1 tablespoon flour
1 cup milk
1 cup monterey jack cheese, shredded
1/2 teaspoon cumin

  • Melt butter in a small saucepan over medium heat.
  • Whisk in flour and cook for about 1 minute.
  • Whisk in milk gradually until incorporated.

1 tablespoon butter
3/4 cup green onions, (finely chopped)
2 large cloves garlic (minced)
3.5 oz (100 g) diced tomatoes, ((Roma, grape or cherry tomatoes))
1/2 teaspoon each ground cumin and onion powder
1/2 teaspoon cayenne pepper, ((add more to taste if desired))
1 tablespoon cornstarch (cornflour)
13 oz (375 g) evaporated milk, ((full fat))
4 oz 120 g fire roasted green chiles, (or jalapeños)
1/4 cup fresh cilantro, (finely chopped)

Steps:

  • Melt butter in a medium-sized pot over medium-heat. Sauté the green onions (white parts only) for 4 minutes, until soft. Then add the garlic and sauté until fragrant, about 30 seconds.
  • Add the tomatoes in with juices with the chiles, cumin, onion powder and cayenne pepper. Cook while stirring occasionally, for 2 minutes until soft and fragrant.
  • Mix cornstarch into the pot, then pour in the evaporated milk, stirring well to combine.
  • Bring to a boil, then add the cheese, mixing well. Cook, while stirring, until cheese just melts through the milk and transforms into a smooth sauce. Take off heat immediately.
  • Stir in cilantro, green onions (reserved green parts) and season with salt to taste if needed. Mix well.Serve warm.Tip: Queso thickens when cooled.

1 tablespoon butter
1 shallot, diced
2 garlic cloves, minced
1 -2 jalapeno, seeded and diced
2 chipotle chiles, diced (canned in adobo sauce)
1 1/2 cups half-and-half or 1 1/2 cups evaporated milk
1 tablespoon cornstarch
4 ounces cream cheese, cut into cubes and softened
2 teaspoons yellow mustard
8 ounces smoked cheddar cheese, shredded
4 ounces sharp cheddar cheese, shredded

Steps:

  • Place a medium pot over medium heat. Add the butter, shallots, garlic, and jalapeno.
  • Saute for 3 to 4 minutes to soften, then add the half and half and chipotle peppers.
  • Whisk in the cornstarch. Allow the mixture to come to a simmer, so the half and half can scald (not necessary with evaporated milk) then lower the temperature to medium-low.
  • Stir in the cream cheese and mustard.
  • Slowly start adding the shredded cheese.
  • Stir and add by the handful, until the sauce comes together. if you prefer your cheese sauce a little thinner, add an extra splash of half and half. Serve immediately, or keep warm in a slow cooker or fondue pot.

4 serrano chilies (or other fresh green chillies)
1 tablespoon vegetable oil
1/2 red onion, finely chopped
500 g monterey jack cheese, grated
2 tablespoons creme fraiche
3 tablespoons heavy cream
2 firm tomatoes, halved and seeds removed
1 tablespoon tequila

Steps:

  • Place the chilies in a dry frying pan over a medium heat until all the skin blisters and darkens. Be careful not to allow the chili flesh to burn.
  • Place the chilies in a polythene bag for 20 minutes, and then remove the skins and seeds.
  • Cut the chilies into thin strips and then cut the strips in half to make short strips.
  • Heat the oil in a frying pan and cook the onion until it is beginning to soften. Add the cheese, creme fraiche and cream and continue heating over a low heat until the cheese melts.
  • Add the chilies and stir continuously until the sauce becomes smooth.
  • Dice the tomatoes into 1/2in pieces. Stir into the sauce, and then pour into a serving dish.
  • Just before serving, stir in the tequila and mix well.
  • Serve warm with tortilla chips.
