduce the fat content, but the taste and texture just aren't quite the same.

FAVORITE QUICK & EASY SPAGHETTI AND MEATBALLS
I've been enjoying spaghetti all my life! Been to Italy, and have tried numerous versions all around the globe including this one which remains my all-time favorite (perfected over the years by yours truly!). Hope you enjoy, too. Notes: I like to keep a bag of meatballs (see my Frankies Spuntino New York - Italian Meatballs recipe #452689) on hand in the freezer, for ease of prep. You can use your favorite fresh or frozen prepared meatballs, -or- crumbled & browned ground beef is also fine. Just add a tossed green salad and garlic bread (see recipe #109257), and a nice bottle of red wine to round out the meal. Salut! Tip: I use a jar of Classico Italian Sausage & Peppers Pasta Sauce, and whole wheat spaghetti noodles (De Cecco), but your favorite pasta sauce and regular spaghetti noodles is fine.

Steps:
- Heat olive oil in a large sauce pan over medium heat. Add the bell peppers, and saute them in the oil until slightly softened (5 to 10 minutes).
- Add spaghetti sauce, diced tomatoes, red wine, the oregano, basil and garlic. Partially cover pot; bring to a boil over medium-high heat, stirring often.
- Reduce heat, partially cover pot and simmer sauce for 20 minutes, stirring occasionally.
- Meanwhile in a separate pot, boil water and prepare noodles al dente; drain.
- Add fresh or frozen meatballs (or browned ground beef) to sauce; cook an additional 10-15 minutes, until hot and bubbly.
- In individual bowls, ladle sauce over hot noodles.
- Serve with grated Parmesan cheese and snipped fresh herbs (such as basil, parsley or oregano) at the table, as desired.
- Great served with a tossed green salad & Mom's Onion Parmesan Bread recipe #109257, and a nice bottle of red wine!
- Salut!
FAST AND FRIENDLY MEATBALLS
These oven-baked meatballs are fast and easy to prepare and very kid-friendly. You can serve them with pasta and spaghetti sauce or just eat them with ketchup, as my children do. Feel free to substitute lean ground beef for the ground turkey. The turkey should have at least 7% fat.

EASY MEATBALLS
My husband makes these easy meatballs with simple ingredients like eggs, panko bread crumbs, garlic powder, and fresh basil, and they come out flavorful and delicious every time! Kids love them too! If desired, add the cooked meatballs to your favorite sauce until submerged (this brings out the moistness).

EASY SPAGHETTI AND MEATBALLS

Through the years, I have modified and changed this recipe for two people to better fit our tastes. That's one of the great things about this dish. It's easy to do just that! -David Stierheim, Pittsburgh, Pennsylvania

QUICK AND EASY MEATBALL CHILI
Kind of a "short-cut" chili. It uses premade frozen meatballs, but you can use your own homemade....it just won't be a squick and easy. ;) This can also be made in a crockpot on low for about 6 hours.

- Mix the ingredients: Place all ingredients EXCEPT for the oil in a large bowl. Using a handheld mixer, mix very well until everything is evenly incorporated and sticks together. If you don't have a handheld mixer, you'll have to use your hands to knead the ingredients together very well.
- Sauté the onion: Heat the oil in a large, oven-safe skillet over medium heat. Add the onion and cook for 5 minutes or until starting to soften.
- Stir the baked meatballs into the finished tomato sauce. Bake for another 10-15 minutes, or until bubbly and the meatballs are no longer pink in the middle. You can sprinkle on some Parmesan cheese before baking. If you want a thinner sauce, cover the skillet with a lid in the oven. For a thicker, chunkier sauce, leave the skillet uncovered.
