½ cup creme fraiche (or sour cream)
1 tablespoon chopped fresh parsley
1 teaspoon lemon zest
Salt and cracked pepper to taste
12 whole grain crackers

Steps:

  • Whisk together the creme fraiche, Dietz & Watson Whole Grain Dijon Mustard, parsley (leaving some leftover for garnish), lemon zest, and salt and pepper.
  • Spread 1/2 tablespoon of mixture on each cracker.
  • Top with a small slice of Dietz & Watson Prosciutto.
  • Garnish with parsley and lemon zest.

Number Of Ingredients 10

1 pound tender cut beef, cut into roughly 2-inch cubes to make 12 pieces
Freshly ground black pepper
1/4 pound prosciutto
1 tablespoon olive oil
1 tablespoon butter
1 small shallot, diced
1/2 cup chicken stock
1 tablespoon coarse-grain mustard
2 tablespoons heavy cream
2 tablespoons freshly chopped parsley leaves

Steps:

  • Sprinkle beef on all sides with black pepper. Wrap beef cubes with enough prosciutto to cover entirely. Be sure that prosciutto doesn't overlap more than once. Place wrapped cubes seam side down on a plate. In a large skillet over medium heat, add oil and butter. When butter has melted add beef cubes, seam-side down to seal, then saute until crisp on all sides, about 8 to 10 minutes for medium rare. Remove beef and let rest 5 minutes before serving. Add shallots to pan and saute 1 minute to soften. Add chicken stock and scrape up brown bits stuck to the bottom of the pan with a wooden spoon. Whisk in mustard and heavy cream and cook 1 minute more to thicken sauce. Remove from heat. Season, to taste, with salt and pepper and garnish with parsley.

Here's what you need: frozen puff pastry, large egg yolk, Private Selection® Italian Shredded Cheese, Private Selection™ Old World Prosciutto, fresh basils

1 sheet frozen puff pastry, thawed
1 large egg yolk, beaten with a splash of water
9 tablespoons Private Selection® Italian Shredded Cheese
9 slices Private Selection™ Old World Prosciutto
7 fresh basils, torn

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roll out the puff pastry sheet if needed to a 9-inch square, then cut into 9 3-inch squares and transfer to the prepared baking sheet. Use a paring knife to lightly score a ½-inch border around the edges of each square, making sure not to cut all the way through. Use a pastry brush to brush the egg yolk and water mixture over the borders of each square.
  • Place about 1 tablespoon of Private Selection® Italian Shredded Cheese in the center of each pastry square.
  • Bake the squares for 15-17 minutes, until the pastry is puffed and golden brown. Remove from the oven and let cool slightly.
  • Gently fold the Private Selection™ Old World Prosciutto slices into loose coils and place atop the cheese on each square. Garnish the prosciutto bites with torn basil just before serving.
  • Enjoy!

The kids and I went on a sampling spree one time in Sam's Club. One gentleman was offering up these little bites of heaven. All three kids got up the nerve to try them. And all three kids wanted to go back for seconds! First time we had ever had prosciutto and we loved it. The gentleman was so impressed that all three of my kids enjoyed it, that he gave me the recipe so that I could make my own! Whether it is a fancy holiday party or a Superbowl party, these would go great!

12 slices prosciutto (thin slices)
1 medium pear, cut up into thin wedges
4 -6 ounces havarti cheese
black pepper
1 medium red pepper, cut into 24 thin sticks

Steps:

  • You want all the ingredients (other than the prosciutto and black pepper) to be around the same size.
  • I buy the slices of havarti from the deli and cut them into four long slices. Then cut those strips in half widthwise. I then put two pieces into a roll.
  • Cut the pear into quarters and core it. Then cut each quarter in four long thin slices. I end up with a few slices leftover but I consider those treats for the cook!
  • At one end of a slice of prosciutto, place a cheese slice, a pear wedge and a pepper stick.
  • Sprinkle with pepper.
  • Roll up slices and secure with toothpick if necessary. I find that the meay sticks to itself usually well enough to not need toothpicks.
  • After they are rolled up, you can cutthem in half if you would like a smaller bite.
  • Refrigerate prior to serving and keep cool during serving.
