Try one of these three creative ways to serve quesadillas from chef Sara Foster's cookbook, "Sara Foster's Casual Cooking."

Baked sweet potatoes
Black beans, cooked
Shredded cheddar cheese
Minced jalapeno pepper
Farmer cheese
Thinly sliced pears
Honey
Freshly ground black pepper
Thinly sliced grilled chicken breast
Shredded Monterey Jack or pepper Jack cheese
Corn kernels, cooked
Chopped fresh cilantro
Olive oil
7-inch flour tortillas
Sour cream, salsa, and baby arugula, for garnish (optional)

Steps:

  • Lay tortillas on a flat work surface and place desired fillings over half of each tortilla. Fold tortillas in half to enclose filling.
  • Lightly coat a cast-iron skillet or grill pan with olive oil and place over medium-high heat. Place quesadillas in skillet or on grill, working in batches if necessary, and cook, turning once, until cheese is melted and tortillas are golden brown, about 2 minutes per side.
  • Transfer quesadillas to a baking sheet and place in oven to keep warm. Repeat process with remaining ingredients, adding more oil to the grill or skillet as needed. Cut quesadillas into wedges and serve warm with desired garnishes.

Butter, for sauteeing
10 (10-inch) flour tortillas
1 medium wheel double cream brie cheese
1 cup grated Swiss cheese
1 cup Cheddar
2 large sweet onions, sliced and grilled
2 to 3 roasted red bell peppers, julienne
6 grilled chicken breasts, sliced thinly
1 cup sour cream
3 tablespoons minced chives

Steps:

  • Place a 10-inch saute pan over medium heat. Place butter in the pan, followed by a flour tortilla. Lay some of the cheeses in first, see Cook's Note.
  • Add onions, peppers, chicken, top with a little more cheese, and cover with a second tortilla. Place a lid on the saute pan, and let sit for 3 to 4 minutes or until golden brown before flipping. Flip and cook until golden brown on both sides. Repeat with remaining tortillas and ingredients. Allow the quesadilla to cool before cutting, about 2 minutes. Cut into pie shapes. Place a dollop of sour cream and chives on top. Enjoy.

This is one of the ways I make a simple quesadilla at home. Quesadillas made like this can be found at Mexican restaurants.

1 tablespoon butter
2 flour tortillas, whatever size you want
1 cup shredded cheddar cheese, more for bigger tortillas
salsa, however much and whatever heat you desire, for topping (optional)
sour cream, as much as you like, for topping (optional)

Steps:

  • In a pan skillet large enough to hold one of the tortillas flat, melt ½ of the butter.
  • Fry one side of one of the tortillas, then remove it from the pan.
  • Put the rest of the butter in the pan, then put the unfried tortilla in to cook.
  • Immediately sprinkle the cheese on top of the tortilla in the pan, then top with the previously fried tortilla, browned side up.
  • Press them together with a spatula and fry the quesadilla until the cheese is melted.
  • Remove it from the pan and cut in wedges like a pizza.
  • Top with sour cream and/or salsa.
  • Enjoy!

  • Sprinkle 3 tablespoons of the cheese mixture over half of the quesadilla, and distribute 1/8 of the chicken over the cheese. Top that with another 3 tablespoons of the shredded cheese. Flip the bare half of the tortilla over the filling, cover the pan, and sauté for about 2 minutes until the bottom is golden and the cheese has started to melt, then use a spatula to flip the half-moon quesadilla, and continue to cook, uncovered, until all of the cheese is melted and the underside is browned, 2 to 3 minutes.
  • Remove the quesadilla to a cutting board and let the quesadilla sit for a minute before you slice into 2 or 3 wedges. Repeat until all of the quesadillas are cooked. Serve with guacamole, salsa, sour cream and lime wedges.
