This easy custard has all the flavors you love for fall: pumpkin and warm spices, plus a little bit of tanginess and a thin topping of sweetened condensed milk. Pour it into pretty glasses for an easy, festive, make-ahead dessert.

Number Of Ingredients 10

1/3 cup cool water
2 teaspoons powdered gelatin
1 3/4 cup heavy cream
1/2 cup packed dark brown sugar
One 14-ounce can sweetened condensed milk
1 teaspoon pumpkin pie spice
Pinch or two of fine sea salt
1 cup pumpkin puree
1 cup sour cream or creme fraiche
1 1/2 teaspoons pure vanilla extract

Steps:

  • Arrange 6 individual serving dishes, such as ramekins or dessert glasses or cups on a rimmed baking sheet. Make room for the baking sheet in your refrigerator.
  • Place the water in a shallow bowl and sprinkle the gelatin evenly over the surface. Let bloom for 5 minutes.
  • Meanwhile, heat the cream and brown sugar in a medium pot over medium heat, stirring occasionally to help the sugar dissolve completely, until the cream comes to a bare simmer. Measure out 1/3 cup of the sweetened condensed milk and reserve it; whisk the remainder into the pot, along with the pumpkin pie spice and salt.
  • Add the bloomed gelatin to the pot and stir until it is fully dissolved. Remove the pot from the heat and stir in the pumpkin puree, sour cream and vanilla. Transfer the mixture to a large heatproof container with a pour spout, such as a liquid measuring cup.
  • Divide the mixture among the prepared serving dishes. Refrigerate until fully set, at least 4 hours and up to 2 days (if storing longer than 8 hours, cover loosely with plastic wrap). Once the panna cottas have set, divide the remaining sweetened condensed milk over the portioned panna cottas to create a thin, even layer on each. Refrigerate until ready to serve.

1 recipe Pie Dough, recipe follows
2 cups canned pumpkin puree (not pumpkin pie filling!!!)
2 tablespoons cream cheese, softened
2 tablespoons molasses
1/2 cup granulated sugar
1/4 cup lightly packed light brown sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1/2 teaspoon ground cloves
3 extra-large eggs, lightly beaten, plus 1 egg beaten with water for egg wash
1 1/2 cups half-and-half
Turbinado sugar, for sprinkling, optional
2 1/4 cups all-purpose flour
Pinch of kosher salt
Big pinch sugar
1 stick cold unsalted butter, cubed
1 tablespoon white vinegar

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Roll out 1/2 pie dough recipe on a lightly floured surface and fit into a 9 inch pie pan. Trim any uneven overhang then crimp the edge around the pie.
  • In a big bowl, whisk the pumpkin, cream cheese, and molasses until smooth. Whisk in the sugars and spices. Whisk in the eggs and half-and-half until well blended.
  • Pour the filling into the pie shell and bake for 10 minutes. Lower the oven temperature to 350 degrees Fahrenheit and bake an additional 35-40 minutes, until the pie is still very jiggly in the center. Remove from oven to a rack and cool to room temperature.
  • Meanwhile roll out the second disc of dough to about 1/8 inch thick and cut out desired shapes or strips to make lattice. Attach to cooled pie, brush with egg wash and sprinkle with turbinado sugar if you like. Bake an additional 15-20 minutes until the crust decorations are golden brown. If the edges are getting too dark cover them with foil to prevent burning. Remove and cool on a wire rack, serve at room temperature.
  • In a big bowl combine the flour, salt, and sugar and make a claw with your hand to mix it up real good. Toss in the cold butter cubes and massage them into the flour mixture so you get nice big chunks.
  • Combine the vinegar with 1/2 cup cold water (this is called acidulating, which just means adding acid to something - usually water). Stir the acidulated water into the flour mixture and gently work the dough until a ball is formed.
  • Divide dough and shape into 2 discs, wrap in plastic squeezing out the air and chill it in the fridge for at least 1 hour. This also freezes awesome for up to a year.

My kiddos love it when I make this with yogurt, but I prefer it with cream. The yogurt makes a great, rather tart, breakfast (in my opinion), while the cream makes it taste more like pie. Makes 4 to 6 individual servings or 1 quart (if chilled in one large serving bowl).

1 cup heavy cream (preferably raw, or yogurt)
1/2 cup raw whole milk
1-1/2 cups pumpkin puree (*)
1/2 cup maple syrup (or light-flavored raw honey)
2 teaspoons pumpkin pie spice (**)
1/2 teaspoon vanilla extract (***)
1/2 cup pure water (cold)
1 tablespoon sustainably-sourced gelatin (certified glyphosate-free)

Steps:

  • Place cold water in a small saucepan and sprinkle gelatin over.
  • Let sit while you gather the other ingredients.
  • Place the yogurt, pumpkin, maple syrup, vanilla, and pumpkin pie spice in a blender and process just until smooth.
  • Heat the gelatin-water mixture over low heat just until the gelatin is completely dissolved -- about 2 to 3 minutes.
  • Meanwhile, gather your containers, either one whole serving bowl or individual pots.
  • When the gelatin has dissolved, turn the blender on and with the motor running, drizzle the gelatin mixture into the pumpkin mixture.
  • If it's too thick to move, add a bit of whole milk, a tablespoon at a time, until it's thin enough to move freely.
  • Pour immediately into your containers and move to the refrigerator to chill.
  • Let sit for at least two hours.
  • These can also be made up to two days in advance.

1 1/2 tablespoons unflavored powdered gelatin (about 2 2 1/2 -ounce packets)
2 1/2 cups whole milk
2 cups heavy cream
2/3 cup sugar
Pinch salt
1 15-ounce can pumpkin purée
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • In a bowl, sprinkle the gelatin over 1 cup milk and let sit for 10 minutes.
  • In a medium saucepan, heat the remaining milk, cream, sugar and salt to just before boiling. Whisk the gelatin mixture, pumpkin, cinnamon and nutmeg into the warmed cream. Remove from heat and let sit for 10 minutes, then strain through a sieve lined with cheesecloth. Do not press on the solids. Pour into 5 3/4-cup ramekins and chill for at least 3 hours.
  • To serve, dip the base of a ramekin in hot water until the panna cotta is loose. Lay a plate on top and invert it. You may need to shake the ramekin to release the panna cotta.

2 1/2 teaspoons unflavored gelatin (more than 1 (1/4 ounce) packet)
1/4 cup water
1 cup heavy cream
1 3/4 cups unsweetened coconut milk (a 13.5 ounce can)
1 cup canned pure pumpkin
1/2 cup sugar
3/4 cup sweetened flaked coconut
1/2 cup mild honey, heated to liquefy if solid
Equipment:
eight (8-ounce) dessert bowls

Steps:

  • Sprinkle gelatin over water in a very small saucepan and let stand 1 minute to soften. Heat over medium heat, stirring, until gelatin is dissolved, then remove from heat.
  • Pulse coconut milk, cream, pumpkin, sugar, and a pinch of salt in a blender to combine, then add gelatin mixture and blend until smooth. Strain mixture through a fine sieve into a bowl with a spout or transfer to a 4-quart measuring cup.
  • Pour mixture into bowls and chill, covered, until firm, at least 6 hours.
  • Meanwhile, preheat oven to 350°F with rack in middle. Spread coconut on a rimmed sheet pan and stirring once or twice bake until golden, 8 to 10 minutes, and cool.
  • Just before serving, sprinkle desserts with coconut and drizzle with honey.

  • Put 1/2 cup of the milk in a 6- or 8-cup saucepan, and sprinkle the gelatin over it. Let sit for 5 minutes. Meanwhile, blend together the remaining milk, cream, pumpkin, sugar and cinnamon. The mixture should be perfectly smooth, so it is best to use a blender.
  • Turn the heat under the saucepan to low, and cook the milk, stirring occasionally, until the gelatin dissolves. Pour in the cream mixture, and turn the heat to medium. Cook, stirring occasionally, until steam rises. Turn off the heat, and ladle or pour the mixture into 8 4-ounce ramekins or other containers.
  • Chill the panna cotta until firm, and serve, with creme fraiche or whipped cream if you like.

1 cup canned pumpkin pie mix (not plain pumpkin)
1/2 cup fat-free evaporated milk
1 (1/4 ounce) envelope unflavored gelatin
1 teaspoon ground cinnamon
6 teaspoons caramels, fat-free topping (from 12.25-oz jar)

Steps:

  • In medium bowl, mix yogurt and pumpkin pie mix; set aside. In 1-quart saucepan, sprinkle gelatin over evaporated milk; let stand 1 minute to soften.
  • Heat evaporated milk mixture over medium-high heat, stirring constantly, until gelatin is dissolved and mixture just begins to boil, about 1 minute; remove from heat. Pour into yogurt mixture; stir until blended. Divide mixture evenly among 6 (6-oz) custard cups. Cover with plastic wrap; refrigerate about 4 hours or until set.
