Layered with butter, cream, three cheeses and garlic before being baked until golden and bubbling, potatoes au gratin is the perfect side dish.

1 tbsp butter
8 large potatoes (peeled and thinly sliced)
100 g (3.5oz) Gruyere (grated)
100 g (3.5oz) Raclette (grated )
50 g (1.5.oz) Parmesan (finely grated )
2 tbsp thyme leaves
salt and pepper (to taste)
½ cup milk
1 tbsp cornflour / cornstarch
2 cups heavy / whipping cream
1 tsp salt
½ tsp pepper
5 garlic cloves (thinly sliced)

Steps:

  • Preheat the oven to 180°C/350°F.
  • Butter a large casserole dish then add a layer of sliced potatoes.
  • Combine all the cheeses then reserve ? for the topping.
  • Season the potatoes with salt, pepper and thyme. Add a few tablespoons of cheese. Repeat until all the potatoes and cheese have been used.
  • Combine the milk, cornflour/cornstarch, cream, salt and pepper and whisk until smooth.
  • Pour the cream mixture over the potatoes. Press down to allow the cream to cover the potatoes.
  • Cover the dish with foil then place in the oven.
  • Allow to bake for 45 minutes until a knife can easily be inserted. Remove the foil, top with the remaining cheese and place back in the oven.
  • Allow to bake for another 15 minutes until the cheese has melted and the top is golden brown.
  • Remove from the oven, allow to cool for 5 minutes then serve.

600g smoked haddock
350ml whole milk
1 onion, peeled and cut into quarters
6 black peppercorns
650g Charlotte potatoes, peeled and sliced into thick rounds
500g baby spinach, washed
50g butter, plus extra for the baking dish
3 tbsp plain flour
100g emmental, grated
100g mature cheddar, grated

Steps:

  • Put the haddock, milk, onion and peppercorns in a deep, lidded frying pan. Bring the milk to a simmer then put on the lid and turn off the heat. Leave for 10 minutes, then take out the haddock and flake into large chunks, discarding any skin and bones. Strain the milk into a jug.
  • Drop the potato slices into boiling water and cook for 7-10 minutes or until tender. Drain well.
  • Wilt the spinach in a large pan over a medium heat with a splash of water. Tip into a colander and cool, then use your hands to squeeze out as much liquid as possible. Tip onto doubled-up kitchen paper and pat as much water out as you can. This is important to prevent a puddle forming at the bottom of the dish. Chop the spinach then toss with lots of seasoning.
  • Heat the butter in a pan and, when foaming, stir in the flour. Stir for 3-4 minutes or until the mix has a nutty aroma. Gradually whisk in the strained milk a little at a time until you have a sauce. Simmer for 3-4 minutes then tip in the cheeses and stir until melted.
  • Heat the oven to 220C/fan 200C/gas 7. Butter a large ceramic baking dish and put the spinach in the bottom. Top with the haddock chunks and potatoes, then spoon over the sauce. Bake for 15-20 minutes or until the sauce is bubbling and the top golden. Serve with salad, if you like.

2 1/2 pounds (1.2 kilograms) waxy potatoes
1 ounce (25 grams) unsalted butter
9 ounces (255 grams) Reblochon cheese, or other strong cheese
6 ounces (175 grams) smoked bacon pieces, or lardons
2 1/2 cups (600 milliliters) heavy cream , or double cream
Sea salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 300 F / 150 C / Gas 2 and grease a 10 x 12-inch (25 x 30-centimeter shallow baking dish with a little of the butter.
  • Peel and slice the potatoes into thick slices, approximately 1/8-inch (3-millimeters) thick. Place the potatoes in a colander and rinse thoroughly under cold, running water. Dry with kitchen paper and season well with salt and pepper (potatoes soak up a lot of salt while cooking, so be generous). Keep to one side.
  • Cut the cheese into small cubes.
  • Heat a large frying pan to hot but not burning. Dry fry (fry without any fat) for about 5 minutes until the bacon lardons are crisp and golden. Drain on kitchen paper. Place half the potatoes neatly into the dish, sprinkle over the bacon, then top with half the cheese followed by the remaining potatoes.
  • Pour in enough cream to just cover the potatoes-don't worry if you don't use it all. Dot the surface with the remaining butter.
  • Bake in the preheated oven until the potatoes are tender when pricked with a knife, about 1 1/4 hours.
  • Remove the baking dish from the oven, dot the surface with the remaining cheese and return to the oven and cook until bubbling and golden, about 15 minutes. Remove from the oven and leave to stand for 15 minutes covered in foil before serving.

3 tablespoons flour
1/2 teaspoon dry mustard
1/4 teaspoon turmeric

2 cups 2% low-fat milk
2 cups medium cheddar, shredded
1 tablespoon onion, finely grated
6 cups red potatoes or 6 cups gold potatoes, sliced

Steps:

  • Melt butter in a 2-quart saucepan.
  • Add flour and seasonings, stir or whisk until smooth. Whisk in milk and continue to cook on medium-low heat, stirring constantly for 5 minutes.
  • Turn off heat under saucepan. Add cheese and grated onion and stir until melted.
  • Wash and slice potatoes approximately 1/8 inch thick. Do not peel.
  • Place potato slices (and 1 cup sliced onion, if you choose) in a large 3-quart casserole. Note: if you use a smaller casserole, place it on a pizza pan or cookie sheet to catch any sauce that bubbles over.
  • Pour cheese sauce on top and fold into potato slices.

4 slices smoked bacon, chopped, or more to taste
6 medium russet potatoes, thinly sliced
1 medium sweet yellow onion, thinly sliced
1 pinch garlic powder to taste

½ cup grated Parmesan cheese
¼ teaspoon dried thyme
1 ½ cups grated Cheddar cheese

2 tablespoons butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 2-quart baking dish with cooking spray.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until almost crispy, 6 to 8 minutes. Drain bacon on paper towels.
  • Layer 1/3 the potatoes in the bottom of the prepared baking dish, leaving a few 'holes' so cream can seep between layers. Top with 1/2 the onion. Season with garlic powder, salt, and pepper. Top with 1/2 the blue cheese, 1/2 the Parmesan cheese, 1/2 the bacon, and 1/2 the thyme. Sprinkle with 1/3 the Cheddar cheese.
  • Repeat layering with remaining ingredients ending with remaining 1/3 Cheddar cheese.
  • Pour heavy cream slowly over the top, allowing to seep down to the bottom between layers. Dot the top with butter. Cover with aluminum foil.
  • Bake in the preheated oven until potatoes are fork-tender, 1 to 1 1/2 hours.
  • Remove aluminum foil covering. Return to the oven and continue to bake, uncovered, until browned on top, 10 to 15 minutes more. Remove from the oven and let cool 10 minutes before serving.

Potatoes Au Gratin is my family's go-to holiday side dish. It's so simple yet decadent and is loved by everyone! Enjoy it alongside your favorite holiday meats for a truly memorable meal!

2-1/2 pounds Yukon gold potatoes (peeled and sliced into 1/8-inch rounds)
2-1/2 cups Half and half (**See note below for equivalent. )
Kosher Salt
Black Pepper
2 Tablespoons butter (unsalted)
2 cloves garlic (minced )
3 shallots (thinly sliced (may use 1/2 cup thinly sliced yellow onion))
6 ounces Gruyere cheese (grated (or more - I tend to be very generous))
1 teaspoon fresh Rosemary (chopped)
1 teaspoon fresh Thyme (chopped)
1/2 teaspoon smoked paprika
1/2 cup fresh breadcrumbs (from rustic bread such as ciabatta)
2 Tablespoons unsalted butter (melted)
1/4 cup Parmigiano-Reggiano (finely grated )

Steps:

  • Position rack in center of over and and preheat to 400℉. Butter a 3 quart gratin dish or shallow baking dish; set aside.
  • Mix the 1/2 cup breadcrumbs with the 2 Tablespoons melted butter and the grated Parmesan cheese. Set aside.
  • Put the potatoes, cream, 1/2 teaspoon salt, and a few grinds of pepper i a 12-inch skillet. Simmer, partially covered over medium-low heat, stirring occasionally and gently with a heat proof rubber or silicone spatula until the potatoes are barely tender when pierced with fork or skewer. About 8-12 minutes.
  • In a medium skillet heat butter over medium-high heat and sauté garlic until tender, fragrant, and lightly browned. This would be the time when you also sauté the sliced shallots or onions. Season to taste with salt and pepper.
  • Using a slotted spoon, transfer half the potato mixture to the prepared gratin dish, spreading evenly. Layer on the minced garlic, Gruyere, chopped fresh rosemary, thyme, and smoked paprika.
  • Top with the remaining potato mixture spreading it evenly and pour over any creamy sauce that remains in the pan.
  • Evenly scatter the bread topping mixture over the potatoes.
  • Bake until bubbly and top is brown and the potatoes are tender. 25 to 30 minutes.
  • Let gratin stand at least 10 to 15 minutes before serving.

2 pounds russet potatoes
4 tablespoons melted butter
1/2 cup freshly grated Parmesan cheese
1-1/2 pounds vine ripened tomatoes, sliced
1/2 cup chopped fresh parsley
8 ounces grated mozzarella cheese
Salt and freshly ground black pepper

Steps:

  • Parboil potatoes for 15 minutes until barely tender. Drain, peel them and cut into thick slices. Preheat oven to 350 degrees.
  • With some of the melted butter, lightly grease bottom of shallow casserole. Arrange all of the potato slices overlapping in the bottom of a casserole and season well with salt and pepper; sprinkle with half of Parmesan.
  • Arrange tomatoes over potatoes and season them with salt and pepper and half of parsley. Scatter mozzarella over tomatoes. Mix parsley with melted butter and season with salt and pepper and scatter over mozzarella. Top with remaining Parmesan and bake for 25 minutes or until all ingredients are hot and cheese is melted.

1/4 cup flour
2 cups whole milk
1 bay leaf
1/2 teaspoon coarse Kosher salt

2 1/2 cups sharp cheddar cheese (, shredded and divided )
4-5 large Russet potatoes

Steps:

  • Preheat oven to 350°F. Coat a 3 quart casserole dish with cooking spray. Set aside.
  • In a small saucepan, melt the butter and then whisk with flour until it forms a paste. While whisking, pour in milk until smooth. Add the bay leaf, salt, pepper, onion and garlic powder. Bring to a low simmer.
  • Remove the saucepan from heat and whisk in 2 cups of the cheese. Whisk until cheese has melted and sauce thickens. Set aside.
  • Peel potatoes and evenly slice to 1/4 inch or less thick. Place in cold ice water to prevent browning (optional).
  • Remove the bay leaf from cheese sauce.
  • Place half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the top. Add remaining potatoes and top with the remaining cheese sauce. Cover tightly with aluminum foil.
  • Bake covered for 60 minutes.
  • Take the baking dish out of the oven and remove the aluminum foil. Top with the remaining 1/2 cup of shredded cheddar cheese and return to the oven uncovered. Bake for an additional 20 minutes or until potatoes are soft the whole way through.
  • Remove and allow to sit for 15 minutes before slicing and serving.
  • Optionally, top with additional salt and pepper, bacon, scallions or chives.

1 Tbsp. olive oil
15 small red potatoes, halved
15 bacon strips
2 cups (8 oz.) shredded smoked Gouda cheese
1 tsp. coarsely ground pepper

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with oil. Wrap each bulb in heavy-duty foil. Bake at 425°F for 30 to 35 minutes or until softened. Cool for 10 to 15 minutes. Meanwhile, place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 8 to 10 minutes or just until tender. Cut bacon strips in half widthwise. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm. Place a tablespoonful of cheese on the cut side of a potato half. Wrap with a half-strip of bacon and secure with a toothpick.
