I am always searching for easy sides since I do not have time to prep a 30 minute main item and 30 minute side. This one is one of of our favorites, and so healthy too.

Steps:
- Preheat oven to 375-400°F.
- Remove fibrous end pieces of the asparagus.
- Lay asparagus across shallow baking dish and add oil, salt, lemon juice, and pepper. Roll and toss to coat well. Arrange the oiled asparagus in the pan so they do not overlap.
- Bake in oven 20 minutes.

- Preheat the oven to 400 degrees F (200 degrees C).
- Spread out trimmed asparagus in 1 layer on a baking sheet and drizzle with olive oil. Roll asparagus back and forth so it is evenly covered with olive oil
- Bake in the preheated oven until asparagus is lightly browned and easily pierced with a knife, 20 to 30 minutes depending on the thickness of the asparagus. Flip asparagus after 15 minutes. Season with salt and drizzle with balsamic vinegar. Bake until balsamic vinegar starts to caramelize, about 1 minute more.

QUICK AND EASY ASPARAGUS (MICROWAVE)
I have two favorite ways to prepare asparagus. One is to place the asparagus in a hot oven with olive oil, salt and pepper. The second, and easiest, is to microwave it. Microwaving asparagus is so quick and easy. And the best part? No pans to wash! Perfect every time. =)

- Moisten 4-5 paper towels thoroughly with water. Lay toweling doubled on counter top and wrap asparagus spears loosely in the toweling.
- Place bundle on microwave safe dish. Microwave for 3-4 minutes. Carefully, remove paper toweling with tongs and place asparagus on serving platter. Drizzle with olive oil, salt and freshly cracked pepper. Easy!

QUICK-PICKLED SPICY ASPARAGUS
I love pickled asparagus but got tired of spending so much money on tiny little jars and decided to pickle my own. I also like it spicy but feel free to halve the crushed red pepper or omit it altogether if spice is not your thing.

- Place trimmed asparagus in a quart-sized canning jar. Add garlic, pepper flakes, mustard seed, and peppercorns.
- Combine vinegar, water, salt, and sugar in a medium saucepan over medium heat; bring to a boil. Reduce heat and simmer for 5 minutes. Turn heat off.
- Pour vinegar mixture over the asparagus. Screw on the lid and let sit until lid has sealed, about 1 hour.
- Place in the refrigerator until pickled, at least 2 days.
