STUFFED PIZZA CRUST

One 1-pound loaf store-bought frozen bread dough, thawed and left to rise according to the package instructions
All-purpose flour, for dusting
2 teaspoons olive oil, plus more for drizzling
Large pinch kosher salt
Arrabbiata Sauce, recipe follows, cooled
2 tablespoons grated Parmesan
1/4 cup shredded mozzarella
14 slices pepperoni, chopped
10 pieces string cheese, each cut in half to make 2 shorter pieces
1 egg whisked with 1 teaspoon water
4 Roma tomatoes, sliced
Fresh basil leaves, for serving
2 tablespoons olive oil
1 tablespoon crushed red pepper flakes
1 small to medium onion, chopped (about 1/2 cup)
4 cloves garlic, minced
1/2 cup white wine
Two 15-ounce cans crushed tomatoes
1 tablespoon Italian seasoning
Pinch sugar
Kosher salt

Steps:

  • Preheat the oven to 475 degrees F.
  • Roll and stretch out the risen dough on a floured work surface into a rope about 31 inches long. Press a rolling pin into the dough to create a trench and roll it to a rectangle about 3 inches wide.
  • Keeping a 1/2-inch border on each long side of the dough, smear the remaining dough with the olive oil and sprinkle with salt. Spread the surface with a nice thin layer of the Arrabbiata Sauce, then sprinkle with the Parmesan, mozzarella and pepperoni. Arrange the string cheese pieces on top in a double line. Fold the long sides of the dough up over the center (over the string cheese) and pinch the edges together well so there's no leakage. Bring the ends together to form a circle.
  • Drizzle a baking sheet with olive oil. Carefully transfer the dough circle to the prepared baking sheet, flipping it over before putting it on the sheet so the seam side is down. Brush the egg wash over the surface of the dough. Bake until the edges of the crust are golden brown and the cheese is melted and bubbly, about 15 minutes. Transfer to a board to rest for 10 minutes before cutting.
  • Arrange the tomato slices and basil leaves in concentric circles in the middle of the pizza crust ring and serve with a dish of the remaining Arrabbiata Sauce on the side for dipping.
  • Heat a pan over medium-high heat until hot and add the olive oil. Throw in the red pepper flakes and onions, give them a stir and cook until softened, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the wine, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and Italian seasoning and stir to combine. Add a pinch of sugar and some salt. Bring to a simmer, reduce the heat to low and simmer for 30 minutes.

RANCH PIZZA PIE

4 tablespoons olive oil
2 onions, thinly sliced
2 teaspoons dried oregano
2 cloves garlic, minced
2 medium red bell peppers, finely diced
2 medium yellow bell peppers, finely diced
2 pounds loose breakfast sausage
All-purpose flour, for dusting
Two 17.3-ounce packages frozen puff pastry, thawed
1 large egg (see Cook's Note)
4 cups grated Monterey Jack cheese
48 pepperoni slices
18 slices mozzarella

Steps:

  • Line 2 baking sheets with parchment. Heat 3 tablespoons of the olive oil in a large cast-iron skillet over medium-high heat; add the onions and cook until softened and slightly browned, about 20 minutes. Stir in the oregano, garlic and red and yellow peppers and cook for another 5 minutes. Set aside to cool for 20 minutes.
  • Heat the remaining 1 tablespoon olive oil in another large cast-iron skillet over medium-high heat. Add the sausage and cook, using the back of a wooden spoon to break up the sausage meat into small bits, until browned, 10 to 15 minutes. Set aside to cool for 20 minutes.
  • On a lightly floured surface, roll out each puff pastry sheet to about 13 inches long and 10 inches wide. Place one of the puff pastry pieces on each lined baking sheet; set aside the other two. Whisk the egg in a small bowl with 1 tablespoon water.
  • Sprinkle 2 cups of the Monterey Jack cheese over one of the puff pastry sheets on a baking sheet, leaving a 1/2-inch border around the edges of the pastry. Continue layering with half the caramelized onions and peppers, sausage and pepperoni; finish with half the mozzarella slices. Brush the border of the puff pastry with the egg wash, lay one of the remaining puff pastry pieces over top and use a fork to crimp the edges. Using a sharp paring knife, cut three 1 1/2-inch vents in the top. Put the pie into the fridge to chill for 30 minutes before cooking. Repeat with the other puff pastry pieces and layering ingredients.
  • Preheat the oven to 425 degrees F.
  • Brush one of the pies with the egg wash. Bake on the bottom rack until the pastry is nicely browned, about 20 minutes.
  • Wrap the second pie in plastic wrap on the baking sheet, then in aluminum foil; freeze. When ready to bake, preheat the oven to 425 degrees F. Unwrap the pie and brush it with egg wash. Bake from frozen on the bottom rack until the pastry is nicely browned, about 30 minutes.

2 teaspoons instant or active dry yeast
8 cups all-purpose flour
2 teaspoons kosher salt
2/3 cup olive oil, plus more for coating the bowl
1 tablespoon olive oil
2 cloves garlic, minced
1/2 onion, diced
8 ounces white button mushrooms, sliced
8 ounces brown button mushrooms, sliced
1 tablespoon chopped fresh thyme
1/4 cup white wine
Salt and freshly ground black pepper
Salt and freshly ground black pepper
8 ounces fresh mozzarella, thinly sliced
4 ounces goat cheese, crumbled
8 ounces Italian sausage
Olive oil, for browning sausage
1 jar marinara sauce
8 ounces fresh mozzarella, thinly sliced
4 ounces pepperoni
4 ounces Canadian bacon
1 egg, beaten

Steps:

  • For the dough: Sprinkle the yeast over 3 cups warm (not lukewarm) water. Let stand for a few minutes.
  • In a mixer, combine the flour and salt. With the mixer running on low speed (with a paddle attachment), drizzle in the olive oil until combined with the flour. Next, pour in the yeast/water mixture and mix until just combined and the dough comes together. (The dough will be sticky.) Form the dough into a ball.
  • Coat a separate mixing bowl with a light drizzle of olive oil and toss the dough in the olive oil to coat. Cover the bowl tightly with plastic wrap and set it aside for 1 hour to rise. Then put it in the fridge to chill for 2 hours or longer. (The dough is much easier to work with when very cold.)
  • For the mushroom version: Add the olive oil to a pan with the heat on medium and saute the garlic and onions for about a minute. Add the mushrooms and thyme and saute for 3 minutes. Add the white wine and reduce for a couple of minutes until most of the liquid is gone. Season with salt and pepper. Let cool to room temperature.
  • For the meat version: Crumble the Italian sausage into a skillet with some olive oil and brown until cooked through, 5 minutes. Let cool.
  • When you are ready to make the pizza pockets, take half the dough and roll it out into a large rectangle. Cut into 18 rectangles with a rectangular cutter. Put 9 of the rectangles onto a baking sheet and top them with the fillings for the meat version: some marinara sauce, mozzarella, sausage, pepperoni and Canadian bacon. Lay the other 9 rectangles on top and crimp the edges with a fork. Brush with the beaten egg. Put into the freezer to flash-freeze for 30 minutes.
  • Repeat with the other half of the dough and the fillings for the mushroom version: some mozzarella, goat cheese and the sauteed mushrooms.
  • When the pockets have been flash-frozen, transfer to ziptop bags and store in the freezer.
  • When ready to cook, place on a baking sheet and bake at 450 degrees F for 10 to 12 minutes.

Nonstick cooking spray, for the baking sheet
One 13.8-ounce tube pizza dough
1 1/4 cups store-bought pizza sauce
8 slices mozzarella, cut into 4 pieces each
1 teaspoon crushed red pepper flakes
32 small slices pepperoni
One 12-ounce package mini hot dogs
1 large egg
1 tablespoon grated Parmesan
1 teaspoon Italian seasoning

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a baking sheet with a silicone baking mat or parchment paper sprayed with cooking spray.
  • Open up the pizza dough and pat out into an even 14-by-10-inch rectangle, with the longest side at the top. Cut into 32 rectangles by cutting 8 vertical strips, then cutting each strip 4 times horizontally.
  • Place a teaspoon of pizza sauce into the center of each rectangle, then top with a piece of mozzarella. Sprinkle on a few crushed red pepper flakes and top each with a slice of pepperoni. Place a hot dog across the shorter side (so it sticks out). Roll up each rectangle, pressing the seam to secure. Place seam-side down on the prepared baking sheet. Repeat with the remaining dough and fillings.
  • Beat the egg in a small bowl with 1 tablespoon water and brush over the top of the dough.
  • Mix together the Parmesan and Italian seasoning and sprinkle over the prepared pigs in blankets.
  • Bake until golden brown, about 15 minutes. Serve with the remaining pizza sauce.

2 sheets frozen puff pastry (from a 17.3-ounce package, such as Pepperidge farm), thawed
1 tablespoon butter
8 ounces mushrooms, sliced
2 cloves garlic, minced
1/4 cup white wine
Kosher salt and freshly ground black pepper
Olive oil, for brushing
1 cup shredded fresh mozzarella
8 yellow and/or red grape tomatoes, halved
2 tablespoons black olives
8 slices pepperoni
2 tablespoons sliced drained pepperoncini
1/4 cup crumbled goat cheese (chevre)
6 leaves fresh basil, cut into chiffonade
1 teaspoon fresh oregano
4 slices prosciutto
1/4 cup arugula
1/4 cup shaved Parmesan

Steps:

  • For the crust: Slice the 2 pastry sheets in half down the middle. Place the halves on 2 baking sheets lined with parchment or baking mats.
  • Preheat the oven to 415 degrees F, then start on the pizza toppings.
  • For the toppings: In a large skillet over medium-high heat, melt the butter and saute the mushrooms and garlic for 2 minutes. Pour in the wine and season with salt and pepper. Continue cooking until the mushrooms are cooked down and the liquid is mostly gone, 5 to 7 minutes. Remove from the heat and set aside.
  • To build the pizzas: brush a thin layer of olive oil in the center of each puff pastry half, leaving a 1/2-inch border. On each piece of pastry, sprinkle on 1/4 cup of the mozzarella, again so that it covers all but a 1/2-inch border around the pastry. Sprinkle the cooked mushrooms on one piece of pastry. On the second, sprinkle on the halved tomatoes and black olives. On the third, lay the pepperoni slices and sliced pepperoncini. Press the toppings lightly into the cheese. Leave the fourth piece of pastry plain (just cheese).
  • Bake for 15 minutes; the pastry could go crazy and puff up in areas here and there, but don't worry! It'll be fine.
  • Remove from the oven and sprinkle the goat cheese crumbles and half the basil over the mushroom pizza. Sprinkle the remaining basil over the tomato pizza. Top the pepperoni pizza with the fresh oregano. Top the plain pizza with the prosciutto, arugula and Parmesan shards
  • Slice each into smaller pieces and serve!

320g sheet ready-rolled light puff pastry
6 tbsp tomato purée
1 tbsp tomato ketchup
1 tsp dried oregano
75g mozzarella or cheddar
sweetcorn , olives, peppers, red onion, cherry tomatoes, spinach, basil

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unroll the pastry, cut into six squares and arrange over two baking trays lined with baking parchment. Use a cutlery knife to score a 1cm border around the edge of each pastry square. Bake for 15 mins, until puffed up but not cooked through.
  • While the pastry cooks, make the sauce and prepare your toppings. Mix the tomato purée, tomato ketchup, oregano and 1 tbsp water. Grate the cheese and chop any veg or herbs you want to put on top into small pieces. Set aside.
  • Remove the pastry from the oven and squash down the middles with the back of a spoon. Divide the sauce between the pastry squares and spread it out to the puffed-up edges. Sprinkle with the cheese, then add your toppings. Bake for another 5-8 mins and serve.
