SPICED PLUM CHUTNEY



Spiced plum chutney image

Make-ahead this rich plum chutney for special occasions or simply enjoy al fresco with your favourite cold cuts. Flavour with spices such as cumin, paprika and ginger.

Number Of Ingredients 10

1kg plum, halved, stoned and finely chopped
3 onions, finely chopped
100g dried cranberries or raisins, roughly chopped with an oiled knife
1 tbsp finely grated ginger
1 tbsp black mustard seed
1 tbsp ground cumin
1 tbsp paprika
1 tsp chilli flakes
400ml red wine vinegar
500g light muscovado sugar

Steps:

  • Put all the ingredients, except the sugar, into a large pan and stir well. Bring slowly to the boil, then reduce the heat, cover and simmer for 10 mins, until the plums are tender.
  • Stir in the sugar plus 2 tsp salt and keep stirring until it has dissolved. Boil the chutney for 20-30 mins, uncovered, stirring occasionally to prevent it catching on the bottom, until it is thick and pulpy.
  • Pot into sterilised jars (see Know-how, below), seal, label and store for at least 2 weeks before eating. Will keep for up to 6 months in a cool dark place.

2 allspice berries
1/2 teaspoon grated ginger
1/2 teaspoon kosher salt
3/4 teaspoon ground mustard
1/2 teaspoon ground cinnamon
1/4 teaspoon coarsely ground black pepper
1 medium onion, minced
7 tablespoons sugar
10 tablespoons brown sugar
2 pounds red plums, pitted
1/4 cup water
3/4 cup cider vinegar

Steps:

  • Place cloves and allspice berries on cheesecloth and tie into a packet. In a deep, heavy, nonreactive pot, combine the spice packet and all remaining ingredients. Bring to a boil, then reduce heat and simmer, stirring occasionally until a thick, pulpy sauce is formed, about 50 to 60 minutes.
  • Pass mixture through a sieve into a bowl, pressing with the back of a spoon to extract pulp. Let cool, then transfer to jars and refrigerate. The ketchup will keep 3 weeks in a refrigerator, 6 months in a freezer.

4 pounds prune plums
12 to 15 sprigs fresh mint, washed and tied with kitchen string
3 cups fruit preserves (a mixture of plum, raspberry and blueberry jam and currant jelly)
3 cups (1 bottle) dry red wine (a cabernet or merlot)
3 pounds ripe but firm peaches

Steps:

  • Halve the prune plums and discard the pits. Place the plums in a large stainless-steel saucepan with the mint, jam and wine.
  • Peel the peaches with a sharp paring knife or vegetable peeler and cut each of them into six wedges, discarding the pits.
  • Bring the plum mixture to a boil, stirring occasionally, and boil gently, covered, for 2 minutes. Add the peach wedges and bring the mixture back to a boil. Immediately remove the saucepan from the heat and let the mixture cool in the pan. When at room temperature, transfer to a bowl, cover with plastic wrap and refrigerate for at least 4 to 5 hours but for up to 5 to 6 days.
  • At serving time, remove and discard the mint.

1 tablespoon lemon juice
1 1/4 cups granulated sugar
2 tablespoons cornstarch
1 cup flour
1/2 cup old fashioned oats
1/2 teaspoon salt
1/2 cup unsalted butter

Steps:

  • Preheat oven to 350 degree Fahrenheit.
  • Pit and quarter the plums.
  • Sprinkle 1 tablespoon lemon juice over plums.
  • Mix 3/4 cup sugar, cornstarch, and combine with the plums.
  • Place in a 9 x 9 inch square cake pan.
  • Combine flour, oats, 1/2 cup sugar, and salt.
  • Cut butter into mixture until crumbly.
