Steps:
- Heat a medium soup pot over medium to medium high heat. Add the oil and melt the butter. Add bay, celery, and onion. Season the veggies with salt and pepper. Cook 6 or 7 minutes, until tender. Add flour, poultry seasoning and hot sauce, to taste, then cook flour a minute. Whisk in chicken stock and bring liquid to a bubble. Whisk in pumpkin in large spoonfuls to incorporate it into the broth. Simmer soup 10 minutes to thicken a bit then add in cream and nutmeg. Reduce heat to low and keep warm until ready to serve.
- While soup cooks, assemble the relish: combine apple, onion, lemon juice, cranberries, chili powder, honey and cinnamon.
- Adjust seasonings in soup and relish and serve soup in shallow bowls with a few spoonfuls of relish.
PUMPKIN SOUP WITH CRANBERRY COMPOTE AND ROASTED CHESTNUTS

- Prepare the Pumpkin Soup: Preheat oven to 375 degrees. Line two baking sheets with parchment paper. Coat each with 1 tablespoon butter, and sprinkle with 1 tablespoon water. Season flesh of pumpkins generously with salt; place cut-side down on sheet. Roast until tender, 30 to 45 minutes.
- Meanwhile, melt remaining 3 tablespoons butter in a Dutch oven over medium heat. Add onions; cook until translucent. Add garlic, curry, and nutmeg; cook, stirring frequently, for 2 minutes. Set aside.
- When pumpkin is cool enough to handle, using a spoon, scrape flesh from skin into Dutch oven. Stir in stock, and bring to a boil over medium-high heat; reduce to a simmer, and cook over low heat for 30 minutes.
- Prepare the Cranberry Compote: In a medium saucepan, combine 1 cup water, cranberries, sugar, zest, and salt; bring to a boil over medium-high heat. Reduce to a simmer, cooking until it reaches a jam-like consistency, about 20 minutes.
- Prepare the Roasted Chestnuts: Heat oven to 400 degrees. Place chestnuts on a baking sheet; roast until shells split, 5 to 10 minutes. Let stand until cool.
- Shell nuts, and slice thinly. Melt 2 tablespoons butter in a medium skillet over medium heat. Add chestnuts, and cook until browned over low heat. Drain on a paper towel-lined plate.
- Blend soup using an immersion blender or in batches in a blender. Over a large bowl, strain through a fine mesh strainer; set strainer over pot, strain again. Whisk in cream, and season with salt and pepper.
- To serve, ladle soup into warmed bowls. Garnish with a dollop of cranberry compote and a sprinkling of chestnuts; serve immediately.
PUMPKIN CRANBERRY LOAF

- Preheat the oven to 350 degrees F. Butter and flour an 8 1/2-by-4 1/2-inch loaf pan.
- Put the butter in a small skillet over medium-low heat. Melt the butter and let simmer until the butter browns (you'll see tiny tan/light brown specks at the bottom of the skillet and the butter will smell nutty), 5 to 8 minutes. Remove from the heat and let cool completely.
- Combine the brown butter, pumpkin, brown sugar, maple syrup, vanilla and eggs in a large bowl. Whisk until smooth. Whisk together the all-purpose flour, whole wheat flour, baking powder, pumpkin pie spice, salt and baking soda in a separate bowl. Add to the wet ingredients and whisk until smooth (but don't overmix). Scrape into the prepared loaf pan and smooth the top. Press the cranberries into the top and sprinkle evenly with the turbinado sugar.
- Bake until the top is browned and crusty and a tester inserted in the center comes out clean, 50 to 55 minutes. Cool on a rack for 15 minutes, then unmold and cool completely.
PUMPKIN AND CRANBERRY SOUP
This recipe was published in my local paper, and adapted from The "New England Soup Factory Cookbook" by Marjorie Druker and Clara Silverstein. The sherried cranberries are what make the recipe pop. Prep time does not include time to soak the cranberries.

- Place the cranberries in a glass or ceramic bowl and add sherry. Cover the bowl and let the cranberries soak at least 2 hours or overnight.
- In a stockpot, melt the butter over medium heat. Add the onion, celery and carrots and saute 5 minutes.
- Add the pumpkin, stock, brown sugar, maple syrup and nutmeg and bring to a boil.
- Reduce the heat to medium and simmer 30 minutes.
- Remove from heat and puree or blend until creamy.
- Add the cream and the cranberries with the soaking liquid.
- Season with salt and pepper and stir well.

PUMPKIN SOUP WITH CRANBERRIES

- Dice pumpkin. Peel potato, wash and cut into pieces. Peel and dice onion. Peel and cube ginger.
- Heat oil in a large pot and saute onion, ginger, and curry. Add pumpkin and potato, and cook briefly. Pour in vegetable stock and simmer covered for 30 minutes.
- Clean and wash spring onions, and finely chop. Puree pumpkin in the soup. Add cream and cranberries to the soup and bring to a boil. Season with salt and pepper. Add spring onions and orange juice, and cook for 5 minutes, but do not boil. Season to taste again.
- Tip: Fresh cranberries can be used instead of dried cranberries during the months from October to January. Saute 3/4 cup of fresh cranberries in 1 tsp of herb butter and sprinkle with 1 tsp of sugar. Add cranberries to pumpkin. Puree everything in the soup and pour in cream. Then continue working on the recipe above.
PUMPKIN CRANBERRY COOKIES
From a "clip-out" recipe that I found many years ago. The original recipe calls for raisins but I like using dried cranberries. These have a nice soft texture.

- For Cranberry Butter.
- Pour boiling water over berries and let sit for 10 minutes. Drain. Chop berries and whip with margarine and sugar. Chill for at least 1 hour.
- For Pumpkin Cranberry Scones.
- Preheat oven to 400 degrees F.
- In large mixing bowl, combine flour, brown sugar, baking powder, baking soda, pumpkin pie spice . Cut in margarine with pastry cutter until mixture looks like coarse crumbs. Add cranberries.
- In small bowl, beat egg. Add pumpkin and milk. Pour all at once into well in the middle of the dry ingredients mixing with a fork until just moistened.
- Knead on lightly floured breadboard until nearly smooth (several seconds).Pat dough into a 12x9 inch rectangel. Cut dough into 4x3 inch rectangles; cut each rectangle in half to form triangles. Place on ungreased cookie sheet. Bake for about 12 minutes. Remove from pan and cool on rack for 5 minutes. Serve warm with cranberry, butter if desired.
- Pumpkin Pie Spice.
- Mix together 1 1/2 teaspoons cinnamon, 1 teaspoons ginger, 1/4 teaspoons nutmeg and 1/8 teaspoons cloves.

PUMPKIN-CRANBERRY BARS
Here on Zaar there are a couple of recipes somewhat like this one, but there are differences, & the Great Pumpkin is tellin' Charlie Brown that this one is pretty darn good! Preparation time does not include time needed for unfrosted bars to cool completely.

- Preheat oven to 350 degrees F.
- FOR THE BARS, in a large bowl, mix together first 7 ingredients.
- Stir in pumpkin, butter, eggs & vanilla until well blended.
- Stir in cranberries, then spread mixture into an ungreased 15"x10" jellyroll baking pan.
- Bake 20-25 minutes or until a wooden pick inserted in center comes out clean.
- Cool completely in pan on wire rack.
- FOR THE FROSTING, melt 1/2 cup butter in a saucepan over medium heat, stirring often, until butter just starts to turn a golden color ~ DO NOT LET IT BURN!
- Remove immediately from heat & pour into a bowl.
- Let butter cool slightly, then stir in powdered sugar & vanilla.
- Stir in enough orange juice to form a frosting consistency.
- When pan of uncut pumpkin bars is cooled completely, frost & cut into bars.
- Serve & enjoy & refrigerate leftovers.

- Heat the oven to 375°F.
- Using an electric mixer, blend the cream cheese in a large mixing bowl to further soften it. Beat in the white sugar and the brown sugar, then beat in the eggs one at a time.
- Add the vanilla extract, spices, salt, pumpkin, and cream, and blend the filling on a low speed until it is smooth.
- Pour the filling into the prepared/panned pie shell and bake the pie on the center rack for 30 minutes.
- Reduce the heat to 350° and continue baking until the pie puffs slightly around the edges and the center is no longer soupy, about another 20 minutes.
- Remove it from the oven and let it cool to room temperature. Cover the pie and refrigerate it for at least 4 hours.
- To prepare the topping, blend the orange juice and cornstarch in a small saucepan until smooth. Stir in the cranberry sauce.
- Bring the mixture to a boil over medium heat, stirring all the while. Let the filling boil for 1 minute, then remove it from the heat and let it cool for 10 minutes.
- Pour 1 1/2 cups of the topping over the pie and smooth it up to the edges with a spoon. Pour the rest of the topping into a serving bowl.
- Chill the pie for 15 minutes before serving, and set out the remaining topping for those who prefer an extra-tart flavor.
