EASY GARDEN TOMATOES
Simple as it is, this tomato recipe is one my favorite dishes, and my family loves it. I made three batches the first time, and a few stray olive slices were the only thing left on the platter. -Heather Ahrens, Columbus, Ohio

- Arrange tomatoes and onion on a serving platter. In a small bowl, whisk the oil, vinegar, garlic, basil and oregano; drizzle over salad. Top with cheese and olives. Chill until serving.

I found this in a taste of home magazine. The original recipe calls for 3 large tomatoes, but I use cherry tomatoes as I have them growing like crazy in my garden and need to use them up.

Steps:
- In a stockpot, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.
- In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.
