Here is a delicious cake which is easy to prepare. You can also use this pastry base with pitted cherries, plums, or sliced peaches.

1 ½ cups all-purpose flour
¼ cup white sugar
¼ teaspoon salt
2 teaspoons baking powder
½ cup butter
1 egg, beaten
⅓ cup cream
4 large apple - peeled, cored and thinly sliced
2 tablespoons cold butter
½ cup brown sugar
2 tablespoons flour
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly butter an 8 inch square baking dish.
  • Sift together 1 1/2 cups of flour, sugar, salt, and baking powder. Cut in 1/2 cup of butter until the mixture is crumbly. Stir together the egg with the cream and gently mix into the flour until a soft dough has formed. Press into prepared baking dish. Layer the apples into the dish overlapping, in neat rows. Prepare streusel by mixing the brown sugar, 2 tablespoons flour, and cinnamon together in a small bowl. Cut in 2 tablespoons butter until the mixture is crumbly. Sprinkle over apples.
  • Bake in preheated oven until apples have softened, and topping has browned, about 25 minutes.

1 pinch salt
Grated peel of 1 lemon
4 eggs
Milk as needed to make dough of a consistency to roll
1 No. 3 can (about 5 2/4 cups) applesauce
1/2 teaspoon cinnamon
1 pinch ground cloves
Whipped cream

Steps:

  • Blend flour, shortening, sugar, salt, grated lemon peel, and the lightly beaten eggs. Add milk as required, roll 1/2-inch thick, and line pie pan.
  • Mix the applesauce with the cinnamon and cloves, spread over dough in pie pan, and top with dough rolled to 1/2-inch thickness. Bake 1 hour in moderate (375 degrees F) oven. Serve in deep dish with whipped cream.

6 ounces caster sugar (superfine), plus 1/2 ounce extra sugar, for sprinkling
1/2 teaspoon vanilla extract
6 tablespoons butter
2 1/2 ounces milk
4 1/2 ounces all-purpose flour
1/2 teaspoon ground cinnamon
2 1/4 teaspoons baking powder
2 small or 1 large Granny Smith or Golden Delicious apples
2 1/2 ounces heavy cream, to serve

Steps:

  • This cake has been made at Ballymaloe for years. We even have guests who ask for it specifically every time they visit. The fruit sinks to the bottom as it cooks, leaving a light sponge on top with a lovely sugary crust.
  • Preheat the oven to 400 degrees F. Line the sides and base of a 8 by 8-inch square cake pan with parchment paper.
  • Using an electric whisk or hand held mixer, whisk the eggs, 6 ounces caster sugar, and vanilla extract in a large bowl, until the mixture is thick and mousse-like, and the whisk leaves a figure of eight pattern, this will take about 5 minutes.
  • Melt the butter in a saucepan with the milk, and then pour the mixture onto the eggs, whisking continuously. Sift in the flour, cinnamon, and baking powder, and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared pan, and smooth the surface.
  • Peel and core the apples, and cut them into thin slices, and then arrange them over the batter. They will sink to the bottom. This is meant to happen! Sprinkle the cake with the remaining 1/2 ounce sugar, and bake in the oven for 10 minutes. Reduce the oven temperature to 350 degrees F, and bake until well risen and golden brown, about 20 to 25 minutes.
  • Allow the cake to cool in the tin, cut into squares and serve warm. It is delicious with cream!

CARAMEL APPLE CAKE

3 cups all-purpose flour
1 1/3 cups sugar, plus 1/4 cup for apples
1 1/2 teaspoons ground apple or pumpkin pie spice blend
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon fine salt
4 large golden delicious apples, peeled, cored, and roughly chopped (about 5 cups)
3 large eggs
1/2 cup vegetable oil
1/2 cup sour cream
Finely grated zest from 1 orange
Juice 1 orange (about 1/3 cup)
1 tablespoon pure vanilla extract
1/2 cup sugar
1 tablespoon light corn syrup
2 tablespoons water
1/2 cup heavy cream
3/4 cup pecans, toasted and roughly chopped
1/2 teaspoon pure vanilla extract
Pinch salt

Steps:

  • 1. Preheat oven to 350 degrees F. Generously butter and flour a 10-cup Bundt pan.
  • 2. For cake: Whisk flour, 1 1/3 cups sugar, 1 teaspoon pie spice, baking powder, baking soda, and salt together in a large bowl.
  • 3. Toss apples with remaining 1/4 cup sugar and 1/2 teaspoon pie spice and set aside.
  • 4. Whisk eggs and oil together in a large bowl. Whisk in sour cream, orange zest and juice, and vanilla. Pour egg mixture into dry ingredients and stir with a wooden spoon just until combined but slightly lumpy.
  • 5. Using a slotted spoon, scatter about 1/2 cup apples in bottom Bundt pan. Place about 1/3 batter on top. Repeat, alternating remaining apples and batter, ending with batter.
  • 6. Bake cake until a skewer inserted into center cake comes out clean, about 1 hour and 15 minutes. Cool 10 minutes; invert onto a rack placed over a baking sheet. Cool.
  • 7. For caramel: Stir sugar, corn syrup, and 2 tablespoons water in a small saucepan. Bring to a boil over medium heat and cook, swirling pan but not stirring, until sugar is a dark amber-colored caramel, about 15 minutes. Remove from heat; carefully pour in cream. Stir in pecans, vanilla, and salt. Cool until caramel becomes thick and syrupy; pour over cake; cool until set.

APPLE CREPE CAKE: GATEAUX MONT SAINT MICHEL

1 cup flour
1 pinch salt
3/4 cup milk
3/4 cup water
1 egg
2 egg yolks
1 tablespoon Calvados
5 tablespoons melted butter
12 Golden Delicious apples, peeled, cored, and cut into 16 wedges
1 lemon, juiced
1/2 cup sugar
1/2 cup melted butter
1 1/3 cup blanched almonds
2/3 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
1/4 pound butter
1/2 teaspoon almond extract
1 tablespoon dark rum
1 pinch salt

Steps:

  • Mix all dry ingredients in a bowl. Add the water and milk. Beat with a whip until smooth. Add the egg, egg yolk, Calvados, and butter. Let rest 1 hour.
  • Meanwhile, for the apple filling, for the Apple Filling: preheat oven to 450 degrees F.
  • Toss the ingredients together in a bowl, and place in a baking dish. Bake for 30 minutes. Toss several times during cooking so the bottom does not burn. Let cool 1 hour.
  • For the Burnt Almond Cream: preheat oven to 375 degrees F.
  • Place the almonds on a sheet pan and cook until browned. Remove from pan immediately and place on paper towels. Let cool. Mix all ingredients in a small bowl and set aside.
  • Heat a 6-inch non-stick pan. Spray with pan release and a small amount of crepe batter. Roll the pan until the bottom has a thin coat. Cook until bottom side is golden brown and flip. Cook for another few seconds and remove from pan onto paper towels.
  • To assemble the gateaux, brush the bottom of a glass pie plate with a thin film of butter. Lay in one crepe best side up. Add a thin layer of almond cream. Lay the apples out on the cream. Top with another crepe. Press down to make level and repeat this until the gateaux is to the top or you have used all the ingredients. Make sure not to make the layers too thick, as the gateaux will slide when cut and served. Finish with a layer of apples and almond cream.
  • Preheat oven to 375 degrees F.
  • Bake for 30 minutes until bubbling and nicely browned on top. Cut into wedges and serve.
