CHEESE AND ONION MUFFINS
Steps:
- Preheat oven to 375 F.
- In a non-stick skillet over medium heat stir butter and chopped onion. Sauté for 10-15 minutes until lightly browned.
- In a large mixing bowl mix all dry ingredients together and stir in cheddar cheese and 1/2 cup of parmesan.
- Beat egg, milk, oil and caramelized onions into a separate bowl and add to dry ingredients. Fold gently until just combined.
- Spoon Cheese and Onion Muffins into well-greased cups. Sprinkle the top of each muffin with remaining 1/2 cup parmesan cheese then bake for 15-20 minutes.

- Heat oven to 200C/180C fan/gas 6 and oil a 12-hole muffin tin. Whisk the oil, egg and buttermilk. In a mixing bowl, mix the flour, 1 tsp salt and mustard powder, then stir in the cheddar, spring onions, chives and half the Parmesan.
- Use a large spoon to gently fold the wet ingredients into the dry - don't overmix, just lightly combine. With the final few folds, mix in the soft cheese cubes. Spoon the mixture between the holes in the tin (they will be quite full), scatter with the remaining Parmesan and bake for 25 mins.

- Combine the baking mix and 1/2 cup of cheese in a large bowl; set aside. In a small bowl, beat egg and milk; set aside. In a small skillet, saute onion in butter until tender; add to egg mixture. - Heat the oven to 200C/180C fan/gas 6 and oil a 12-hole muffin tin. Tip the flour, polenta, bicarb, mustard powder, cayenne and 2 tsp each of the cumin and onion seeds into a bowl with a large pinch of salt. Whisk the oil, milk and eggs together in a jug and pour over the dry ingredients. Beat everything together until smooth. Stir through all but a handful of both cheeses, then divide the mixture between the holes in the tin. Combine the rest of the cheese, cumin and onion seeds and scatter this over the tops.
- Bake the muffins for 20-22 mins until puffed up and golden. Leave to cool for 10 mins in the tin, then transfer to a wire rack to cool completely. Best eaten on the day, but will keep in an airtight container for two days.

CHEESY ENGLISH MUFFINS
I got this recipe from my mom, but I don't remember where she got it. It's one of the simplest, yummiest appetizers and is a hit every time. Another plus, is I've also been able to adapt the recipe to fit my IBS diet and it still tastes very good imo. :D This recipe is the original; to adapt it for my IBS I replaced the Miracle Whip with light Miracle Whip or a vegan mayo, the cheese with a non-dairy sub like soy cheese, and the bacon bits are usually fine, but I can cook up some turkey bacon until very crisp and let cool before adding them. Be careful when biting into these, they can be really hot. Many people have burnt their mouths devouring these tasty appetizers before my mom can plate them!

- After splitting the English Muffins, cut them into wedges so each muffin makes 8 wedges.
- Mix the remaining ingredients in a bowl. (Note: My mom prefers 5 or more drops of Tabasco, but use as little or as much as you like.).

- Preheat the oven at 200°C and grease muffin pans, set aside.
- In a small pan melt one tablespoon of butter and then add onions and cook until soft.
- Mix beaten egg and milk together, set aside.
- In a large mixing bowl combine (dry ingredients) sifted flour, salt and parsley then rub in one tablespoon of butter.
- Pour egg and milk mixture into the dry ingredients to make a light scone batter. Add more milk if needed. Add onions and half the cheese.
- Half fill prepared muffin pans with mixture.
- Put up to 1 teaspoon sauce in the middle of each muffin. Take care that sauce stays mostly in the middle. If there is too much sauce, muffins will come apart when removed from pans.
- Cover each muffin with remaining mixture until pans are three quarters full.
- Sprinkle with remaining grated cheese.
- Bake for 15-20 minutes or until skewer comes out clean when inserted into the center of the muffins.
