This pumpkin bread is perfectly moist, not-too-sweet and couldn't be easier. It's perfect for toasting and slathering with butter or cream cheese, and maybe a drizzle of honey or maple syrup.

Unsalted butter, for the pans
3 1/2 cups all-purpose flour, plus more for the pan (see Cook's Note)
3 cups sugar
1 cup vegetable oil
4 large eggs, lightly beaten
One 15-ounce can pure pumpkin puree
2 teaspoons fine salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2/3 cup water

Steps:

  • Preheat oven to 350 degrees F. Butter and flour two 9-by-5-inch loaf pans.
  • Whisk together the sugar and oil in a large bowl until well combined. Whisk in the eggs and pumpkin until combined.
  • Combine the flour, salt, baking soda, baking powder, nutmeg, allspice, cinnamon and cloves in a medium bowl and whisk until well combined. Add half the dry ingredients to the pumpkin mixture and stir to combine. Add half the water and stir to combine. Repeat with the remaining flour and water.
  • Divide the batter between the prepared loaf pans. Bake until cake tester comes out clean and the loaves are golden brown, about 1 hour. Let the loaves cool in the pans on a wire rack for 10 minutes. Remove from the pans and let cool completely, about 1 hour.

This pumpkin bread is beautiful enough to give as a present--and it requires only three ingredients! The secret is in using pumpkin pie filling, which is already generously spiced and sweetened. Combine it with cake mix and you get a ton of flavor with very little effort.

1 cup canned pumpkin pie filling
2 large eggs, lightly beaten
One 15.25-ounce box spice cake mix

Steps:

  • Preheat the oven to 350°F. Line a 9-by-5-by-3-inch loaf pan with parchment paper (see Cook's Note), leaving a 2-inch overhang on the 2 longer sides.
  • Whisk together the pumpkin pie mix and eggs in a large bowl until smooth. Whisk in the spice cake mix until just combined and no lumps remain.
  • Transfer to the prepared loaf pan, smoothing out the top with a small offset spatula. Bake until deep golden brown and a toothpick inserted in the center comes out clean, about 45 minutes.
  • Transfer the pan to a wire rack to cool slightly, about 10 minutes. Use the parchment overhang to lift the pumpkin bread out of the pan and onto the wire rack to cool completely.

2 cups canned pumpkin
3 cups sugar
1 cup water
1 cup vegetable oil
4 eggs
3 1/3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon nutmeg
3/4 teaspoon ground cloves

Steps:

  • Heat oven to 350.
  • in a large mixing bowl, combine pumpkin, sugar, water, vegetable oil and eggs.
  • Beat until well mixed.
  • Measure the flour, baking soda, cinnamon, salt, baking powder, nutmeg and cloves into a separate bowl and stir until combined.
  • Slowly add the dry ingredients to the pumpkin mixture, beating until smooth.
  • Grease two 9 x 5 inch loaf pans and dust with flour.
  • Evenly divide the batter between the two pans.
  • Bake for 60-70 minutes or until a toothpick inserted in center comes out clean.
  • Cool for 10-15 minutes, then remove from pans by inverting onto a rack and tapping the bottoms.
  • Slice and serve plain, buttered, or with cream cheese.
  • Note: Cream cheese is the ONLY thing to put on this bread because--it is so so so yummy!

This recipe came from a friend, who got it after being the camp cook of a pioneer reinactment weekend field trip for her daughters sixth grade class. She made our family a meal during a crisis period and this scrumptious bread accompanied it!

1 tablespoon fast rise yeast
2 1/2 cups warm water
1/3 cup oil
1/2 cup sugar
3 teaspoons salt
1/2 cup milk, warmed
4 cups whole wheat flour
3 cups white flour (or more)

Steps:

  • Disolve in a bowl; yeast in water Add and mix in oil and sugar.
  • Let rest 10 minute.
  • stir in milk.
  • mix ww flour and salt together.
  • slowly beat in ww flour to yeast mixture one cup at a time, beating till smooth. Beat in about one cup of the white flour or enough until it clumps together.
  • Turn onto board and knead till smooth adding remaining flour, up to 3 more cups, until its not sticky.
  • Cover and let rise until double.
  • Divide into three loaves.
  • Rise another 1/2- 1 hours.
  • Bake at 350 for 20 minute.
  • Dough may also be used for pizza crust, cinnamon rolls, and dinner rolls.
  • If you want to freeze dough, do so before second rising and then when ready to use, thaw and rise.

My kids each took a loaf to their school teachers at Christmas time - it was a hit! I like the fact that all the ingredients can be thrown together and mixed. My kind of cooking!

When my son was in "Delightful Day" pre-school (he's 14 now) they had a Thanksgiving Day Feast. They served this recipe. However, instead of baking it into loaves they made mini muffins.To date, this is by far the best pumpkin bread/muffin I have ever had. Very easy to make and soooo moist! 3 1/2 cups flour
3 cups sugar
1 1/2 teaspoons salt
1/2 teaspoon baking powder
2 teaspoons cinnamon
2 teaspoons allspice (optional)
2 teaspoons baking soda
1 cup water
1 cup oil
2 cups pumpkin
4 eggs, slightly beaten
1 cup raisins
1 cup chopped nuts

Steps:

  • Mix dry ingredients in a large bowl.
  • Mix wet ingredients in another large bowl at low speed by mixer or by hand.
  • Make well in dry ingredients (a large indentation in center).
  • Add wet ingredients to well and fold in until thoroughly moistened.
  • Add nuts and raisins, folding to distribute evenly.
  • Do not overmix.
  • Bake in 3 greased and floured loaf pans.
  • Bake at 350 degrees for 45 to 50 minute.
  • Freezes great!
  • Can also be made into muffins.
  • Adjust cooking time as necessary.
  • Tip: I've found that baking in"dark" aluminum pans tends to burn easily on outside.
  • I use light colored aluminum pans.
  • They reflect the heat better.

2 teaspoons baking soda
2 teaspoons salt
1 teaspoon baking powder

1 cup canola oil
4 eggs, beaten
2 cups solid pack pumpkin puree
⅔ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two loaf pans.
  • In a medium mixing bowl, combine flour, baking soda, salt, baking powder, nutmeg, allspice, cinnamon and cloves.
  • In a large bowl with an electric mixer, blend sugar, oil and eggs. Stir in pumpkin. Slowly blend the flour mixture into pumpkin mixture. While blending the mixture add water incrementally. Pour the batter into two prepared loaf pans.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 90 minutes. Let cool for 10 minutes before removing from the pans.

175g butter , melted
140g clear honey
1 large egg , beaten
250g raw peeled pumpkin , or butternut squash, coarsely grated (about 500g/1lb 2oz before peeling and seeding)
100g light muscovado sugar
350g self-raising flour
1 tbsp ground ginger
2 tbsp demerara sugar

Steps:

  • Preheat the oven to 180C/gas 4/ fan 160C. Butter and line the base and two long sides of a 1.5kg loaf tin with a strip of baking paper.
  • Mix the butter, honey and egg and stir in the pumpkin or squash. Then mix in the sugar, flour and ginger.
  • Pour into the prepared tin and sprinkle the top with the demerara sugar. Bake for 50-60 minutes, until risen and golden brown. Leave in the tin for 5 minutes, then turn out and cool on a wire rack. Serve thickly sliced and buttered.
