3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons olive oil
1 medium onion, chopped
1 tablespoon butter
1/2 teaspoon dried thyme
1 cup chicken broth
3 tablespoons lemon juice
2 tablespoons minced fresh parsley

Steps:

  • In a small bowl, combine the flour, salt and pepper.
  • Set aside 4-1/2 teaspoons for sauce.
  • Sprinkle the remaining flour mixture over both sides of chicken.
  • In a large nonstick skillet coated with cooking spray, cook chicken in oil over medium heat for 7-9 minutes on each side or until juices run clear.
  • Remove and keep warm.
  • In the same pan, saute onion in butter until tender.
  • Add thyme and reserved flour mixture; stir until blended.
  • Gradually stir in the broth and lemon juice, scraping up any browned bits from bottom of pan.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Serve over chicken.
  • Sprinkle with parsley.

Steps:

1 pound small red potatoes, halved
1 large onion, finely chopped
3/4 cup shredded carrots
6 garlic cloves, minced
2 teaspoons grated lemon zest
2 teaspoons dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
2 cups reduced-sodium chicken broth, divided
2 bay leaves
3 tablespoons all-purpose flour
2 tablespoons minced fresh parsley

Steps:

  • Place potatoes, onion and carrots in a 6-qt. electric pressure cooker. Top with garlic, lemon zest, thyme, salt and pepper. Place chicken over top. Add 1-3/4 cups broth and bay leaves., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Quick-release pressure. Press cancel. A thermometer inserted in chicken should read at least 170°. , Remove chicken; keep warm. Discard bay leaves. In a small bowl, mix flour and remaining 1/4 cup broth until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until slightly thickened, 1-2 minutes. Return chicken to pressure cooker; heat through. Sprinkle servings with parsley.

1 medium onion, chopped
1/3 cup water
1/4 cup lemon juice
1 tablespoon canola oil
1/2 to 1 teaspoon salt
1/2 teaspoon each garlic powder, chili powder and paprika
1/2 teaspoon ground ginger
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each )
4-1/2 teaspoons cornstarch
4-1/2 teaspoons cold water
Hot cooked noodles
Chopped fresh parsley, optional

Steps:

  • In a greased 6-qt. electric pressure cooker, combine onion, water, lemon juice, oil and seasonings. Add chicken; turn to coat. Lock lid; close pressure-release valve. 4 boneless skinless chicken breast halves (6 ounces each)
2 medium lemons
1 bunch fresh basil leaves (3/4 ounce)
2 cups chicken stock

Steps:

  • Place chicken in a 6-qt. electric pressure cooker. Finely grate enough zest from lemons to measure 4 teaspoons. Cut lemons in half; squeeze juice. Add zest and juice to pressure cooker. , Tear basil leaves directly into pressure cooker; add chicken stock. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 6 minutes. Quick-release pressure. A thermometer inserted in chicken should read at least 165°. When cool enough to handle, shred meat with 2 forks; return to pressure cooker. 1 (3 lb) whole chickens, skin removed and cut into pieces
ground black pepper, to taste
1 teaspoon dried thyme leaves, crushed
2 tablespoons vegetable oil
1 cup chicken broth or 1 cup chicken stock
1/2 cup white wine
1 lemon, juice of
3 garlic cloves, minced
lemon slice

Steps:

  • Season the chicken with black pepper and sprinkle with the thyme. Heat the oil in a 6-quart pressure cooker over medium-high heat. Add the chicken and cook for 10 minutes or until the pieces are well browned on both sides. Pour off any fat.
  • Stir the broth, wine, lemon juice and garlic in a small bowl and pour the mixture over the chicken.
  • Close the cooker and cook over medium heat for 8 minutes with the regulator set to slow steam escape. Remove the cooker from the heat and quick release the pressure.
  • Carefully open the cooker lid and remove the chicken from the cooker. Thicken the sauce, if desired. Serve the sauce with the chicken. Garnish with lemon slices, if desired.
