Recipe video above. Hands down, my favourite way to cook fresh prawns! Simple and fabulous, the 3 tips for top notch garlic prawns is to chop rather than use a mincer for the garlic (it splatters and burns on high heat), only marinate for 20 minutes and the splash of wine gives this a flavour edge as well as stopping the garlic from burning. Serves 2 as a main, 4 as a starter.

500g / 1lb prawns (shrimp) (, peeled and deveined, tail on (unpeeled weight 1kg/2lb, Note 1))
4 garlic cloves (, finely chopped (don't use crusher/mincer))
1 tbsp extra virgin olive oil ((separated))
1/2 tsp black pepper
1/2 tsp salt
1.5 tbsp olive oil
50g / 3.5 tbsp unsalted butter (, cut into 1.5cm / 1/2" cubes (Note 2))
1/4 cup dry white wine ((Note 3))
2 tbsp lemon juice
2 tbsp parsley, finely chopped ((garnish))
lemon wedges
Bread for mopping!

Steps:

  • Marinade: Place the prawns, garlic, olive oil and pepper in bowl. Gently toss then set aside for 20 minutes.
  • Salt: Add salt into prawns just before cooking and toss.

2 tbsp olive oil
3 garlic cloves, finely chopped
1 red chilli, seeds left in and finely chopped
½ tsp sweet paprika
12-20 large raw king prawns with shells
juice 1 lemon, plus a few slices for a finger bowl
½ small bunch parsley, roughly chopped
small loaf crusty bread, warmed to serve

Steps:

  • Melt the butter and oil together in a frying pan. Add the garlic, chilli and paprika, then fry for 1-2 mins until starting to turn golden. Turn up the heat, throw in the prawns and fry for a few mins, stirring, until all the prawns turn pink. Take off the heat, season and stir in the lemon juice and parsley.
  • Add some lemon slices to a finger bowl of warm water, grab a bowl for the shells, then dig straight in with your fingers and hunks of crusty bread.

10 oz / 300 g peeled prawns ((12 to 14 large prawns) (about 500g whole unpeeled prawns))
2 cloves garlic (, crushed)
2 tbsp olive oil

3 tbsp white wine
3 tbsp salted butter

1/2 medium cauliflower (, broken into florets)
1 to 3 tbsp butter ((or to taste))

Steps:

  • Garlic Prawns: Combine ingredients except the wine in a bowl, using your fingers to toss gently. Set aside for 10 minutes.
  • Cauliflower Puree: Cook the cauliflower in boiling water until soft - about 10 minutes. Drain and allow to cool slightly. Transfer cauliflower to a blender or food processor, add butter, 1/3 cup of milk, salt and pepper. Puree until smooth, using extra milk to get the texture to your liking. Leave in the blender with the lid on to keep warm.

200g linguine
2-3 fat garlic clove, finely chopped
50g butter
175g pack raw shelled king prawns, de-veined and split in half lengthways
finely grated zest 1 lemon, then cut the lemon into wedges
small pack parsley, chopped

Steps:

  • Boil the pasta following pack instructions. Meanwhile, very gently cook the garlic in the butter in a medium pan until softened. Add the prawns and cook until they just turn from grey to pink. It is important not to overcook them or they will be tough. Remove from the heat and stir in the zest and seasoning.
  • Drain the pasta and toss into the pan with the prawn mixture and parsley until well mixed. Divide between two bowls and serve with the lemon wedges.

This is a great easy prawn marinade, they are great on the BBQ, we put them out as appetizers but they can also be a main course. I've also sauteed them with the marinade and used the sauce with pasta or just lapped it up with French bread! ENJOY.

½ cup olive oil
1 tablespoon Dijon mustard
3 cloves garlic, minced
1 lemon, juiced
1 orange, juiced
1 teaspoon dried basil, or to taste
2 tablespoons white wine
30 tiger prawns, peeled and deveined

Steps:

  • In a glass dish, mix together the olive oil, mustard, garlic, lemon juice, orange juice, basil and white wine. Add the prawns, and stir to coat. Cover, and let marinate for 1 hour.
  • Heat an outdoor grill to high heat.
  • Thread prawns onto skewers. Grill for 3 to 5 minutes, turning once, until pink.
  • If desired, reserve marinade; transfer to a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Serve with prawns.

2 lbs large raw tiger shrimp, in their shells, thawed if frozen
1/2 cup butter
1 tablespoon vegetable oil
6 garlic cloves, smashed
2 limes, juice and zest of
1 bunch fresh coriander, chopped
warm tortilla, to serve
lemon slice, for the finger bowls

Steps:

  • Rinse the prawns in a colander, remove their heads and leave them to drain.
  • Heat the butter and oil in a large frying pan, add the garlic and fry over a low heat for 2 to 3 minutes (Cook the prawns in a large frying pan or cast iron flamproof dish that can be taken directly to the table, so that they retain their heat until they are served).
  • Add the lime rind and juice.
  • Cook, stirring constantly, for 1 minute more.
  • Add the prawns and cook them for 2 to 3 minutes until they turn pink.
  • Remove them from the heat, sprinkle with coriander and serve with the warm tortillas.
  • Give each guest a finger bowl filled with water and a slice of lemon, for cleaning their fingers after shelling the prawns, and provide lots of paper napkins!

GARLIC PRAWNS

These are tastier than anything I've ever eaten in a restaurant, and, better still, can be made a few hours ahead of your guests arriving. The recipe can be easily adjusted to feed less or more as required. The quantities given here are for a main course. I would normally serve this with steamed rice. This recipe is adapted from English food writer, Delia Smith.

1 kg large fresh green prawns (raw)
100 g butter, melted
5 garlic cloves, finely chopped
2 tablespoons fresh parsley, finely chopped
1 lemon, juice of
1 lemon, zest of, finely grated
fresh ground black pepper
salt

Steps:

  • Remove prawn heads and peel prawns, leaving tails intact.
  • 'Butterfly' prawns by turning them on to their backs and, working from the tail, use a small, sharp knife to slit them almost in half lengthwise.
  • Press down lightly with your hand to flatten them slightly.
  • Remove and discard the 'vein' located along the length of the cut.
  • Place the prawns in a single layer into a buttered baking dish.
  • Now, simply combine the melted butter, garlic, lemon rind and juice, 1 tablespoon of the chopped parsley and a good pinch or two of black pepper and pour evenly over the prawns in the baking dish.
  • At this stage, the dish can be covered with plastic wrap and kept in the fridge until you are ready to cook it.
  • To cook, preheat oven to 230°C (450°F).
  • Place the baking dish on the highest shelf of the oven.
  • Cook prawns for 5-8 minutes, or until pink.
  • The prawns will take more like 7-8 minutes to cook if they have been prepared earlier and chilled.
  • To serve, sprinkle lightly with salt and with the reserved parsley.

GRILLED GARLIC BUTTER PRAWNS

Juicy prawns (shrimp) cooked on the grill then coated in a spicy garlic lemon butter sauce. Served with rice or crusty bread, this is a showstopper meal.

1.5 kg (3lbs) shrimp (deveined but shell and head on)
2 tbsp cajun spice
1 tbsp lemon pepper
2 tsp salt
3 tbsp olive oil
250 g (2 sticks) butter
10 garlic cloves (crushed )
3-4 tbsp fresh lemon juice
2 tsp cajun spice
1 tsp chilli flakes
½ cup cream ((heavy or whipping) )

Steps:

  • If your prawns haven't been deveined, use a sharp pair of kitchen scissors and make a long incision down the length of the back then remove the vein.
  • Place the prawns in a large bowl. Pour over the oil and season with the cajun spice, lemon pepper and salt. Mix well to ensure all the prawns are evenly coated.
  • To make the sauce, melt the butter in a large pot (the pot needs to be big enough to toss all the prawns in once they are cooked) and add the garlic, lemon juice and spices.
  • Allow to cook for a minute until fragrant then pour in the cream. Bring to a simmer and allow to cook for 5 minutes then remove from the heat.
  • Taste and adjust seasoning accordingly. The sauce needs to be a little too lemony and very well seasoned. Once the prawns are added, the sauce will mellow a bit.
  • Preheat the grill for 10-15 minutes. I prefer using an outdoor grill/braai/barbecue as the smoke adds incredible flavor to the shrimp once cooked but you can use a griddle pan too.
  • Add the prawns and cook for 2-3 minutes per side until they are coral/orange in color. As the prawns cook, add them to the pot with the sauce.
  • Once all the prawns have been added, toss to coat the prawns in the sauce.
  • Serve over rice or with crusty bread and extra lemon wedges.

Steps:

  • Method: With a pair of scissors, trim away the sharp point head and legs. The cut open the shells along the backs. Use a knife to cut a shallow slit into the meat. Devein and rinse. Pat dry with kitchen towels. Set aside. Heat oil in a frying pan. Add half of the butter. Pan-fry the prawns, about 4 mins on one side. Flip over to the other side and cook about 2 minutes. Don't over cook them, or else the meat turns tough. Add garlic. Pour in wine. Add the remaining butter. Cover and cook for 1 minutes, or until the prawns are just cooked though. Season with salt and pepper. Sprinkle parsley for garnish. Serve immediately.
