Easy to make and sure to impress - with a balance of sweet and salty, creamy and crispy - this appetizer is always a hit!

8 ounces fresh figs (about 9 figs)
¼ pound prosciutto (thinly sliced)
4 ounces gorgonzola cheese
2 tablespoons balsamic reduction or aged balsamic vinegar

Steps:

  • Preheat oven to 375°F. Gently clean figs, remove stem and slice each in half lengthwise.
  • Stack gorgonzola cheese pieces on each half fig.
  • Wrap fig and gorgonzola with thinly sliced prosciutto all the way around.
  • Arrange on a baking sheet and bake at 375F for 5 minutes, cheese should be soft and prosciutto has begun to crisp.
  • Drizzle with balsamic reduction.

16 dried Figs
1/2 cup of gorgonzola cheese
8 pieces thinly sliced prosciutto
4 sprigs rosemary
Pepper
1 cup balsamic vinegar

Steps:

  • Figs: 1. Preheat oven to 425 degrees fahrenheit 2. Half each piece of prosciutto lengthwise 3. Cut a lengthwise slit down each fig 4. Fill each fig with 1.5 teaspoons of gorgonzola cheese 5. Wrap each stuffed fig with one piece of prosciutto 6. Place figs on baking sheet and sprinkle with finely chopped rosemary and pepper 7. Bake for 10-12 minutes 8. While figs are in the oven, pour balsamic vinegar into a small saucepan and reduce to 1/3 cup 9. Remove figs from the oven, place on serving platter, drizzle with balsamic glaze and serve warm!

20 large fresh ripe figs
20 thin slices Italian prosciutto (about 8 ounces)

Steps:

  • Preheat the oven to 425 degrees F.
  • Snip the hard stems off the figs and cut the figs in half lengthwise through the stem. With a small sharp knife, cut the prosciutto lengthwise into inch-wide strips. Wrap a strip of prosciutto around the center of each fig half, with the ends overlapping. Brush with olive oil and arrange cut-side up on a sheet pan.
  • Roast the figs for 10 minutes, until the prosciutto is a little crisp and the figs are warmed through. Serve warm.

24 Black Mission figs, cut in half lengthwise
2 cups balsamic vinegar
2 pounds gorgonzola dolce
Crushed red pepper flakes
48 slices prosciutto
Extra-virgin olive oil

Steps:

  • Preheat the grill to medium-high.
  • Drizzle each fig half with vinegar and fill each fig center with 1 tablespoon of the cheese. Sprinkle a couple flakes of crushed red pepper on top of the cheese and wrap each fig with a slice of prosciutto. Paint the outside of each fig very lightly with olive oil.
  • Put the figs on the grill. The idea here is that we want to grill the figs gently to cook the fig all the way through but to still get the char on the outside. Grill the figs on all sides so the prosciutto is starting to become crispy and the fig feels soft when squeezed, 5 to 6 minutes.
  • Drizzle a couple of drops of balsamic on each and serve. It's figgy delicious!

1/2 cup blue cheese, cut into cubes
8 prosciutto (thinly sliced, cut in half lengthwise)
2 tablespoons extra-virgin olive oil
Sea salt and freshly ground black pepper

Steps:

  • Preheat grill. You will need medium to high heat for grilling. The key is to crisp the prosciutto quickly and leave the blue cheese just melted with the inner part of the fig cool in temperature.
  • Cut the figs in half and place a piece of blue cheese on each fig half. Wrap the prosciutto around each fig half, covering the cheese. The ends of the prosciutto should overlap.
  • Grill each piece until the prosciutto begins to color and crisp, about 2 minutes on each side. Remove from grill, lightly drizzle with extra virgin olive oil and season with sea salt and pepper. Serve warm.

Steps:

  • Heat oven to 200oC.

2 tablespoons honey
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
2 ounces very thin slices prosciutto, cut into 1/8-inch-wide strips
12 large dark-skinned fresh figs, halved (such as Black Mission, Celeste, or Brown Turkey, about 1 pound)
3/4 cup crumbled gorgonzola

Steps:

  • Combine first 4 ingredients in a small saucepan; bring to a boil.
  • Reduce heat, and simmer until reduced to 1/4 cup (about 8 minutes). Cool.
  • Heat a large nonstick skillet over medium-high heat.
  • Add prosciutto; sauté 3 minutes or until lightly browned.

Steps:

  • Halve the figs lengthways and put them, cut side down, without oil, in a hot griddle pan (or heavy-based frying pan) for 1 minute until charred. Sprinkle with balsamic vinegar and salt and black pepper to taste, and, while still warm, wrap each half in a little piece of prosciutto.
