PUMPKIN MASHED POTATOES

3 tablespoons extra virgin olive oil
¼ pound prosciutto, diced into one-inch pieces
1 cup onions, diced
2 tablespoons fresh garlic, minced
3 tablespoons fresh sage, chopped
2 ½ pounds skin-on yellow or red or mixed potatoes, diced ½ inch or creamer potatoes cut in half *See Notes below
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
½ cup water
1 15-ounce can pumpkin puree (not pumpkin pie filling) - or make use of about 1 1/2 cups of our homemade pumpkin puree
4 tablespoons butter
3 tablespoons maple syrup
2 tablespoons any dairy such as milk, cream, sour cream, etc. (whatever you have on hand)

Steps:

  • In a large skillet, heat olive oil over medium heat and once hot, add prosciutto and cook for a few minutes on both sides to crisp then remove to paper towels. Chop into smaller pieces to serve over finished dish.
  • Keep fat hot and add onions and garlic and cook for two minutes.
  • Add sage, potatoes, salt, pepper and water, cover, bring to a simmer then lower heat to medium low and cook for 15 minutes or until tender. Check to make sure water has not all evaporated, adding a little more as needed.
  • Remove from heat and using a potato masher, mash the potatoes coarsely. There should be some chunks when finished.
  • Add the pumpkin, butter, maple syrup and the dairy and heat over medium heat until hot. Taste and adjust seasoning.
  • Remove to a serving bowl and sprinkle with the cooked prosciutto.

Sweet Potato, Pumpkin and Apple Puree image

This mixture of sweet potatoes, savory pumpkin and tart apples is a variation on my sweet potato puree with apples. For the best flavor, I suggest you make it a day ahead.

1 pound sweet potatoes, scrubbed
1 pound pumpkin, seeds removed
2 tart apples, such as Granny Smith or Braeburn
2 tablespoons lime juice
5 tablespoons plain Greek-style yogurt
2 tablespoons unsalted butter, melted
2 tablespoons maple syrup
Pinch of salt
Pinch of freshly grated nutmeg

Steps:

  • Preheat the oven to 400 degrees. Scrub sweet potatoes, and pierce in several places with a sharp knife. Pierce the apples in a few places. Line a baking sheet with foil, lightly oil the foil, and place the potatoes, pumpkin (cut side down) and apples on top. Bake the pumpkin and apples for 30 to 40 minutes, until a knife can easily be inserted right to the core of the apples (it's fine if the skin pops off the apples, or if they collapse) and the pumpkin is soft. Remove the pumpkin and apples from the oven. Continue to bake the sweet potatoes until thoroughly soft and beginning to ooze, 15 minutes or longer, depending on the size. Remove from the heat, and allow to cool until you can handle them easily.
  • Turn the oven down to 350 degrees. Remove the skins from the potatoes and pumpkin. Peel and core the apples, and scrape off any apple flesh that adheres to the skin. Chop everything coarsely, and place in a food processor fitted with the steel blade. Puree until smooth. Add the remaining ingredients, and blend well. Transfer to a lightly buttered 2-quart baking dish.
  • Heat the puree in the 350-degree oven for 20 minutes, or until steaming. Serve hot.

2 1/2 pounds potatoes (or sweet potatoes peeled)
2 tablespoons butter
1/4 cup heavy cream
15 ounce canned pumpkin
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
2 tablespoons maple syrup
2 tablespoons miso paste ( or 1 teaspoon Worchestershire sauce)
1/2 teaspoon salt
freshly ground black pepper
minced fresh chives or parsley (optional)
Additional maple syrup to drizzle

Steps:

  • Put the potatoes in a large pot and cover with water. Bring to boil, turn to heat to medium-low and cook potatoes for 20 minutes or until you can easily pierce with a fork. Make sure when you cook the potatoes, that the water is a very low boil (a bubble burp every couple of seconds) - a big, rolling boil will make your potatoes mushy. Drain water.
  • Mash the potatoes. Mash and stir in the remaining ingredients to the mashed potatoes until smooth. Taste and adjust seasonings if needed. Drizzle with a bit more maple syrup just before serving.

But, surprisingly, it's the cider vinegar that really makes this dish sing-just a tablespoon of this stealth ingredient adds a roundness that ties the whole dish together. 1 bay leaf
4 sprigs fresh parsley
3 tablespoons olive oil
3 cloves garlic, minced
3 leeks, white and light green parts only,halved lengthwise and thinly sliced
1 teaspoon ground cinnamon
1 teaspoon dried thyme
1 large potato, peeled and cut into 1 inch chunks
1 1/2 lbs sugar pumpkin, peeled,halved lengthwise,seeded,and cut into 1 inch chunks
4 cups low sodium chicken broth
2 cups half-and-half
1 teaspoon salt
1 teaspoon sugar
1 pinch cayenne pepper
fresh ground pepper
1/4 cup chopped fresh parsley
cheesecloth (8-inch square)

Steps:

  • Cut an 8-inch square of cheesecloth, and place the cloves, peppercors, bay leaf, and parsley in the center; bring up the ends to form a sack and tie securely with kitchen twine; set aside.
  • In a large saucepan, saute garlic and leeks in olive oil over medium heat until tender but not brown, about 3-5 minutes.
  • Add the cinnamon and thyme and cook 1 minute longer.
  • Add the chunks of potato, pumpkin, the stock, and the spice bag; bring to a boil.
  • Reduce heat and simmer, covered, for 20 minutes, or until potatoes and pumpin are fork-tender; discard spice bag.
  • Cool soup 5-7 minutes; then puree in batches in a blender or food processor.
  • Return pureed soup to pan and add half and half, salt, sugar, cayenne, and ground pepper (to taste).
  • Cook over low heat until heated through, but do not boil.
  • Adjust seasonings and serve garnished with fresh parsley.

This is a delicious version of potato and pumpkin soup. I use Kent (jap) pumpkin which is slightly sweeter than most. It is a hearty soup which can be eaten as a main meal particularly during winter; serve it with warm crusty bread. In fact I only make it during autumn and winter. I use a Bamix to puree the soup in the pot which saves having to scoop it into a blender or food processor.

2 ounces butter or 2 ounces margarine
2 onions, peeled and sliced
1 garlic clove, crushed
2 lbs pumpkin, peeled and diced
12 ounces potatoes, peeled and diced
1 1/2 teaspoons tomato paste
2 1/2 cups chicken stock or 2 1/2 cups vegetable stock
salt & freshly ground black pepper
1 teaspoon lemon juice
1/2 teaspoon ground allspice
2 1/2 cups milk
6 tablespoons sour cream
freshly chopped coriander (cilantro) or parsley (to garnish)

Steps:

  • Melt butter in a large saucepan and sauté onions and garlic very gently until soft but not browned.
  • Add pumpkin and potatoes and cook for a few minutes, then add tomato paste, stock, seasonings, lemon juice and allspice and bring to boil.
  • Cover pan and simmer gently for about 40 minutes or until very tender.
  • Puree in a blender or food processor and return to a clean pan.
  • Add milk and bring back to boil, whisking continuously. Simmer for 2-3 minutes. Adjust seasonings and stir in sour cream.
  • Reheat and serve sprinkled generously with coriander or parsley.
  • Without the addition of cream this soup may be frozen for up to 3 months.
