This is one of my favorite monthly freezer cooking recipes. So easy and cooks up perfectly every time. It's from the Freezer Cooking Manual, but I tweaked it a little. Can be done in endless variations. My favorite combo is chicken, bacon and spinach with swiss cheese. Also great as a vegetarian meal- just skip the meat and add extra veggies.

1 cup meat, any diced and browned (such as bacon, ham, chicken, sausage etc)
3/4 cup vegetables (thawed chopped spinach, broccoli, chopped green pepper)
1 cup cheese, shredded
1/4 cup onion, diced
2 cups milk
4 eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon Tabasco sauce (use 1 tsp for a spicier kick)
1/2 cup whole wheat flour
2 teaspoons baking powder

Steps:

  • Combine meat, vegetable, cheese, and onion. Place this mixture in a labeled 1-gallon freezer bag.
  • With a mixer or blender, combine the milk, eggs, Tabasco sauce, flour and baking powder.
  • Pour into the bag with the meat/vegetable mixture.
  • Seal and freeze.
  • To serve, thaw completely. Shake bag well and pour into a spray-treated or greased deep dish pie plate or quiche pan.
  • Bake at 350º for 35-45 minutes, until lightly browned on top and well set in the center.
  • Cool about 5 minutes before serving.

This delicious and freezer-friendly quiche shows how easy it is to lasso the power of your freezer. Chef Ashley Christensen and food writer Kaitlyn Goalen show how simple it can be to preserve fresh ingredients and complete heat-and-eat meals like this quiche.

1 pie shell (9 inches); for a recipe, use this pate brisee dough, using just 1 disk)
3 large eggs
3/4 teaspoon sea salt
3/4 cup heavy cream
3/4 cup whole milk
6 ounces Jarlsberg, shredded
2 ounces Grana Padano or Parmigiano-Reggiano, finely grated
8 ounces cremini mushrooms, sliced
1/2 cup thinly sliced shallots
5 slices bacon, cooked until crisp and coarsely chopped

Steps:

  • Preheat oven to 350°F. Line pie shell with parchment and fill with pie weights, dry beans, or raw rice. Bake 30 minutes. Remove weights and parchment; bake until crust is cooked through and golden brown, 15 minutes more. Let cool completely on a wire rack.
  • In a large bowl, whisk eggs and salt until blended. Add cream and milk and whisk to incorporate fully. Set aside. In a small bowl, mix together Jarlsberg and Grana Padano. Layer one-third of cheese mixture in pie shell. Next, layer half of mushrooms, followed by half of shallots, and then half of bacon. Repeat these four layers, beginning with half of remaining cheese, and ending with rest of cheese. Pour egg mixture over layers. Cover edge of crust with foil to prevent overbrowning.
  • Bake quiche, rotating pan 180 degrees halfway through, until filling is set, 40 to 50 minutes. Transfer to a wire rack and let cool about 10 minutes, if serving immediately. If freezing, let cool to 70°, then transfer to refrigerator and chill to 40°.
  • Freezing: If freezing whole quiche, wrap in two layers of plastic. Label and date, and freeze up to 3 months. To freeze individual portions, cut quiche into 8 slices and arrange on a rimmed baking sheet. Freeze at least 4 hours and up to overnight for a formative freeze. Wrap each frozen slice in plastic, place all of the slices in a resealable plastic bag, label and date, and return to freezer for up to 1 month.
  • Reheating: If reheating whole quiche, unwrap, place in a cold oven, and heat to 325°. When oven reaches temperature, bake until warm throughout or a thermometer inserted into center registers 150°, 60 to 70 minutes. If reheating individual slices, unwrap, place on a rimmed baking sheet, place in a cold oven, and heat to 325°. When oven reaches temperature, bake until warm throughout, 10 to 15 minutes.

A delicious make ahead that you can freeze for later-- how convenient is that. More time to enjoy my family! Timing does not include chilling pastry. Hope you like as much as we have. I have changed the original method for making pastry and think it works much better.

7 tablespoons cold unsalted butter
1/2 cup 4% large curd cottage cheese
3/4 cup flour
1 tablespoon flour
1 1/2 teaspoons unsalted butter
1/2 cup onion, diced
1/2 garlic clove, minced
1 cup cheddar cheese, shredded
4 ounces Canadian bacon, diced
6 eggs
1/4 teaspoon black pepper
1 dash cayenne pepper

Steps:

  • In mixing bowl, use beaters to cream butter, add cottage cheese and beat with mixer, using spoon gradually stir in flour.
  • Form into disk, cover with plastic wrap, and chill for at least 1 hour or up to two days. I cut plastic wrap big enough so that I can later roll pastry out on it so clean up is easy.
  • Roll out pastry to fit a 9 inch pie plate.
  • Transfer pastry to greased pie pan.
  • Trim pastry to 1/2 inch beyond edge of plate; flute edges.
  • In skillet, sauté onions in remaining butter (1 1/2 t.) until golden brown. It is important to get the onions done to your preference because the baking steps do not cook it much more than this step does.
  • Remove skillet from heat.
  • Stir in garlic and set aside.
  • Put cheese at bottom of pastry, top with Canadian bacon.
  • in large bowl, add egg and peppers, lightly beat, stir in onion mixture from skillet.
  • Pour into pastry shell.
  • At this point, either wrap well and freeze or bake at 350 degrees for 40 to 45 minutes or until a knife inserted near the center comes out clean. (After 25 minutes, I peek to see if crust is browned enough and cover just the crust with foil so it is browned just enough. I hate real dark crust. It is not easy to do but worth it IMO.) Let sit for 10 minutes before cutting.
  • TO USE FROZEN QUICHE: Remove frozen quiche from freezer 30 minutes before baking. Put rack in middle. Preheat oven to 350 degrees. Place pie on a baking sheet. Bake at 350 degrees for 40 minutes, then cover with foil and move to lowest shelf and bake another 25 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

My mother Shelly Rice created the ultimate Basic Quiche recipe . . . almost anything can be added to make this basic quiche conform to your tastes, or it can be left plain for those with simple tastes.

4 eggs
2 cups half-and-half cream
⅛ teaspoon salt
¼ teaspoon white pepper
⅛ teaspoon ground nutmeg
4 ounces Jarlsberg cheese, shredded
2 ounces mozzarella cheese, shredded
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, whisk together eggs and half-and-half. Season with salt, white pepper and nutmeg. Place shredded Jarlsberg and mozzarella in the pie shell. Pour egg mixture over cheese.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake for 25 minutes, or until crust is golden and filling is set. Allow to set 5 to 10 minutes before serving.

1 recipe pastry for a 9 inch single crust pie
6 slices bacon
1 onion, chopped
3 eggs, beaten
1 ½ cups milk
¼ teaspoon salt
1 ½ cups shredded Swiss cheese
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Line pastry with a double layer of aluminum foil. Bake in preheated oven for 8 minutes. Remove foil and bake for 4 to 5 minutes more, or until crust is set. Reduce oven temperature to 325 degrees F (165 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, crumble and set aside. Reserve 2 tablespoons bacon grease in skillet. Cook onion in reserved drippings until tender; drain and set aside.
  • In a large bowl, mix together eggs, milk and salt. Stir in bacon and onion. In a separate bowl, toss cheese and flour together. Add cheese to egg mixture; stir well. Pour mixture into hot pastry shell.
  • Bake in preheated oven for 35 to 40 minutes, or until knife inserted into center comes out clean. If necessary, cover edges of crust with foil to prevent burning. Let quiche cool for 10 minutes before serving.
