SANTA FE CHICKEN-TORTELLINI CASSEROLE
A zesty cheese sauce coats tender pockets of tortellini, crisp-tender veggies and flavorful chicken.

Steps:
- Heat oven to 325°F. Spray 3-quart casserole with cooking spray. Cook and drain tortellini as directed on package.
- Meanwhile, in 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Cook broccoli, onion and bell pepper in oil about 3 minutes, stirring frequently, until crisp-tender. Remove broccoli mixture from skillet.
- In same skillet, cook flour and remaining 2 tablespoons oil over low heat, stirring constantly, until smooth. Stir in milk, broth and cumin. Heat to boiling over medium heat, stirring constantly; remove from heat. Stir in chicken, Monterey Jack cheese, tortellini and broccoli mixture. Spoon into casserole.
- Bake uncovered 25 to 35 minutes, sprinkling with Colby cheese and tortilla chips for last several minutes of baking, until hot in center and cheese is melted.

- Preheat over to 375 degrees.
- In medium skillet, brown meat till done.
- Drain meat well then return to skillet.
- Add taco seasoningand blend well.
- In a small bowl, combine broth and flour.
- Add to meat mexture and bring to boil to slightly thicken liquid.
- Stir in sour cream and chilies, blend well.
- Lightly grease a 13 X 9 inch glass baking dish with cooking sprya.
- Pour half of the bag of chips in the bottom and press down to flatten.
- Top with half the meat mixture.
- Next layer with half of the cheese.
- Next layer half the onions.
- Repeat layers ending with the onion.
- Bake uncovered in the oven at 375 for 20 minutes.
- Let stand 5 minutes before serving.

This is my stand by mexican night dish. It can be heated up by using hot picante sauce or cooled by using mild. i use extra lean ground beef and white corn chips.

Steps:
- Brown ground beef in skillet, stirring untill no more pink remains.
- Drain fat.
- Add taco seasoning and mix well.
- In small bowl wisk together flour and chicken broth.
- Add to meat mixture and bring to a boil, cooking untill slightly thickened.
- Stir in sour cream and green chilies.
- In lightly greased baking dish (13x9x2) place 1/2 of the chips 1/2 of the beef 1/2 of the picante sauce 1/2 of cheese and 1/2 of onions.
- repeat layers with remaining 1/2 of ingredients, ending with onions.
- Bake at 350 for 25 minutes or until hot and cheese is melted.
- Let stand 5 minutes before serving.

- Heat oven to 350 degrees F. have an 11 x 7-inch baking dish ready.
- Cook ground beef in a large non-stick skillet over medium-high heat, breaking up chunks, 4 minutes or until no longer pink. Drain off any fat. Stir in undiluted corn soup, chili powder and red pepper.
- In a large bowl, stir cheese soup, onions, tomatoes and chilies until blended.
- Cut tortillas in half. Line the bottom of baking dish with 8 halves. Cover with half the meat mixture. Top with 8 more tortilla halves, then with half the soup mixture. Repeat layers, ending with soup mixture.
- Bake 20 minutes until tortillas are softened. top with shredded cheese and olives. Bake 10 minutes longer or until hot and bubbling.

PRUNE MUFFINS
I love this little muffin!! A grand prize winning recipe by Betty Watts of PEI, source: Saltscapes magazine, Canada's East Coast Magazine. Betty says these muffins are best served the day after they are made, I like them anytime, especially warm from the oven! I have updated the directions as the result of the first review. I often add 1/2 cup of chopped pecans to the dry ingredients, I love nuts!

- My helpful hint! I like to prepare the prunes before I start baking, sometimes even the night before I chop the prunes, sprinkle with two tablespoons of water, stir and let sit until needed. I find it makes them much more moist, if there is any liquid left in the dish after I spoon the prunes into the flour mixture I add it to the bowl of liquids.
- In a large bowl, combine prunes, flour, baking powder, salt, cinnamon and sugar.
- In a bowl blend together beaten egg, sour cream and melted butter.
- Add to dry ingredients and stir just until well blended, but do not overmix.
- Batter will be firm like a stiff drop cookie dough.
- Fill 12 greased medium-size muffin tins about 3/4 full; you will need to use a spoon and knife to do this as the dough is very thick.
- Bake 15 - 20 minutes in 375 degree oven, or until golden brown.
- Let sit in pans for a couple of minutes before turning out, they will be easier to handle when dipping in the topping.
- While hot, dip muffin tops into the 1/4 cup melted butter, then sugar and cinnamon mixture.
- Note: I use about 1/3 cup of sugar and find that is sufficient, or you can double dip and have a nice crunchy topping.
- Delicious!

- CAKE: Beat butter and 1 cup sugar until light and fluffy.
- In a separate bowl, mix flour, baking powder and salt together; add to butter mixture and mix well.
- Add milk gradually.
- In another bowl, beat egg whites with remaining 1/2 cup sugar, and fold gently into mixture; add grated chocolate and vanilla.
- Grease two 9-inch round cake pans and line with parchment paper.
- Pour cake batter evenly between the pans and bake at 350F for 25-30 minutes. Let cake cool.
- ICING: Mix yolks, sugar, butter and vanilla until fluffy.
- Spread icing on one cake layer; place second layer on top and spread icing over top and sides.
- Melt chocolate and drizzle over icing. Use the tines of a fork to make squiggly lines, giving the impression of ski marks in snow.
- Makes 14 servings.

- Grease pie plate, 10x1-1/2 inches.
- Heat cornmeal, broth and garlic salt to boiling in 3-quart saucepan; stirring constantly, remove from heat.
