2 tablespoons extra-virgin olive oil
2 pounds carrots, peeled and sliced diagonally into 1/2-inch pieces
1 head garlic, the cloves peeled and halved
Salt to taste
1/2 cup chopped black olives

Steps:

  • In a large skillet, heat the oil over moderately high heat. When the oil is hot, add the carrots, stir to coat with oil and reduce the heat to moderate. Cover and braise for 20 minutes, stirring regularly.
  • Add the garlic, season with salt, stir and continue cooking over low heat until the carrots are almost caramelized and the garlic is soft and tender, about 15 minutes more.
  • Sprinkle with the olives, stir and taste for seasoning. Serve hot or at room temperature.

Steps:

  • Cut chicken into pieces, cut each breast half into halves and remove skin.
  • Mix flour, paprika, basil, salt, oregano, pepper and marjoram.
  • Coat chicken with flour mixture.
  • Heat oil in 4-quart Dutch oven until hot.
  • Cook chicken until brown on all sides, about 15 minutes.
  • Add olives, carrots, onions and potatoes; pour chicken broth over vegetables.
  • Heat to boiling; reduce heat.
  • Cover and cook until chicken is done, about 45 minutes.
  • Remove chicken and vegetables; keep warm.
  • Mix cornstarch and cold water; stir into liquid in Dutch oven.
  • Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Serve sauce with chicken.

Steps:

  • Combine carrots, water, oil and half of garlic in heavy saucepan.
  • Cover and simmer over medium-low heat for 14 minutes or until carrots are tender-crisp.
  • Stir in parsley, basil, remaining garlic, salt & pepper.
  • Cover and cook 5 minutes or until carrots are tender.

1/2 cup water
1 teaspoon sugar

Steps:

  • Slice carrots in half diagonally.
  • Heat olive oil in a pan, add carrots and sprinkle with salt.
  • Cover pan and cook over a low heat for 10 minutes, stirring occasionally.
  • Add garlic, water, sugar and pepper.
  • Cover pan and continue cooking for 20 minutes, stirring occasionally.
  • Remove from heat and toss with parsley.

This is a traditional soup of Provence. Don't omit the pistou as this gives this dish a wonderful scent and color. Preparation time depends if using fresh or dried. If dried beans, soak overnight. An extra 30 min boiling time as stated in the procedure would be needed. Posted for ZWT5.

1 1/2 cups fresh broad beans, shelled or 3/4 cup dried haricot beans, soaked overnight
1/2 teaspoon dried herbes de provence
2 garlic cloves, finely chopped
1 tablespoon olive oil
1 onion, finely chopped
1 large leek, finely sliced (or 2 small)
1 celery rib, finely sliced
2 carrots, finely diced
2 small potatoes, finely diced
4 ounces French beans
5 cups water
1 cup shelled garden peas (fresh or frozen)
2 small courgettes, finely chopped
3 medium tomatoes, peeled, seeded and finely chopped
handful spinach leaves, cut into thin ribbbons
salt & freshly ground black pepper, as needed
1 sprig fresh basil, to garnish
1 -2 garlic clove, finely chopped
1/2 cup basil leaves, packed
4 tablespoons parmesan cheese, grated
4 tablespoons extra virgin olive oil

Steps:

  • To make the pistou: mix in the food processor the 1st 3 pistou ingredients until smooth, adding the extra virgin oil last.
  • To make the soup: if using dried haricot beans,place in a saucepan and cover with water. Bring to a hard boil for 10 mins and drain. Place the par-boiled beans, or fresh beans if using, in a saucepan with the herbes de Provence and one of the garlic cloves. Add water to cover by 2.5 cm./1in. Boil, reduce heat and simmer over a medium low heat until tender, about 20 minuters for fresh breans and about 1 hour for dried beans. Set aside in the cooking liquid.
  • In a large saucepan or flameproof casserole heat the oil. Add onion and leeks, cook for 5 minutes, stir occasionally, until onion softens.
  • Add celery, carrots and the other garlic clove and cook, covered for 10 minutes, stirring.
  • Add potatoes, French beans and water, then season lighlty with salt and pepper. Bring to a boil, skim any foam that rises to the surface, then reduce the heat, cover and simmer for 10 minutes.
  • Add courgettes, tomatoes and peas together with the reserved beans and their cooking liquid and simmer for 25-30mins, or until all the vegetables are tender. Add the spinach and simmer for 5 minutes. Season the soup and swirl a spoonful of pistou into each bowl. Garnish with basil and serve.

1 pound carrots, peeled, halved crosswise then lengthwise (and quartered lengthwise if thick)
2 large onions, quartered, layers separated
1 tablespoon olive oil
4 bone-in, skin-on chicken breast halves
1 tablespoon Dijon mustard
1 teaspoon dried Herbes de Provence or thyme
Coarse salt and ground pepper
1/2 cup pitted green olives
1/2 cup fresh parsley, chopped
2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 475 degrees, with rack in top position. On a rimmed baking sheet, toss carrots and onions with oil. Push vegetables to sides of sheet, and place chicken in center. Using your fingers, carefully loosen skin. In a small bowl, combine Dijon and Herbes de Provence. Spread mixture under skin. Season chicken and vegetables with salt and pepper.
  • Roast until an instant-read thermometer inserted in thickest part of chicken (avoiding bone) registers 165 degrees, 30 to 35 minutes, tossing vegetables once. Transfer chicken to a serving platter, and loosely tent with aluminum foil to keep warm.
  • Add olives to sheet with vegetables, and gently toss. Return to oven; roast until vegetables begin to brown and liquid has evaporated, about 10 minutes. Remove sheet from oven; add parsley and lemon juice, and toss. Serve chicken alongside vegetables.

2 teaspoons kosher salt, plus additional for seasoning
Freshly ground black pepper
3 tablespoons vegetable oil
1/3 cup all-purpose flour
2 cups chicken broth
1 (14 1/2-ounce) can whole peeled tomatoes, with their juice
1/4 cup cognac or brandy
1 tablespoon herbes de Provence
5 garlic cloves, peeled and smashed
4 medium carrots, peeled and cut into 2-inch pieces
1 fennel bulb, trimmed and thinly sliced
1 onion, halved and thinly sliced
1/3 cup prepared sun-dried tomato tapenade
1/3 cup coarsely chopped fresh flat-leaf parsley
1 packed teaspoon finely grated orange zest
Hot buttered egg noodles, for serving

Steps:

  • Heat a large, heavy-bottomed skillet over medium-high heat. Season the meat generously with salt and pepper, to taste. Add the oil to the skillet and heat just until beginning to smoke. Brown the meat all over and sear the roast, turning as each side turns a deep mahogany, about 10 minutes. While the meat browns, put the flour into a medium bowl and whisk with about 1 1/2 cups of the chicken broth until smooth.
  • Crush the tomatoes through your fingers into the slow cooker; stir in their juices, 3 tablespoons of the cognac, herbes de Provence, and the 2 teaspoons salt.
  • Transfer the browned meat to the slow cooker. Add the remaining 1/2 cup chicken broth to the skillet; let it bubble for a minute and then stir with a wooden spoon to scrape up the browned bits on the bottom of the pan. Pour over the meat, then scatter the garlic, carrots, fennel, and onion over and around the meat. Pour the flour mixture over. Cover the cooker, set it on HIGH, and cook for 4 hours. Set the cooker on LOW and cook until the meat is very tender, up to 2 hours more (for a total of 6 hours). Transfer the meat to a cutting board. Skim any excess fat off the top of the sauce in the cooker.
  • To finish the sauce: Stir the remaining 1 tablespoon cognac, the tomato tapenade, parsley, and orange zest into the vegetables and sauce in the slow cooker. Season with salt and pepper, to taste. Slice the meat and lay the slices down the center of a serving platter. Arrange the vegetables around the meat and spoon some sauce over the top. Serve with hot buttered egg noodles. Pass the remaining sauce.

8 ounces medium shrimp, peeled and deveined
1 teaspoon red wine vinegar
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat the olive oil in a large soup pot over medium heat. Add the onion and fennel and cook, stirring occasionally, until the vegetables are golden, about 5 minutes. Add the garlic, pepper, and saffron and cook another minute. Stir in the vermouth and simmer until reduced by about half. Lightly crush the tomatoes through your fingers into the pot; stir in their juices, add the water, orange zest, bay leaf, cover, and simmer until the flavors come together, about 20 minutes.
  • Adjust the heat so that the broth simmers briskly. Stir in the clams, cover the pot, and cook until they just begin to open, 6 to 8 minutes. (To keep the clams from overcooking, transfer any fully opened ones to a bowl.) Add the scallops and shrimp and cook, uncovered, until they are just cooked through and opaque, 2 to 3 minutes more. Stir in the vinegar, parsley, and return any of the cooked clams along with their juices. Season with salt, if needed. Divide stew and shellfish among 4 warm bowls. Serve.

1 lb tiny new potatoes
1 lb baby carrots
3 garlic cloves
6 ounces tomato paste
1 teaspoon fresh rosemary

1 teaspoon fresh thyme
2 cups dry red wine
3 1/2 cups beef stock

Steps:

  • Dust meat with flour.
  • Brown meat in olive oil on high heat.
  • Set aside meat and turn down to medium heat.
  • Add potatoes, carrots and garlic and cook gently for 15 minutes.
  • Add tomato paste and herbs and cook for another 5 minutes.
  • Add wine and beef stock and mix well.

1 boneless, skinless chicken breast, cubed (optional; see Notes)

1 large onion, chopped

1 red bell pepper, seeded and diced

1 cup chopped celery
4 ounces cremini mushrooms
1 zucchini, chopped
1/4 cup chopped fresh parsley
2 tablespoons herbes de Provence
1 bay leaf
1/2 cup white wine
6 cups chicken broth
1 (15-ounce) can cannellini beans, undrained
8 baby red potatoes, quartered
Prepared basil pesto, for serving (see Notes)

Steps:

  • In a large pot, heat the olive oil over medium heat. Add the chicken (if using) and lightly brown on all sides. Season with salt and black Add the onion, garlic, bell pepper, carrots, celery, mushrooms, and zucchini. Stir to combine. Add the parsley, herbes de Provence, and bay leaf. Cook, stirring, until the vegetables are tender, about 5 to 7 minutes. Season lightly with salt and black pepper.
  • Deglaze the pan with the wine by pouring the wine in and stirring while scraping up any browned bits from the bottom of the pan. Simmer until the wine has reduced by half, about 8 minutes.
  • Stir in the broth and add the cannellini beans and Simmer for about 15 minutes, until the potatoes are tender.
  • Remove from the heat and discard the bay leaf. Taste and adjust the seasoning.
  • Ladle the soup into large bowls. Serve with a heaping tablespoon of pesto on top. Stir the pesto into the soup as you eat.
