HORCHATA MADE EASY
Horchata (cinnamon rice milk) has been a favorite addition to the many Mexican meals I've had in the Bay Area. It's lightly sweet and refreshing. This is a much easier recipe than the traditional method which requires up to 3 hours to make.

Steps:
- Heat water, sugar, and cinnamon in a saucepan over medium heat. Simmer until sugar is dissolved, whisking occasionally, about 5 minutes. Allow mixture to cool for 10 minutes.
- Pour rice milk into a large pitcher.
- Stir sugar water into rice milk. Serve chilled or over ice.

HORCHATA RECIPE
This is a simplified version of the traditional Mexican drink-Horchata. It's made with just a few pantry-staple ingredients and comes together in only 45 minutes!

- In a medium size pot, combine the rice, water, almond milk, cinnamon sticks, cinnamon, and salt, bring to a boil. Reduce the heat to a low simmer, cover, and allow to cook for 25 minutes. Remove from heat and allow the mixture to cool to room temperature.
- Remove the cinnamon sticks and add the rice mixture to a blender along with the remaining ingredients. Blend on high for 1 to 3 minutes until very smooth.
- If you prefer a smooth consistency, pour over a mesh sieve into a large pitcher or pour in as-is. Chill until ready to serve.

HORCHATA
Horchata is a Latin American beverage that's made by soaking nuts and grains in water then seasoning the mixture with sugar and spices. The drink originated in Spain over 1,000 years ago, but many countries have their own regional variations. This is an adaptation of a Mexican version that's made with rice, sugar, cinnamon and almonds, which provide rich flavor and texture, but leave them out if you like. Serve horchata over ice alongside a plate of spicy food - or try this dirty horchata recipe for a caffeine kick.

- Put the rice, almonds (if using) and 8 cups water into a large pitcher or bowl. Cover container and let soak overnight (at least 8 hours) at room temperature.
- Remove 4 cups liquid from the rice and almonds; reserve. Transfer the remaining liquid, rice and almonds to a blender, and blend, in batches if necessary, until solids are finely ground, 2 to 3 minutes.
- Place a fine-mesh strainer over a large bowl and pour the ground rice and almond mixture into the strainer. Use a spoon to press the solids to extract as much liquid as possible. (You could also strain the liquid through a cheesecloth if you want your horchata to be extra smooth.) Discard the solids. Transfer the strained liquid to a large pitcher (or keep it in the bowl) and mix in the reserved 4 cups liquid from Step 2.
- Add sugar and cinnamon, and stir well. Serve over ice and dust with ground cinnamon, if desired.
FAST EASY HORCHATA
I got this recipe from a friend from work, and she got it from a Mexican restaurant. This is in other words "rice water" it tastes like a rice pudding drink.The original recipe requires you to use actual rice, but this is a fast, refreshing version. The rice flour can be found at your local grocery store in the hispanic isle. Tip: I like to use the pitcher to mix everything well with a spoon and the put the finished drink in an empty milk gallon container and give it all a good shake.

Steps:
- Fill a measured pitcher with 3 cups of water. Add rice flour, vanilla, cinnamon and mix well.
- This will ensure there aren't any clumps.
- Add the rest of the water to the 1 gallon measure line, condensed milk and sugar (to taste) Stir and mix well. Enjoy!
