1 tablespoon oil
1 onion, finely chopped
1 garlic clove, crushed
125 g bacon, sliced
1 1/2 cups arborio rice
500 ml chicken stock
1 (420 g) can condensed pumpkin soup
1/2 cup parmesan cheese, grated
2 tablespoons flat leaf parsley, chopped

Steps:

  • Heat oil in a pan and cook onion until soft. Add garlic, bacon and rice and stir to coat in oil.
  • Add 1/2 cup stock and cook over a low heat until absorbed, stirring constantly. Repeat with remaining stock making sure to add only in 1/2 cup batches.
  • Add soup, stir well and continue to cook, stirring constantly until all the liquid has absorbed. This process will take around 20 minutes. Stir in the parmesan cheese and parsley. Serve immediately with a fresh green salad.

We've adapted this Italian squash rice-pot recipe so it's a breeze for kids to make - just follow our step-by-step prep and cooking guide

1 small pumpkin or butternut squash- after peeling and scraping out the seeds, you need about 400g/14oz
1 tbsp olive oil, plus a drizzle for the pumpkin
2 garlic cloves
8 spring onions
25g butter
200g risotto rice
2 tsp ground cumin
1l hot vegetable stock, plus extra splash if needed
50g grated parmesan (or vegetarian alternative)
small handful coriander, roughly chopped

Steps:

  • Heat oven to 180C/160C fan/ gas 4. Chop up the pumpkin or squash into 1.5cm cubes (kids- ask for help if it's slippery). Put it on a baking tray, drizzle over some oil, then roast for 30 mins.
  • While the pumpkin is roasting, you can make the risotto. Put the garlic in a sandwich bag, then bash lightly with a rolling pin until it's crushed.
  • Cut up the spring onions with your scissors.
  • Heat 1 tbsp oil with the butter in your pan over a medium heat - not too hot. Add the spring onions and garlic. Once the onions are soft but not getting brown, add the rice and cumin. Stir well to coat in the buttery mix for about 1 min.
  • Now add half a cup of the stock, and stir every now and then until it has all disappeared into the rice. Carry on adding and stirring in a large splash of stock at a time, until you have used up all the stock - this will take about 20 mins.
  • Check the rice is cooked. If it isn't, add a splash more stock, and carry on cooking for a bit. Once the rice is soft enough to eat, gently stir in the grated cheese, chopped coriander and roasted pumpkin.

2 tablespoons sunflower oil (canola is also a good substitute)
1 large onion, chopped
1/2 cup smoked bacon, chopped
1 1/2 cups risotto rice
1 garlic clove, crushed
1/4 cup sliced dried mushroom, soaked in boiling water
2 cups mixed fresh mushrooms
5 cups hot stock
1 sprig fresh oregano or 1 sprig fresh thyme
1 tablespoon butter
1/4 cup dry white wine
3 tablespoons tomatoes, chopped and peeled
8 pieces black olives, stoned and quartered
salt & freshly ground black pepper

Steps:

  • Heat teh oil in a large, heavy-based pan with a lid. Gently cook the onion and bacon until the onion and bacon is tender and the bacon fat has run out.
  • Stir in the rice and garlic and cook over a high heat for 2-3 minutes, until the rice is well coated.
  • Add the dried mushrooms and their liquid, the fresh mushrooms, half the stock, the oregano or thyme and seasoning. Bring to a boil, then reduce the heat to low. Cover tightly and leave to cool.
  • Check the liquid and if dry, add more liquid as required until the rice is cooked, but not mushy. Just before serving, stir in the butter, white wine, tomatoes and olives and check the seasoning. Serve hot, garnished with thyme sprigs.

My ultimate comfort food. I make this so often I don't need a recipe but here it is for everybody else. Enjoy!

15 g butter
1 tablespoon olive oil
1 onion
2 cloves garlic, crushed
6 mushrooms, sliced
1 1/2 cups arborio rice
1 cup diced pumpkin (I use butternut)
3 -4 cups hot stock (chicken or vegetable)
1/2 cup grated parmesan cheese
salt
freshly ground black pepper
1/2 cup chopped fresh parsley (optional)

Steps:

  • Heat butter and oil together in a large saucepan or frypan.
  • Gently cook the onion and garlic.
  • Add the rice and cook, stirring until the rice is coated in the oil mix.
  • Cook this about 1 minute.
  • Stir in the pumpkin and mushrooms.
  • Pour over 1 cup of the hot stock.
  • Cook, stirring often until the liquid is almost all absorbed.
  • You don't want the liquid to be boiling in with the rice, just a gentle simmer.
  • Continue stirring and adding stock one cup at a time until the stock is all absorbed and the rice is tender.
  • This takes about 20 minutes.
  • You don't need to stand there stirring the whole time if you use a non-stick pot and return often.
  • Stir in the parmesan cheese,seasoning and parsley.
  • It will go lovely and sticky with the cheese.
  • Serve immediately.

  • Add the bacon to a 5-6qt Dutch oven (or heavy-bottomed pot) in an even layer over medium-low heat. Slowly render until crisp, about 12-15 minutes, stirring occasionally. Use a slotted spoon to transfer the bacon to a plate lined with a paper towel.
  • Add the diced onion to the hot bacon fat. Saute over medium heat for about 5 minutes until softened. Add the sprigs of thyme, a pinch of salt, and a few cracks of freshly cracked black pepper. Stir in the arborio rice. Allow to toast for a minute or so.
