1 roll refrigerated sugar cookie dough, cut into 18 slices
8 ounces cream cheese
1/4 cup confectioners' sugar
1 teaspoon vanilla
3 kiwi, peeled and each cut into 6 slices (18 slices)
6 strawberries, hulled and each sliced into 3 pieces (18 pieces)
18 raspberries
36 blueberries
1/3 cup apple jelly
18 fresh mint leaves

Steps:

  • Put the cookie dough slices on parchment-lined baking sheets and slightly flatten each one. Bake according to the package instructions, then set aside to cool.
  • In a bowl, mix the cream cheese, sugar and vanilla until smooth. Spread some onto each cooled cookie. Arrange a kiwi slice, strawberry piece, raspberry and 2 blueberries on top of each. Warm the apple jelly in a small pan over low heat until just loosened, 2 to 3 minutes. Brush the fruit with the apple jelly to glaze it, then garnish each with a mint leaf.

1 whole sheet puffed pastry, cut in half
Nonstick cooking spray
1 cup brown sugar
1/4 teaspoon salt
Juice of 1/2 a lemon
3 whole apples, cored, halved and sliced, but not peeled
Store-bought caramel sauce, for serving
1/4 cup chopped pecans

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the puffed pastry rectangles onto a baking pan that's been sprayed with nonstick spray or lined with parchment paper. Add the sugar, salt and lemon juice to the apples. Stir to combine. Allow to sit for a few minutes.
  • Arrange the apple slices on the pastry rectangles in a straight line, overlapping as you go. Bake until the pastry is puffed and golden brown, about 20 minutes.
  • Remove from the pan immediately and place on a serving platter. Serve with caramel sauce and chopped pecans.

2 cups all-purpose flour
½ teaspoon salt
1 cup shortening
½ cup cold water
3 tablespoons sugar
2 tablespoons cornstarch
2 cups sliced fresh peaches
1 cup fresh blackberries

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • In a medium bowl, stir together the flour and salt. Cut in shortening by rubbing between your fingers until the mixture resembles oatmeal. Gradually stir in water until dough is just wet enough to hold together. Knead briefly, just so the dough holds together without crumbling. Place in the refrigerator while preparing the fruit.
  • In a medium bowl, stir together the sugar and cornstarch. Add the peaches and blackberries, and toss gently to coat. Set aside.
  • Roll out the crust dough into a rough circle about the size of a dinner plate, and place on a flat baking sheet. Pile the fruit into a level mound in the center of the dough, leaving 1 to 2 inches of exposed dough around the edge. Throw out any juices that may have accumulated in the fruit bowl. Fold the dough up over the fruit - the edges should cover some of the fruit and berries, but not reach the center of the tart.
  • Bake for 25 to 30 minutes in the preheated oven, until the fruit is bubbly and the crust is golden brown. Let cool completely before cutting into wedges and serving.

Steps:

1 c. all-purpose flour, plus more for rolling
3 tbsp. granulated sugar
1/4 tsp. salt
6 tbsp. unsalted butter, chilled and cut into 1/2-inch pieces
1 large egg yolk
4 tsp. ice water
8 oz. cream cheese, softened
1/3 c. sour cream
1/2 c. powdered sugar
2 tsp. vanilla bean paste or vanilla extract
Pinch of salt
1/3 c. heavy cream
1/2 c. blueberries
1/2 c. strawberries, hulled and chopped
1/2 c. raspberries
1/2 c. diced mango
1/2 c. diced kiwi
2 tbsp. apple jelly

Steps:

  • For the crust: Whisk together the flour, sugar, and salt in a large bowl. With a pastry cutter or your fingers, gradually work the butter into the flour until pea-sized pieces form. Stir together the egg yolk and water, then stir into the flour mixture using a fork in a small bowl. Stir, then knead the dough together until it is no longer crumbly and holds together when pinched with your fingers. Form it into a disc and wrap it tightly with plastic wrap. Refrigerate for at least 1 hour or up to 3 days.
  • Roll the dough into a 11-inch circle on a lightly floured surface. Transfer the crust to a 9-inch round fluted tart pan with a removable bottom. Press the crust into the pan and trim the edges right at the top of the tart pan sides. (Do not worry ff the crust cracks! Patch it up with the dough pieces that were trimmed from the edges). Prick the bottom of the crust all over with a fork. Place the crust on a dinner plate, then in the freezer for 30 minutes.
  • During the last 20 minutes of chilling, preheat the oven to 400˚. Prick the crust all over with a fork. Bake for 12 to 14 minutes, until the crust is golden brown. Transfer to a wire rack and cool to room temperature.
  • For the filling: Beat the cream cheese, sour cream, powdered sugar, vanilla bean paste, and salt in the bowl of an electric mixer fitted with a whisk attachment on medium until smooth and creamy, 2 to 3 minutes. Gradually pour in the heavy cream with the mixer running on medium-low and beat until the mixture is light and fluffy, about 30 seconds. Pour the cream cheese mixture into the crust and spread into an even layer.
  • For the topping: Arrange the blueberries, strawberries, raspberries, kiwi, and mango on top of the filling. Microwave the apple jelly in a small microwavable bowl until melted and smooth, about 30 seconds. Brush the apple jelly over the fruit. Chill the tart until cold and the filling is set, at least 2 hours or overnight.

Steps:

  • Place 2 cups flour in a bowl. Cut butter and cream cheese into flour using a knife or pastry blender until mixture resembles coarse crumbs. Gently mix water into flour mixture until dough forms into a ball.
  • Mix apples and cranberries with brown sugar, white sugar, 2 tablespoons flour, cinnamon, and nutmeg in a bowl until coated.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
  • Roll dough onto a lightly floured work surface, forming about an 11-inch circle. Transfer dough to the prepared baking sheet. 1 cup cold milk
1 (113 g) package jell-o instant vanilla pudding
1 cup Cool Whip Topping, thawed
1 cup quartered strawberry
1 (284 ml) can mandarin oranges, drained
1 kiwi, peeled, sliced and halved
3 tablespoons kraft pure apricot jam
2 teaspoons water
1 square baker's white chocolate, melted

Steps:

  • Preheat oven to 400°F Roll out pastry on lightly floured surface to 11-inch square. Place on baking sheet. Fold over edges of pastry to form 1/2-inch rim. Prick pastry sheet with fork. Bake 10-15 minutes or until puffed and golden brown. Cool completely. Place on serving tray.
  • Add milk to dry pudding mix in large bowl. Beat with wire whisk 2 minutes or until well blended. Gently stir in whipped topping. Spread onto center of pastry.
  • Arrange fruit in rows over pudding mixture. Mix jam and water; brush over fruit. Drizzle with melted chocolate. Let stand until chocolate is firm Serve immediatelyl, or cover and refrigerate until ready to serve.
  • SUBSTITUTE: Substitute Kraft Pure Orange Marmalade for the apricot jam.
  • HOW TO DRIZZLE CHOCOLATE: Dip a large spoon in the bowl of melted chocolate., Quickly move the spoon back and forth over the tart, letting the chocolate fall in thin ribbons from the end of the spoon. Repeat until all of the chocolate is used.

1 sheet puff pastry, thawed overnight in refrigerator
2 teaspoons sugar (I use Turbinado)
1/8 teaspoon ground cinnamon
4 ounces cream cheese, softened
1/2 cup strawberry jelly, plus
2 tablespoons strawberry jelly
1 teaspoon vanilla extract
3 cups fresh berries

Steps:

  • adjust oven rack to upper-middle position and heat oven to 425 degrees. Line baking sheet with parchment paper. Unfold thawed pastry onto baking sheet and prepare pastry shell.
  • Brush a 1/2 inch border along the edges of the pastry with water. Fold the long edges of the pastry over by 1/2 inch, then fold the short edges over by 1/2 inch.
  • working lengthwise, lightly score the outer edge of all folded edges of the tart shell with a paring knife.
  • To prevent the center of the tart from puffing up in the oven, poke the dough repeatedly with a fork.
  • combine sugar and cinnamon and sprinkle mixture over inside of tart shell. Transfer to wire rack and let cool at least 1 hour.
  • While crust is baking, stir softened cream cheese, 2 tablespoons jelly, and vanilla in bowl until smooth. Refrigerate until ready to use.
  • Spread cream cheese mixture over inside of cooled tart shell. Place remaining jelly in large microwave safe bowl and microwave on high power until jelly melts, about 30 seconds. Add berries to bowl and toss gently until coasted with the jelly. Spoon berries over cream cheese mixture and refrigerate until jelly is set, at least 1 hour and up to 4 hours. Let sit at room temperature for 30 minutes. Serve.

1 10-x-14-inch sheet ready-made pastry dough, defrosted
3 cups blueberries or peeled and very thinly sliced pear or apple wedges
3/4 cup sugar
6 scoops vanilla ice cream (optional)
1 cup caramel sauce (optional)

Steps:

  • Preheat the oven to 375°F.
  • Melt the 2/3 cup butter in a saucepan over low heat. Set it aside.
  • Grease a baking sheet with the remaining 1 teaspoon butter.
  • On a floured surface, unroll the dough, cut it into six equal squares, and transfer the squares to the baking sheet.
  • Cover each square with 1/2 cup of the berries or with enough pear or apple slices, attractively overlapping, to blanket all but the pastry edges.

1 tablespoon white sugar
¼ teaspoon salt
1 stick cold unsalted butter, cut into 1/4-inch cubes
5 tablespoons very cold water
2 cups fresh raspberries
2 cups fresh blackberries
½ cup white sugar
2 tablespoons all-purpose flour, or more as needed
1 pinch salt

Steps:

  • Stir flour, sugar, and salt together in a large bowl. Cut in butter using a pastry cutter or 2 knives until the texture resembles coarse cornmeal, with butter pieces the size of small peas. Mix in water with a fork just until the dough comes together.
  • Toss berries, sugar, flour, and salt together in a bowl to make the filling. Set aside at room temperature.
  • Lightly butter or grease 14 muffin cups. Place some dough in each muffin cup and press it against the bottoms and sides to create tart shells that are 1/8- to 1/4-inch thick. Divide berry filling evenly among the tart shells.
