Enjoy a lazy lunch in the garden with these low-fat, prepare-ahead skewers - perfect for sharing

200g cooked large prawn (you want about 16), defrosted if frozen
¼ ciabatta , focaccia or a baguette loaf, cut into cubes
1 tbsp olive oil
1 garlic clove , finely sliced
1 lemon , halved
handful parsley leaves, roughly chopped
8 skewers

Steps:

  • If using wooden skewers, soak them in water for 1 hr before using. If the skewers are really long, use kitchen scissors to halve. On each skewer, thread the tail of the prawn, then a cube of bread, then the top of the prawn so the prawn loops the bread. If the prawns aren't big enough, just alternate prawns and bread, so each skewer has 2 of each. Drizzle with olive oil and scatter with garlic. The skewers can now be kept in the fridge for several hrs.
  • Cook over the hot coals until the bread is toasted. While still on the barbecue, squeeze over the lemon. Then remove, season, drizzle with a bit more oil and scatter with parsley. Arrange on a plate or in a small jar sticking up, with a glass of something light, cold and very fizzy.

2 very ripe tomatoes, peeled, seeded, chopped
2 garlic cloves, chopped finely
1 bunch basil, cut finely
kosher salt
fresh ground pepper
baguette, sliced on the diagonal
peeled garlic

Steps:

  • Combine tomatoes, garlic and basil, taste and add salt and pepper- cover and chill for about 2 hours.
  • Take baguette slices, place on cookie sheet and broil until lightly brown.
  • Turn and allow other side to brown.
  • While still warm, rub garlic clove on surface of toast.
  • Spoon tomato mixture on toast.

1 1/4 cup(s) orzo pasta, uncooked
3/4 cup(s) kraft italian vinaigrette (or any oil based dressing)
3 clove(s) garlic, minced and divided
1 pound(s) uncooked large shrimp peeled, deveined
1 1/2 pound(s) cherry tomatoes (about 40), divided
1/2 pound(s) baguette (1/2 of 16-oz. loaf), cut into 24 cubes
1 bunch(es) green onions
1 cup(s) fresh basil, chopped
1/4 cup(s) grated parmesan cheese

Steps:

  • HEAT grill to medium heat.
  • COOK pasta as directed on package.
  • MEANWHILE, mix 1/4 cup dressing and 1/3 of garlic. Thread shrimp onto 6 skewers; thread 24 tomatoes onto 6 additional skewers alternately with bread. Grill all skewers 3 min., turning and brushing occasionally with half the dressing mixture. Remove tomato skewers from grill. Place onions in single layer on grill grate. Grill onions and shrimp 2 to 3 min. or until shrimp turn pink and onions are crisp-tender, turning and brushing occasionally with remaining dressing mixture.
  • DRAIN pasta; place in large bowl. Quarter remaining tomatoes. Add to pasta with remaining dressing, garlic and basil; mix lightly. Slice onions; stir into pasta mixture. Sprinkle with Parmesan. Serve with shrimp skewers.
