PRESSURE COOKER CAJUN CHICKEN AND RICE
This one-pot Cajun Chicken and Rice is a quick and simple way to deliver a bold and spicy weeknight dinner everyone will enjoy. The pressure cooker makes quick work of perfectly seasoned chicken breast, vegetables, and rice in a tomato-accented broth. In this recipe, garlic powder, paprika, oregano, thyme, cayenne pepper, and white pepper come together to form your own signature Cajun spice blend. No one will believe that this classic Southern recipe is ready to serve in half an hour. Plus, this dish is gluten-free and dairy-free so no matter who shows up for dinner, everyone can enjoy it!

- Season chicken with garlic powder, paprika, oregano, thyme, cayenne pepper, white pepper, and salt. Heat oil in a pressure cooker set to Sauté. Cook and stir onion in hot oil until softened, about 4 minutes. Stir tomato paste with the onion to coat. Pour ¼ cup chicken stock into the cooker to deglaze the pan, scraping browned bits of food from the bottom of the pan with a flat-edged utensil. Stir rinsed rice, celery, and bell peppers with the onion; add seasoned chicken. Pour remaining broth over the chicken mixture. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 8 minutes on High pressure. Once the cooking cycle has completed allow pressure to release naturally for 5 minutes, then set steam vent to Venting to quick-release remaining pressure. Remove chicken breasts to a cutting board and shred with two forks. Stir shredded chicken into the rice mixture.

- Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat; add oil. Add green pepper; cook and stir 4-5 minutes or until crisp-tender. Remove pepper and set aside. Press cancel., Mix cumin and chili powder; sprinkle pork chops with 2 teaspoons spice mixture. Place pork in pressure cooker. In a small bowl, mix tomatoes, onion, celery, carrot, garlic, hot sauce, salt and remaining spice mixture; pour over pork. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 6 minutes. Let pressure release naturally for 5 minutes; quick-release any remaining pressure. , Stir in chicken broth, breaking up pork into pieces. Select saute setting and adjust for low heat; bring to a boil. Add rice. Cook until rice is tender, 5 minutes longer. Serve with sauteed green pepper.

PRESSURE COOKER CAJUN CHICKEN AND SAUSAGE STEW
This is a delicious recipe - my own ( based loosely upon some internet recipes) . You can use more or less cajun seasoning to your liking since its spicy. I serve this with fresh bread and white rice. The Cajuns might use Andouille sausage with this but I really like the hillshire lite smoked sausage ( its even better than the non-lite version, in my opinion).

Steps:
- Heat butter and olive oil, over medium-well, in the bottom of a heavy , larger size, pressure cooker.
- Add chopped onions and garlic. Add chicken and mix up. Brown chicken ( mixed with the onions/garlic) by turning frequently.
- Add all the other ingredients. The chicken stock should come up almost to the top of the ingredients so that they are almost covered. Add more chicken broth if necessary. Make sure that the pressure cooker is no more than 2/3 full.
- Bring up to pressure and cook for about 45 minutes. Turn heat off and let the pressure come down naturally ( about 20 plus minutes give or take).
- Before serving-adjust seasoning with additional slat and pepper if necessary.
