ITALIAN COOKING SAUCE MIX
Never buy jar sauce again! This is easy to prepare and freezes well. Keep a pint or two in the freezer and you will be prepared. Use this sauce whenever the recipe calls for spaghetti sauce. Recipe comes from Make a Mix Cookery.

Steps:
- Combine all ingredients in large stockpot.
- Simmer 15 minutes over medium-low heat; cool.
- Pour into six 1-pint freezer containers, leaving 1/2 inch space at top.
- Seal and label containers; freeze.
- Use within 6 months.

Steps:
- In a large heavy saucepan, heat olive oil, then add the garlic cloves (whole so they add a "gentle" garlic flavor).
- Add the tomatoes, salt and pepper. Cover and cook tomatoes until they're soft and collapsed (about 10 min.). If the skins bother you, then fish them out.
- Uncover and cook, stirring often, until the mix is very smooth. Add water, if needed, to keep sauce from sticking to the pot. Stir in cream slowly, then add sugar (or carrot), if needed. (Taste it. The sweet carrot/sugar tempers the acidic tomatoes. You'll know if you need to add sugar if the sauce is really tart.).
- Simmer the sauce a bit for the cream to become incorporated. Add water, if needed, to bring the sauce to desired consistency.

CHEESE RAMEN | HOW TO MAKE CHEESE RAMEN
Steps:
- Heat water in a pan or pot and bring the water to boiling hot.
- Add ramen noodles and cook until al dente (tender).
- Pour out water and add butter, garlic powder, ground black pepper, and grated cheese. Allow the cheese to melt slightly, then stir everything together until creamy.
- Serve cheesy ramen hot garnishing with chopped scallions if adding.
FRIED CHEESE WITH PURPLE PRIDE SAUCE

- Heat the peanut oil in a deep-fryer or heavy-bottomed pot to 375 degrees F.
- Cut the mozzarella into 1/2 by 1/2 by 2-inch strips and wrap them with prosciutto. Mix the flour, garlic powder, onion powder and paprika together in a bowl. Add the buttermilk and egg and whisk until combined. In a shallow bowl, combine the panko and finely shredded Parmesan.
- Insert skewers into the mozzarella, dip them into the batter, then coat them with the panko mixture.
- Deep-fry, in batches if necessary, until golden brown, approximately 2 minutes. Transfer the mozzarella to a serving platter.
- Combine all of the dipping sauce ingredients, except the blackberries, in a medium bowl. Mash the blackberries through a metal strainer to remove the seeds.
- Mix the blackberry juice into the dipping sauce and serve with the cheese sticks.

- In a 1-qt bowl, mix together the cornstarch, garlic powder and ginger; add vinegar and sherry and stir until cornstarch mixture is dissolved; add soy sauce, corn syrup, broth and pepper and mix well.
- Stir in enough water to make 4 cups total liquid.
- Store in a jar with a tight-fitting lid; cover and refrigerate for up to 1 month.
- Make sure you stir well before using in your stir-fry- you want the cornstarch fully incorporated in the sauce.

- Measure all ingredients into a large ziploc bag, seal and shake to combine.
- To use, combine 1/4 cup Noodles Mix with 2 tablespoons butter and 1/4 cup milk in sauce pan (also add tuna at this point if desired);heat over medium heat until warm and butter is melted. Toss with pasta (approximately 3-4 cups cooked).
- For variety, add 1/4 cup grated Cheddar cheese in place of the Parmesan cheese for a different taste.
