QUICK AND EASY PULLED PORK BURRITOS
A tasty way to use up your leftovers from a pulled pork! Goes well with a little coleslaw.

Steps:
- Pour beans into a pot and bring to a simmer over medium-low heat.
- Place a tortilla on a microwave-safe plate, sprinkle with onion, 2 tablespoons beans, and 2 to 3 tablespoons pulled pork. Sprinkle with Monterey Jack cheese, and roll the tortilla closed. Drizzle over 2 tablespoons of enchilada sauce, and sprinkle with more cheese.
- Microwave until heated through and cheese is melted, about 1 minute. Repeat with remaining tortillas and filling ingredients.

PULLED PORK BRUSCHETTA WITH CARAMELIZED ONIONS AND MOZZARELLA RECIPE - (4.5/5)

- Heat up the widest skillet you have over medium low heat, and add the olive oil and sliced onions. Cook for 20 minutes, stirring occasionally, until the onions have caramelized. If at any point the onions are browning instead of turning translucent, turn the heat down slightly. Toast the bread by placing the slices on a sheet pan and sticking them under the broiler for a minute or so on each side. Don't walk away from it, it burns quickly! Remove the bread from the oven and preheat the oven to 350 degrees F. Rub the bread with the garlic cloves. Pile on a 1/4 cup or so of the pulled pork, then add about a tablespoon of the caramelized onions. Sprinkle with mozzarella cheese, and pop it into the oven until the cheese has melted. Enjoy!
BBQ PULLED PORK BRUSCHETTA
From Food Network's "Down Home with The Neely's"......A great use for leftover pulled pork, or a great reason to make pulled pork! I didn't grill the bread slices, just stuck them under the broiler. Really tasty!!

- In a large saute pan over medium heat, add 2 tablespoons olive oil and butter to melt. Add the onions and saute, stirring constantly, until the onions are deep brown in color, about 20 minutes.
- For Bruschetta:.
- Brush the bread slices with olive oil. Rub the garlic clove on the bread and season with salt and pepper. Place on the grill in a single layer and cook until golden and crisp then repeat on the other side. Remove from grill and let cool slightly.
- To Serve:.
- Top each piece of toast with a heaping spoonful of pork. Top with a spoonful of onions. Place a dollop of barbecue sauce on top of the bruschetta and garnish with chives.

BBQ PULLED PORK
An American classic, the meat is slow-cooked then shredded or 'pulled' and layered with BBQ sauce, pickles and slaw in a soft brioche bun

- Heat oven to 150C/130C fan/gas 2. Rub the pork with 2 tbsp of the olive oil. Heat a large non-stick pan until very hot and sear the pork on all sides until golden brown.
- Place the meat on a wire rack in a roasting tin. Mix the paprika, mustard powder, garlic and onion salt, and some black pepper with the liquid smoke, if using. Brush all over the meat.
- Add 1 cup of water to the roasting tin, cover very tightly with foil and cook for 5 hrs or until almost falling apart.
- Drain the juices from the meat into a measuring jug. Shred the pork using 2 forks, discarding the fat.
- Skim off the fat from the juices. Mix 125ml of the juices with 4 tbsp BBQ sauce (see recipe in 'goes well with') and pour over the meat. Keep warm until serving, or reheat.
- To assemble, pile the meat into the halved brioche buns, spoon over the BBQ sauce, top with coleslaw and pickles, and sandwich together.

BRUSCHETTA WITH CARAMELIZED ONION AND FRESH BASIL
I might as well jump on the Bruschetta Bandwagon! Experiment using local onions in your area! Also, try other similar hard cheeses in place of the Parmesan: asiago, fontina, pecorino romano, etc. From the cookinglight.com website with some changes.

Steps:
- Preheat oven on BROIL.
- Heat the butter and olive oil in a small skillet over medium heat. Add the onion and sugar; cook 15-20 minutes or until very soft and golden brown; stirring frequently. Remove from heat.
- Cool mixture slightly then stir in the fresh basil.
- Cut baguette into 1/2" slices. Place bread slices on a baking sheet.
- Broil the bread for 2 minutes or until toasted. Watch oven carefully!
- Divide and spread caramelized onion mixture over each bread slice. Sprinkle with Parmesan cheese and season with fresh cracked black pepper.
- Return to oven and broil for 1 minute or until cheese melts.
- Garnish each slice with 1 or 2 fresh basil leaves if desired.
