2 lbs chicken pieces
1/3 cup dry white wine
1 teaspoon grated fresh lemon rind
3 tablespoons lemon juice
2 tablespoons tomato paste
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon hot pepper sauce
1/4 teaspoon salt
2 garlic cloves, minced

Steps:

  • Combine wine, lemon rind, and juice, tomato paste, oil, paprika, hot pepper sauce, salt, and garlic; pour over chicken, turning to coat.
  • Cover or bag and refrigerate for at least 4 hours or for up to 24 hours, turning occasionally.
  • Place chicken on greased grill over medium heat; skin side down for 10 minutes.
  • Turn and cook, brushing with marinade an additional 30-40 minutes or until juices run clear when chicken is pierced.

46 ounces canned tomatoes, strained (crushed)
1/4 cup vinegar
1 tablespoon sugar
3 teaspoons paprika
1 small onion, finely chopped
2 teaspoons salt
2 teaspoons chili powder
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon Tabasco sauce, according to taste (or more)
1 teaspoon black pepper

Steps:

  • Mix ingredients in a small sauce pan.
  • Simmer for about 15 minutes.
  • Use for basting meat or chicken, and serve as sauce for it as well.
  • This makes a lot of barbecue sauce so you will want to store some for later use.

My mother had this recipe in a VERY old cookbook. It was President Nixon's favorite recipe for chicken I think, hence the name. I make this especially when we have outdoor parties, when I can grill. I made it for my daughter's birthday party, and by the time I got around to eating, the chicken was gone!!! Everyone loves this tasty barbecued chicken! A little salty if you add all it calls for, so you might want to add less. Or you could use garlic powder rather than garlic salt. Enjoy!

1 cup margarine or 1 cup olive oil
3/4 cup lemon juice
2 teaspoons garlic salt
2 tablespoons paprika
2 teaspoons dried oregano
4 broiler-fryer chickens, cut up into pieces (or your favorite pieces, like thighs, in value packs)
3 teaspoons salt
1/2 teaspoon pepper

Steps:

  • Melt margarine in saucepan.
  • Stir in lemon juice, garlic salt, oregano and paprika.
  • Put pieces of chicken in tupperware or dishes to marinate in, and sprinkle with salt and pepper.
  • Pour marinade over the chicken and cover it.
  • Marinate for at least 4 hours (I do mine overnight), turning over occasionally.
  • Place on grill above hot coals.
  • Cook until tender, occasionally turning and brushing with marinade.
  • Allow 45-75 minutes total cooking time, depending on size of chicken and distance from the coals.

This is such an easy, scrumptious dinner meal. Chicken on the bone baked in your favorite BBQ sauce served over a bed of rice covered in BBQ sauce.

1 whole broiler-fryer chicken, Cut up
1 (28 ounce) bottle barbecue sauce
3 cups ketchup
1/4 cup onion
1/4 cup bell pepper
1/4 cup jalapeno, cleaned well, ribs removed with a spoon
2 -4 tablespoons sugar, to taste
6 cups cooked rice (that means 3 cups of uncooked rice)

Steps:

  • Preheat oven to 400°F.
  • Removed skin from chicken and rinse well. Set aside to dry a bit while you perform the other steps.
  • Spray the (in)sides of your baking dish with cooking spray, it will make cleanup easier.
  • Combine BBQ Sauce, Ketchup and sugar in the baking dish. Add in the (optional) chopped vegetables. (You don't have to stop at the ones I've listed. Also good in there is grated carrot, cauliflower, corn, eggplant, mushrooms -- whatever! Just stay away from vegetables that will introduce too much liquid like squash, cucumber and cabbage. You don't want a runny BBQ sauce.).
  • Stir that all up and place your chicken in the baking dish. I like to 'toss' the chicken so it gets completely coated in the bbq.
  • Cover with foil and place into oven.
  • Bake for 1 hour (up to 1.5 hours -- until you see the chicken start to degrade from the bone).
  • Remove foil and return to oven another 15 to 20 minutes to cook sauce on chicken.
  • Serve atop or beside rice covered in the extra BBQ sauce (and vegetables, if you've added any).
  • ** You can also cook this meal in your crock pot (not the rice, of course)-- just throw it all in there. and make the rice when you get home.
  • ** If you have only 2 people to feed, you can do as I have done for the photo and cook up a single large breast (with skin and bone in -- for flavor) in a covered skillet along with the vegetables. Flip after 15 minutes. After another 20 to 25 minutes, pull the breast out, remove skin and debone, cut into cubes. It may not be cooked completely (especially if you threw it in there frozen), so you may see some blood . Then add BBQ Sauce, Ketchup and sugar to pan, and return the chicken to the sauce. Let cook uncovered for about 15-20 minutes to reduce sauce. Alternatively, you could (if you had time and the inclination) place the chicken cubes on a pan, coat with sauce, roast for 20-30 minutes at 400F, put it over your rice and BBW /w veg.
  • The most important things to understand are: 1) it is the flavor of the chicken bones and ketchup that make the BBQ sauce mild enough to eat straight over rice, and 2) avoid vegetables that will add liquid to the sauce.
  • Now, go forth and make BBQ Chicken over rice. :).

2 tablespoons vegetable oil
1 (3 -3 1/2 lb) roasting chickens, cut up
1 onion, peeled and chopped
1/2 cup celery, chopped
2 tablespoons cider vinegar
2 tablespoons brown sugar
1/4 cup lemon juice
1 cup ketchup
3 tablespoons Worcestershire sauce
1/3 tablespoon yellow mustard
1 cup water
salt, to taste
1 pinch red pepper flakes

Steps:

  • In a large skillet, heat the oil over medium high heat.
  • Brown the chicken pieces, in batches if necessary to avoid crowding the skillet.
  • When nicely browned on all sides, remove chicken, drain briefly and place in a large ovenproof casserole dish.
  • Add the chopped onion and celery to the oil remaining in the skillet.
  • Cook until the vegetables soften, 5-8 minute.
  • Add the vinegar, brown sugar, lemon juice, ketchup, Worcestershire sauce, prepared mustard and 1 cup of water.
  • Mix well and taste; adjust seasoning to your taste.
  • Add red pepper flakes, to taste.
  • Simmer the sauce for 30 min to blend the flavors together.
  • While sauce is simmering, preheat the oven to 325ºF.
  • Pour the sauce over the browned chicken in the casserole dish.
  • Cover the dish with foil and bake for about 1 hour, or until the juices run clear.
