PSAROSOUPA (GREEK SEAFOOD SOUP)



Psarosoupa (Greek Seafood Soup) image

My take on this classic Greek seafood soup. Typically made with a lighter, flakier fish, I went with the heartier swordfish, as well as a few other minor additions. Serve with rustic bread.

6 cups seafood stock
2 pounds swordfish steaks
4 tablespoons olive oil, divided, or as needed
½ large white onion, diced
3 medium carrots, sliced
3 stalks celery, sliced
4 cloves garlic, minced
1 (2 ounce) can anchovies, minced
4 tablespoons lemon juice
1 tablespoon fresh lemon zest
2 tablespoons chopped fresh parsley
½ tablespoon salt
2 teaspoons fresh celery leaves, chopped
1 teaspoon ground black pepper
1 teaspoon chopped fresh thyme
1 bay leaf
2 medium russet potatoes, peeled and cubed
½ cup uncooked white rice
salt and ground black pepper to taste

Steps:

  • Pour stock into a large stockpot and bring to a boil. Boil swordfish until cooked through and easily flaked with a fork, 5 to 6 minutes. Remove fish from stock, reserving all liquid. Coarsely chop/tear fish.
  • Heat 2 tablespoons olive oil in a separate pot and heat to medium. Add onion, carrots, and celery. Saute for 5 minutes, then add garlic. Saute for 1 minute more. Pour in reserved stock. Add in anchovies, lemon juice and zest, parsley, 1/2 tablespoon salt, celery leaves, 1 teaspoon pepper, thyme, and bay leaf. Increase heat and bring to a boil, then reduce to medium-low. Let simmer for flavors to marry, about 20 minutes.
  • Stir in potatoes and rice; let simmer until rice and potatoes are tender, about 20 minutes more, adding swordfish in during the last 5 minutes of cooking time. Season with more salt and pepper to taste.
  • Ladle soup into bowls and drizzle remaining olive oil over it.

  • Make the soup: Transfer the water, the potatoes, the carrot, the tomato, the onion, the parsley, the bay leaves, the salt and pepper, and the cloves to a large pot, cover and bring to a boil. Once the water starts to boil cook for 15 minutes.Add the fish and continue cooking for another 15-20 minutes or until the fish is cooked through. Using a slotted spoon, remove the fish and the vegetables. Transfer it to a serving plate but keep aside 4-5 pieces of potatoes, half the carots, the tomato, the onion and the parsley. Cover the serving plate with foil and keep it warm inside a warm oven.
  • Puree the vegetables and add the rice: Transfer the soup to another pot, passing it through a strainer just to catch any fish bones or clove pieces. Discard the bay leaves, the cloves and the skin from the tomato. Add the the vegetables you kept aside to the pot and puree using an immersion blender (you can also transfer the vegetables and some of the liquid in a normal blender and blend until smooth). If you want it thicker, add a few more potato pieces and blend some more. Return the soup to the stove, add the rice, bring to a gentle simmer and cook for 20 minutes or until the rice is done. Turn off the stove.
  • Make the avgolemono: Transfer the egg, the lemon juice and the olive oil to a large bowl and beat with a fork to combine. Add 3 cups of the soup to the lemon-egg mixture gradually, half a cup at a time, beating constantly with a fork to prevent the egg from curdling. Return the mixture to the pot with the rest of the fish soup and stir well. Taste and adjust the salt, the pepper and the lemon juice to your liking.

  • Place the carrots, celery, leek, onions, potatoes, peppercorns and parsley stalks along with the water in a large pot over medium-high heat. Season with salt and allow the mixture to come to boil and then simmer it on a low heat for approx. 20mins until the carrots and potatoes are just tender.
  • Pour the stock in a new pot and strain the veggies using a fine sieve and place them on a plate discarding the peppercorns and parsley stalks.
  • Place half the veggies back into the stock and mash roughly with a fork. Add the olive oil and fish fillets and allow the soup to come to a boil.
  • Simmer for 20-30 mins depending on how thick your fish fillets are and add the lemon juice. Stir and remove from the heat.
