GRILLED PUMPKIN BBQ-GLAZED PORK CHOPS

1 tablespoon olive oil
1 cup grated onion
2 cups ketchup
1 cup canned pumpkin puree
3/4 cup chicken broth
1/4 cup packed dark brown sugar
1/4 cup molasses or maple syrup
1/4 cup apple cider vinegar
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon pumpkin pie spice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Four 1-inch-thick bone-in pork chops
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing

Steps:

  • For the pumpkin bbq sauce: Heat the olive oil in a medium saucepan over medium heat. Add the onions and cook until tender and transluscent, 4 to 5 minutes. Add the ketchup, pumpkin puree, broth, sugar, syrup, vinegar, chili powder, Worcestershire, garlic powder, smoked paprika, pumpkin pie spice, salt and pepper and whisk well to combine. Bring to a low simmer. Reduce the heat to low and let cook until thickened, 20 to 30 minutes. If it begins to look too thick, add a few tablespoons of water or broth.
  • For the pork chops: Preheat a grill or grill pan for cooking over medium-high heat. Sprinkle the pork chops generously on both sides with salt and pepper. Brush the chops on each side with vegetable oil and grill, 4 minutes per side. Baste the pork chops on each side with the sauce and grill an additional minute per side to allow the sauce to caramelize. Serve the chops with extra sauce.

4 large pork chops
ground himalayan sea salt, to taste and divided
freshly ground black pepper, to taste and divided (i always use mixed peppercorns)
1 Tbsp garlic infused oil (substitute canola oil)
1 Tbsp clarified butter
1/2 c red onions, finely chopped
2 large cloves garlic, pressed
1 c low-sodium chicken broth
1 1/2 c pumpkin purée
1/2 Tbsp sriracha sauce
1/2 Tbsp herbes de provence
1 tsp pumpkin pie spice
2 Tbsp brown sugar
1/4 c 35% heavy cream

Steps:

  • 1. Season the pork chops generously on one side with salt and freshly ground black pepper; set aside.
  • 2. In a large skillet over medium heat, add garlic infused oil and when hot, place chops with seasoned side down; season the top side with salt and pepper. Cook until brown and then place them on a baking sheet. Transfer the pork chops to a 200ºF preheated oven to keep them warm while making the sauce.
  • 3. Return the skillet on medium heat and add clarified butter. When hot, add onions and sauté for 1 minute. Add garlic and sauté for 30 seconds. Pour in chicken broth and then pumpkin purée; stir to combine.
  • 4. Reduce heat to medium-low and add sriracha, Herbes de Provence, pumpkin pie spice, ground sea salt and freshly ground black pepper; stir and cook for 2 minutes. Add brown sugar and heavy cream; stir and bring the mixture back to a simmer, about 2 minutes.
  • 5. Spoon sauce over pork chops and put any extra sauce in a small bowl or ramekin. Makes 4 servings

  • Before You Cook Turn oven on to 450 degrees. Let preheat, at least 10 minutes If using any fresh produce, thoroughly rinse and pat dry Prepare a baking sheet with foil and cooking spray Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Stem sage. Mince garlic. Trim ends off green beans. Pat pork chops dry, season both sides with 1/4 tsp. salt and pumpkin spice. 2 Sear the Chops Place a medium non-stick pan over medium-high heat and add 1 tsp. olive oil. Add pork chops to hot pan and cook undisturbed until browned, 2-3 minutes. Transfer pork chops to prepared baking sheet, seared side up. Reserve pan; no need to wipe clean. 3 Cook the Chops and Beans Place green beans and garlic on empty half of prepared baking sheet and toss with 1 tsp. olive oil, 1/4 tsp. salt and a pinch of pepper. Massage oil into beans, then roast until green beans are tender and pork reaches a minimum internal temperature of 145 degrees, 7-9 minutes. While pork chops roast, make butter and fry sage. 4 Make Butter and Fry Sage Combine butter, honey, red pepper flakes (to taste) in a mixing bowl. Return pan used to cook chops to medium heat and add 1 tsp. olive oil. Add sage to hot pan and cook until crispy, 30 seconds-1 minute. 5 Finish the Dish Place green beans on a plate. Crumble crispy sage and garnish green beans with sage. Place pork chop next to green beans and top with a dollop of honey butter.

I had some leftover canned pumpkin from making another recipe so I made these up! They have a spicy kick to them. I hope you like them!

4 -5 pork chops, center-cut thin bone-in
1 cup canned pumpkin
2 tablespoons honey, pref. raw-thick type
1/4 teaspoon Lawry's Seasoned Salt
1/2 teaspoon red pepper flakes
1/4 teaspoon ground ginger
1/4 teaspoon allspice
1/2 teaspoon apple cider vinegar
2 tablespoons chicken broth
1/2 cup celery, chopped fine (about 1 rib)
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl; mix pumpkin, honey, Lawry's, red pepper flakes, ginger, allspice, cider vinegar, broth, and celery.
  • Melt and spread the butter in an 8X11 glass baking dish then place pork chops in it.
  • Pour pumpkin mix over the chops.
  • Bake chops for 30 minutes or until no longer pink inside.

SAGE AND BALSAMIC PORK CHOPS WITH CREAMY PUMPKIN POLENTA



Sage and Balsamic Pork Chops with Creamy Pumpkin Polenta image

Serve with steamed broccoli or cauliflower.

3 tablespoons extra-virgin olive oil (EVOO)
2 tablespoons balsamic vinegar (enough to just coat the pork chops; eyeball it)
5 fresh sage leaves, chopped
1/4 cup fresh flat-leaf parsley leaves (a handful), chopped
1 large garlic clove, chopped
Salt and freshly ground black pepper
4 1 1/2-inch-thick boneless center-cut pork chops
2 1/2 cups chicken stock or broth
1 cup milk
1 cup canned pumpkin puree
Freshly grated or ground nutmeg, about 1/8 teaspoon
3/4 cup quick-cooking polenta (found in Italian foods or specialty foods aisles)
1/2 cup grated Parmigiano-Reggiano (a few handfuls), plus some for garnish
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 375°F.
  • Preheat a large, oven-proof skillet over medium-high heat with 2 tablespoons of the EVOO (twice around the pan). In a shallow dish, combine the balsamic, sage, parsley, garlic, the remaining 1 tablespoon of EVOO, salt, and pepper. Coat the pork chops and then place them in the skillet and sear the meat on both sides to caramelize, about 2 minutes on each side. Transfer the skillet to the oven to finish off, about 8 minutes, or until the meat is firm to the touch but not tough.
  • While the chops are cooking, in a sauce pot combine the chicken stock, milk, and pumpkin and season with the nutmeg, salt, and pepper. Place over high heat and bring up to a simmer. Whisk in the polenta and stir until it begins to mass together. Add the grated cheese and butter, stirring to combine. Keep in mind that polenta is very forgiving. If it becomes too thick, not smooth and creamy, you can always add more warm chicken stock or milk.
  • Serve the polenta alongside the sage and balsamic pork chops with steamed vegetables. Garnish the polenta with a little extra grated or shaved cheese.

Steps:

  • Heat 1 tablespoon butter in heavy small skillet over medium-low heat. Add onion and sage and sauté 4 minutes. Add garlic and cook 30 seconds. Transfer onion mixture to bowl. Cool slightly. Add remaining butter and stir to combine. Mix in parsley. Season to taste with salt and pepper. Place butter on piece of plastic wrap. Roll up into log and refrigerate. (Butter can be prepared up to 2 days ahead).
  • Heat oil in heavy large skillet over medium heat. Season pork with salt and pepper. Cook until pork is cooked through, about 6 minutes per side. Transfer to plates. Cut butter into 1/4-inch slices. Top pork with butter.
