QUICK AND EASY PULLED PORK BURRITOS



Quick and Easy Pulled Pork Burritos image

A tasty way to use up your leftovers from a pulled pork! Goes well with a little coleslaw.

1 (16 ounce) can baked beans (such as Bush's® Grillin' Beans®)
8 (10 inch) soft flour tortillas
1 small onion, diced
1 pound cooked pulled pork, heated
1 (8 ounce) package shredded Monterey Jack cheese
1 (16 ounce) can mild enchilada sauce

Steps:

  • Pour beans into a pot and bring to a simmer over medium-low heat.
  • Place a tortilla on a microwave-safe plate, sprinkle with onion, 2 tablespoons beans, and 2 to 3 tablespoons pulled pork. Sprinkle with Monterey Jack cheese, and roll the tortilla closed. Drizzle over 2 tablespoons of enchilada sauce, and sprinkle with more cheese.
  • Microwave until heated through and cheese is melted, about 1 minute. Repeat with remaining tortillas and filling ingredients.

Pulled Pork Bruschetta with Caramelized Onions and Mozzarella Recipe - (4.5/5) image

1 large yellow onion, sliced
1 tablesoon olive oil
4 large slices of crusty bread
2 cups leftover BBQ pulled pork
1 cup mozzarella cheese
a couple cloves of garlic

Steps:

  • Heat up the widest skillet you have over medium low heat, and add the olive oil and sliced onions. Cook for 20 minutes, stirring occasionally, until the onions have caramelized. If at any point the onions are browning instead of turning translucent, turn the heat down slightly. Toast the bread by placing the slices on a sheet pan and sticking them under the broiler for a minute or so on each side. Don't walk away from it, it burns quickly! Remove the bread from the oven and preheat the oven to 350 degrees F. Rub the bread with the garlic cloves. Pile on a 1/4 cup or so of the pulled pork, then add about a tablespoon of the caramelized onions. Sprinkle with mozzarella cheese, and pop it into the oven until the cheese has melted. Enjoy!

1 1/2 lbs onions, sliced
1 loaf French bread, sliced on into 1/2-inch slices
2 garlic cloves, smashed
salt & freshly ground black pepper
1/2 lb pulled barbecued pork
barbecue sauce
chives, sliced for garnish

Steps:

  • For Onions:.
  • In a large saute pan over medium heat, add 2 tablespoons olive oil and butter to melt. Add the onions and saute, stirring constantly, until the onions are deep brown in color, about 20 minutes.
  • For Bruschetta:.
  • Brush the bread slices with olive oil. Rub the garlic clove on the bread and season with salt and pepper. Place on the grill in a single layer and cook until golden and crisp then repeat on the other side. Remove from grill and let cool slightly.
  • To Serve:.
  • Top each piece of toast with a heaping spoonful of pork. Top with a spoonful of onions. Place a dollop of barbecue sauce on top of the bruschetta and garnish with chives.

2 ½kg boneless pork shoulder, skin removed
3 tbsp olive oil
2 tsp Spanish paprika (pimentón)
2 tsp mustard powder
1 tsp garlic salt
1 tsp onion salt
1 tbsp liquid smoke (optional, see tip, below)
16 brioche buns (see 'goes well with')
Tangy cabbage slaw, homemade chipotle molasses BBQ sauce (see recipes in 'goes well with') and sweet-and-sour pickled cucumbers from a jar, sliced

Steps:

  • Heat oven to 150C/130C fan/gas 2. Rub the pork with 2 tbsp of the olive oil. Heat a large non-stick pan until very hot and sear the pork on all sides until golden brown.
  • Place the meat on a wire rack in a roasting tin. Mix the paprika, mustard powder, garlic and onion salt, and some black pepper with the liquid smoke, if using. Brush all over the meat.
  • Add 1 cup of water to the roasting tin, cover very tightly with foil and cook for 5 hrs or until almost falling apart.
  • Drain the juices from the meat into a measuring jug. Shred the pork using 2 forks, discarding the fat.
  • Skim off the fat from the juices. Mix 125ml of the juices with 4 tbsp BBQ sauce (see recipe in 'goes well with') and pour over the meat. Keep warm until serving, or reheat.
  • To assemble, pile the meat into the halved brioche buns, spoon over the BBQ sauce, top with coleslaw and pickles, and sandwich together.

Number Of Ingredients 9

1 tablespoon butter
1 tablespoon olive oil
1 large onion, chopped
1 teaspoon sugar
1/4 cup chopped fresh basil (NOT dried)
1 French baguette
1/2 cup freshly grated parmesan cheese
fresh ground black pepper
fresh basil leaf, for garnish (optional)

Steps:

  • Preheat oven on BROIL.
  • Heat the butter and olive oil in a small skillet over medium heat. Add the onion and sugar; cook 15-20 minutes or until very soft and golden brown; stirring frequently. Remove from heat.
  • Cool mixture slightly then stir in the fresh basil.
  • Cut baguette into 1/2" slices. Place bread slices on a baking sheet.
  • Broil the bread for 2 minutes or until toasted. Watch oven carefully!
  • Divide and spread caramelized onion mixture over each bread slice. Sprinkle with Parmesan cheese and season with fresh cracked black pepper.
  • Return to oven and broil for 1 minute or until cheese melts.
  • Garnish each slice with 1 or 2 fresh basil leaves if desired.
