1 tablespoon olive oil
½ cup sofrito
2 cloves garlic, chopped
1 (1.41 ounce) package sazon seasoning with achiote
½ tablespoon adobo seasoning
2 cups medium-grain white rice
2 cups chicken broth
1 ½ cups water
1 (15 ounce) can gandules (pigeon peas), drained and rinsed
2 tablespoons chopped fresh cilantro

Steps:

  • Heat olive oil over medium heat in a medium-sized caldero or nonstick pan. Stir in sofrito, garlic, sazon, and adobo; cook for 4 minutes, making sure not to burn garlic. Stir in rice until coated well; pour in chicken broth and water and stir once more.
  • Bring mixture to a boil and cook over medium-high heat until all liquid has been absorbed and rice looks like it has little holes throughout, 20 to 25 minutes. Reduce heat to low. Stir in peas and cilantro gently from bottom to top, once or twice only. Cover and let sit for 10 minutes.
  • Turn off heat and let rice sit, uncovered, for 10 minutes more.

Our take on Puerto Rican-style arroz con pollo starts with the aromatic blend of onion, garlic, cilantro, and Cubanelle peppers known as recaito.

2 Cubanelle peppers, ribs and seeds removed, cut into 1-inch pieces
1 large white onion, cut into 1-inch pieces
4 cloves garlic, smashed and peeled
3 cups packed cilantro sprigs, plus more for serving (from 1 large bunch)
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 tablespoon coriander seeds, crushed
1 1/2 teaspoons chili powder
1 whole chicken (3 1/2 pounds), cut into 8 pieces
1 3/4 cups medium-grain white rice
1 1/4 cups low-sodium chicken broth
1 bay leaf, preferably fresh
1 can (15 ounces) pigeon peas, rinsed and drained
2 tablespoons capers, rinsed and drained
2/3 cup pimiento-stuffed olives

Steps:

  • Preheat oven to 350 degrees. In the bowl of a food processor, combine peppers, onion, garlic, cilantro, and 1 tablespoon oil. Season with 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Puree until smooth.
  • In a small bowl, combine coriander, chili powder, 1 1/4 teaspoons salt, and 1/4 teaspoon pepper. Pat chicken dry and season all over with spice mixture. Heat remaining 2 tablespoons oil in a large, straight-sided ovenproof skillet or braiser pan over medium-high. Add chicken in a single layer, skin-sides down, and cook, flipping once, until browned on both sides, 8 to 10 minutes. Transfer to a plate. Add rice to skillet; cook, stirring occasionally, until nutty-smelling and opaque, 3 to 4 minutes. Stir in cilantro mixture and cook until mostly absorbed, 2 to 3 minutes. Stir in broth, 1 cup water, bay leaf, and peas. Return chicken and any accumulated juices to skillet in a single layer, skin-sides up. Bring to a boil. Scatter capers and olives over top, then cover and transfer to oven. Cook until a thermometer inserted into thickest part of chicken (near but not touching bones) reads 165 degrees, 30 to 35 minutes. Serve, garnished with more cilantro.

Puerto Rican Chicken and Rice is a Latin classic and packed with flavor, not heat. Browned chicken simmers in rice, flavorful sofrito, olives and capers. **Note that this recipe as stated makes enough for 10 people (make in roasting pan) or cut in half for 5 people (make in skillet). Instructions for both included (See Notes).

2 tbsp oil
3-4 lbs chicken legs, thighs and or bone in breasts
2 tbsp Adobo seasoning
Freshly ground pepper
12 oz Puerto Rican Sofrito ((See Note 1))
1 tsp Sazon seasoning
1/2 tsp ground cumin
8 oz tomato sauce
3 cups (long grain) white rice
4 1/2 cups chicken stock
15.5 oz can Pigeon Peas, rinsed and drained ((See Note 2))
1 cup green olives (drained)
3 tbsp capers (drained)

Steps:

  • If making 10 person serving preheat oven to 350°F. If making stove top (for 5 person serving), disregard oven instructions.
  • Rinse the chicken pieces under cold water and pat dry with paper towels. Rub both sides with generous amount of the Adobo seasoning. Rinse the rice under cold water and drain. Set aside.
  • Over medium high heat add the oil to a roasting pan, skillet or Dutch oven and quickly brown chicken pieces for about 3 minutes each side. Remove from the pan, season with pepper and set aside.
  • Add the sofrito, Sazon and cumin to the pan for a quick sauté, scraping up the bits from browning the chicken and then add all other ingredients and bring to a boil. Cook for a minute, stirring to blend all.
  • At this point top with chicken pieces, gently pressing down into rice mixture. Turn heat to low, cover with foil, then simmer for 20 minutes. (See Note 3)
  • Remove foil then simmer for a further 15 minutes.
  • When done, let stand for 5 minutes. Remove chicken and fluff up rice and then place chicken back on top. Serve from pan and top with chopped parsley (optional).

I've been working on an Arroz Con Pollo based on Throwdown with Bobby Flay. This is my rendition of the Al Fonda Boriqua version, who was the winner of the Throwdown. I jotted down all the info from the TV program. I have compiled techniques and recipes from authentic sources and this is what I have come up with. The prep time does not include the 24 hour chicken marination time. NOTES: Ingredients list includes links to Adobo Seasoning, Adobo Marinade, Sofrito and Olive and Pepper Mix. I hope that you enjoy my efforts as much as we have!

4 chicken drumsticks
4 chicken thighs
3 ounces spanish chorizo, skinned and cut into 1/4-inch-thick slices
1 tablespoon olive oil
2 teaspoons ground cumin
1 teaspoon dried oregano
1 1/2 teaspoons paprika
2 bay leaves
1 lb tomatoes, seeded and chopped
1 (12 ounce) bottle beer (not dark)
1 1/2 cups reduced-sodium chicken broth
2 cups long-grain white rice (14 oz.)
1 tablespoon adobo seasoning (Dry Adobo Spice Mix)
1/2 cup adobo marinade (Puerto Rican Adobo Marinade)
3/4 cup sofrito sauce (Puerto Rican Sofrito)
2 limes, cut into wedges

Steps:

  • Make Recipes: #315560, #315446, #315561, #315559. It should take less than 30 minutes to make all of these condiment/spice recipes.
  • Remove skin and excess fat from chicken. Marinate chicken in adobo marinade, Recipe #315561, for 8-24 hours in the refrigerator.
  • Remove chicken from marinade, draining off any excess. Sprinkle chicken with Adobo Seasoning, Recipe #315446. In a large dutch oven or heavy pot, add oil, chorizo and chicken. Over medium heat, cook until chicken is just browned on both sides, approximately 5 minutes. Add the Sofrito mixture, Recipe #315559, stirring until softened, about 5 minutes.
  • Add cumin, oregano, paprika, 1 1/4 teaspoons salt, bay leaves and 4 tablespoons Olive and Pepper Mix, Recipe #315560. While stirring, cook for 2 minutes.
  • Stir in tomatoes, beer, broth, and rice; bring to a boil making sure rice is submerged.
  • Reduce heat to low, covering mixture with a tight fitting lid. DO NOT REMOVE THE LID! Continue to cook over low heat for 20 minutes.
  • DO NOT REMOVE THE LID! Turn off the heat and let stand for 10 minutes. Remove the lid after 10 minutes and serve. If desired, garnish with additional Olive and Pepper Mix, Recipe #315560, over rice.

1 whole chicken, cut up & skin removed
1 onion, cut into large chunks
2 large potatoes, peeled & cut into large chunks
3 carrots, cut into large chunks
2 garlic cloves, crushed
2 (8 ounce) cans tomato sauce
1/4 cup chopped cilantro

goya sazon goya, 2 packets or 1/2-1 teaspoon cumin

Steps:

  • Season Chicken with garlic salt, salt & pepper. Put a small amount of oil in a large pot, brown chicken on medium high heat, but don't cook all the way through.
  • Add the garlic and onion and cook for a few minutes. Add the potatoes, carrots, tomato sauce, cilantro, and sazon or cumin.
  • There should be enough liquid to cover most of the food, if it looks like it needs a little more liquid add either another can of tomato sauce or some water.
  • Reduce heat to low and cook until the chicken and veggies are done, I usually cook it for at least an hour, the longer the better though, because as the potatoes break down they thicken the sauce.
  • Serve with hot white rice, beans and slices of avocado. Yummy.

2 tablespoons of oil
6 drumsticks (mix and match with thighs, wings if desired)
1 teaspoon of salt
1 teaspoon of black pepper
1 teaspoon of garlic powder
1 tablespoon of dried oregano
1/3 cup of homemade sofrito
2 garlic cloves (minced (optional))
1/4 cup of cilantro (chopped (optional))
4 oz of tomato sauce
1-2 packets of Goya Sazon packet
2 bay leaves
1/2 tablespoon of dried oregano
1 teaspoon of adobo (optional)
salt and pepper to taste
2 cups of long grain rice
2 1/2 cups of chicken broth (or water with 2 teaspoons of chicken bullion)

Steps:

  • In a large bowl, season your chicken with salt, pepper, garlic powder and oregano. Let sit for ten minutes.
  • Into a large heavy bottom caldero or dutch oven pan, heat your oil over medium high heat. Then add in your chicken. Brown both sides of chicken, about 3-4 minutes per side. Next, add in everything except for the rice and broth. Mix it all together, and allow to cook for about three minutes.
  • After three minutes, stir in the rice, allow the rice to absorb all of the sauce for about 1-2 minutes before adding in the broth. Stir rice and broth together, allow it to come to a light boil, for about 5-7 minutes.
  • Once you're able to see the grains of rice just at the surface, you will lower your heat to medium low, COVER your pot, and let it cook for 20-30 minutes.
  • After 20 minutes, check on your rice, if there is still any liquid or your rice isn't as soft as desired, let it cook an additional 5-10 minutes. Once liquid is absorbed and rice is soft, remove from heat, let it sit for 5 minutes before giving it a GENTLE fluff with a fork, then serve immediately.

2 1/2 lb chicken thighs (about 6-8 pieces)
2 tbsp canola oil ()
2 tbsp homemade sazon
1 1/2 c jasmine rice (uncooked)
3 c water
1 1/4 c homemade sofrito
1 tsp turmeric
1/2 tsp kosher salt (or to taste)

Steps:

  • Set the oven temp to 400 degrees. Begin heating canola oil in a large cast-iron skillet and seasoning your chicken with saźon. Pan sear skin side down for 4-6 minutes to crisp the skin. Turn and allow the chicken to cook another 3-5 minutes to sear the bottom. Remove and rest the partially cooked chicken in a shallow dish.
  • Turn off the heat and add to the pan, the rice, turmeric, salt, and sofrito. Stir well, scraping the flavors from the chicken.

1 red bell pepper
1 green bell pepper
1 bunch cilantro
1/2 medium onion
4 cups chicken stock
6 chicken thighs
1/2 teaspoon adobo seasoning

  • Dice the peppers and onions into 1/8" by 1/8" pieces, or a little larger if you wish.
  • Coarsely chop the cilantro.
  • Set aside.
  • The Adobo seasoning this recipe mentions is not the one RecipeZaar thinks it is. It is the one you will find in the Mexican food area with the tacos and other Mexiocan inspired foods. For all reference of it in this recipe, season to taste as it is salty.
  • Season the chicken with Adobo seasoning and oregano.
  • Brown the chicken in the pan you will cook the dish in (large pot, tall enough to hold everything together when finished cooking).
  • Remove the chicken and add in your sofrito (the diced peppers, onions, and cilantro), some adobo seasoning to taste, and sautee until the onions become slightly translucent.
  • Stir the rice into the mixture.
  • Add the chicken stock.
  • Add the browned chicken.

  • Once boiling, reduce heat to a simmer, put lid on the pan, and cook for 40 minutes. High altitude may need to add an additional 5 - 8 minutes cooking time.

1 green pepper, seeded and diced
1 1/2 pounds ripe tomatoes, peeled and chopped, with juice
1 Spanish sausage (chorizo), chopped, or 1/2 cup chopped ham (optional)
1 bay leaf
1 quart water
1 teaspoon oregano
1/4 teaspoon ground cumin
1 teaspoon salt, or to taste
Black pepper to taste
1 cup short-grain rice

2 pounds bone-in chicken thighs or legs (if using breasts, cut in half)
1 teaspoon Adobo all purpose seasoning (Recommended brand: Goya)
2 tablespoons olive oil
4 tablespoons sofrito (homemade or storebought)
2 packets Sazon seasoning with annatto (Recommended brand: Goya)
1 tablespoon powdered chicken bouillon (or more according to your taste)
2 tbsp tomato paste
1 teaspoon dried oregano
3 cups water
3/4 cup diced potatoes
3/4 cup baby carrots
2 bay leaves
10-12 pimento-stuffed olives
2 tbsp fresh cilantro, for garnish (optional)

Steps:

  • Heat a Dutch oven on medium heat.
  • Season the chicken with the Adobo seasoning, then add the olive oil and chicken to the pot. Let the pieces brown for 4-5 minutes on each side.
  • Remove the chicken from the pot and set it aside.
  • Add the sofrito, Sazon, tomato paste, powdered chicken bouillon, oregano, water, potatoes, carrots, bay leaves and olives into the pot. Bring the mixture to a boil, then add the chicken back into the pot.
  • Lower the heat to a simmer and cook the pollo guisado for 40-50 minutes with the lid on* or until the chicken is cooked through.If your stew is too watery. cook with the lid off to reduce the liquid to your desired level.
  • Check for seasoning and add a bit more chicken bouillon if the pollo guisado needs a bit more salt.
  • Sprinkle the finished stew with the chopped cilantro, if using, and stir.
  • Serve with white rice, mashed potatoes or some crusty bread for dipping!

  • Add salt and pepper to taste and set aside.
  • Heat oil in a large, nonstick skillet over medium-high heat.

1 tablespoon vegetable oil
5 chicken drumsticks
1 small onion, chopped
½ cup pitted green olives
2 tablespoons capers
1 (8 ounce) can tomato sauce
3 tablespoons shortening
2 tablespoons achiote seed
4 cups boiling water
2 cups short-grain rice, rinsed

Steps:

  • In a large saucepan saute chicken, onions, olives and capers over medium heat. Pour in a little juice from the olives to add more olive flavor. As the onion begins to turn clear and the chicken begins to brown, add tomato sauce. Saute mixture until everything is lightly cooked. Reduce heat to low.
  • In a small saucepan melt shortening over medium heat; add achiote seeds. When the shortening turns red, remove it from the heat and strain out the seeds. Mix oil into chicken/tomato mixture. Add the boiling water to the mixture; increase the heat to medium high and bring to a boil, stirring well.
  • Add the rice to the boiling mixture and continue to boil for about 3 minutes. Reduce heat to low and continue cooking for about 30 minutes, or until rice is tender and has absorbed the liquid, stirring occasionally. Add more water if necessary (see Cook's Note). Remove from heat and let stand, covered, for 10 minutes.
  • Transfer mixture to a large bowl and serve immediately.
