This is a really yummy moist cake, but because there is no sugar in it, it won't keep long. I actually like eating this with butter on it..so much for the diet, but it is very tasty. You can substitute fresh, sugar free juice for the water, pineapple is particularly tasty. I also add in more Glace Cherries because I love 'em.

1 cup currants
1 cup raisins
1 cup sultana
1/2 cup glace cherries
1/2 cup mixed peel (Washed to remove syrup)
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1 teaspoon ground cinnamon
1 cup water
2 cups white lily self-rising flour
1/2 cup skim milk
1 unbeaten egg white

Steps:

  • Place fruits, spices and water into a large saucepan and heat till simmering.
  • Simmer for about 3-4 minutes and then remove from heat, allow to cool for about 30 minutes but not to get cold.
  • Add flour, milk and egg white (in the saucepan is fine) and mix well.
  • Line a medium caketin with baking paper and pour in mix.
  • Bake in a moderately hot oven for 45 minutes.

When my mother served this cake to us, I was amazed at the moistness and flavor. I never would have guessed that I was actually eating my vegetables! You can't even tell there are beets in it (their flavor cooks right out), but it's oh, so good. It's like the mystery fruit cake that no-one can quite identify. Give it a try - you won't be sorry!

4 large eggs
2 cups granulated sugar
1 cup canola oil
2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
3 cups shredded fresh beets
1 cup chopped walnuts
1 (8 ounce) package cream cheese, softened
3/4 cup whipping cream
1 teaspoon almond extract
1/2 cup powdered sugar

Steps:

  • Beat together eggs, sugar and oil until fluffy.
  • Sift together flour, baking powder, baking soda, salt & cinnamon in large bowl.
  • Add egg mixture & stir well to blend.
  • Add vanilla, beets & walnuts. Beat together 1 minute.
  • Pour into a greased and dusted 9x13 pan (works well in a bundt pan also).
  • Bake at 350 degrees for 35-45 minutes. Cool.
  • Serve with almond sauce on the side and drizzled over each serving, or dust with powdered sugar.
  • For almond sauce:
  • Blend together cream cheese, whipping cream & almond extract with mixer until fluffy. Blend in powdered sugar. Spoon onto cake or serve on the side.

This is one of my adopted recipes. Based on the previous reviews, it doesn't seem to need any major changes. I actually like certain foods a little bland; if you like things spicier, spice it up as you please.

1 (9 inch) pie shells, unbaked
3 eggs, beaten
1 1/2 cups milk
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash ground nutmeg
3/4 cup chicken, chopped (previously cooked)
1 1/2 cups swiss cheese, grated (or cheddar, Monterey Jack or Havarti)
1 tablespoon flour

Steps:

  • Prepare pastry shell.
  • Preheat oven to 325 degrees F.
  • In a bowl stir together eggs, milk, salt, pepper and nutmeg.
  • Add chicken.
  • Combine grated cheese and flour; add to egg mixture.
  • Mix well.
  • Pour egg mixture into hot pastry shell.
  • Bake at 325 degrees F for 35 to 40 minutes or until a knife inserted near the centre comes out clean.
  • Let stand for 10 minutes.

I really respect people who maintain their love for fruit cake in the hostile atmosphere of the U.S. It gets much more respect in England. This fruitcake has a candy-like quality about it, and there's no chopping!

1/4 cup grape juice
1 cup heavy whipping cream, whipped
32 regular marshmallows, cut into bite-size pieces
1 cup golden raisin
1 cup dried currant
24 ounces graham crackers
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup chopped dates
2 cups chopped pecans
1/4 cup chopped fig
1/2 cup diced candied pineapple
3/4 cup candied cherry
1/4 cup diced citron
2 tablespoons grated orange zest
1/4 cup brandy (optional)
6 -8 red and green glazed cherries (to garnish)

Steps:

  • Fold the grape juice into the whipped cream in a bowl. Fold in the marshmallows. Set aside for flavors to blend.
  • Cover the raisins and currants with boiling water in a shallow bowl. Let stand for 10 minutes; drain and pat dry with a paper towel.
  • Process the graham crackers in a food processor until they're nearly dust. Combine with the cinnamon and nutmeg in a large bowl and mix well. Add the dates, pecans, figs, pineapple, 3/4 cup cherries, citron and orange zest and mix well. Add the raisins and currants and mix well.
  • Fold in the marshmallow mixture. Fold in the brandy.
  • Press the mixture into a greased bundt pan. Unmold onto waxed paper and press candied cherries onto the top.
  • Store in a sealed tin for 3 to 4 weeks before serving.

From October 2006 Nick Jr. Family magazine. Yummy, moist snack cake with all kinds of wonderful nutritious ingredients. I found this sweet enough on its own, but you could sprinkle some powdered sugar on top to make it look pretty. Great for lunch boxes!

1 cup all-purpose flour (I use unbleached)
3/4 cup whole wheat flour
3/4 cup sugar
1/4 cup ground flax seed or 1/4 cup wheat germ
1 teaspoon baking powder
1 teaspoon pumpkin pie spice or 1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs, beaten
1/2 cup unsweetened applesauce
1/2 cup canola oil
2 large golden delicious apples, coarsely grated (about 2 cups, packed, I used 3 medium apples and peeled them first)
1/3 cup butterscotch chips

Steps:

  • Whisk together flours, sugar, flaxseed, baking powder, pumpkin pie spice, baking soda, and salt in a large bowl.
  • Whisk together eggs, applesauce, and oil in another bowl. Stir in apples until well-blended.
  • Pour liquid ingredients over dry ingredients and stir just until moistened. Stir in butterscotch chips.
  • Pour batter into a 13x9 pan that has been coated with cooking spray. Smooth with a rubber spatula.
  • Bake in a preheated 350 degree oven about 35 minutes, or until the top is golden and a toothpick inserted in the middle comes out clean. (Watch carefully, mine was done at 26 minutes).
  • Cool on a wire rack before cutting.
