MISS BROWN'S PRALINE COOKIES

Miss Brown's Praline Cookies image

I love this recipe because it combines two of my favorite sweets in one--butter cookies and Southern pralines! The results are buttery, sweet and nostalgic. I also love this recipe because it includes a simple praline sauce that can be made without a candy thermometer.

Time 2h

Yield 2 dozen cookies

Number Of Ingredients 13

1 3/4 cups chopped pecans plus 24 pecan halves, for topping
1 cup (2 sticks) unsalted butter, at room temperature
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking soda
1/2 teaspoon fine salt
1/2 cup packed light brown sugar
1/2 cup granulated sugar
4 tablespoons unsalted butter
1/2 cup whole milk

Steps:

  • For the cookies: Preheat the oven to 300 degrees F. Line a baking sheet with parchment.
  • Arrange the chopped pecans on half of the prepared baking sheet and place the pecan halves on the other half. Bake the pecans until toasted, about 10 minutes. When done, set aside to cool, keeping the chopped pecans and pecan halves separate.
  • In a large bowl, cream the butter, brown sugar and granulated sugar with an electric mixer. Add 1 egg at a time, beating to combine, then add the vanilla and mix well. In a separate bowl, combine the flour, baking soda and salt; add to the creamed mixture in 2 batches, beating well to combine. Fold in the toasted chopped pecans.
  • Line 2 baking sheets with parchment. With an ice-cream scoop, scoop 1 1/2-tablespoon rounds of dough onto the prepared baking sheets (making sure you leave at least 1 inch of space between each). Cover and chill the dough for at least 1 hour and up to overnight. Chilling the dough helps prevent it from spreading during baking.
  • After your dough chills for at least an hour, preheat the oven to 350 degrees F.
  • Allow the dough to sit at room temperature for 5 minutes, then bake the cookies until slightly golden brown around the edges, 11 to 12 minutes (12 to 13 minutes for crispier cookies). Add a pecan half to the middle of each cookie and cool to room temperature.
  • For the praline sauce: While the cookies are cooling, add the brown sugar, granulated sugar, butter and milk to a medium saucepan. Bring to a rolling boil, whisking continuously. Boil and whisk for 3 minutes more, or until the sauce is thickened slightly and coats the back of a spoon. Remove from the heat. Let cool for 4 to 5 minutes.
  • Drizzle the sauce over the cookies before serving. The cookies and any leftover praline sauce will keep in an airtight container at room temperature for up to 5 days stored separately. Spoon leftover sauce over ice cream or stir into hot coffee.

NEW ORLEANS PRALINES

New Orleans Pralines image

Pralines are a New Orleans institution. Try a praline recipe that produces sweet, slightly crumbly brown sugar candies loaded with toasted pecans.

Provided by Elizabeth LaBau

Categories     Dessert     Candy

Time 1h

Number Of Ingredients 7

1 cup white granulated sugar
1 cup brown sugar, packed
1/2 cup evaporated milk
4 tablespoons butter, cubed
2 teaspoons vanilla extract
1 1/2 cups pecans, toasted and coarsely chopped
1/4 cup boiling water, if needed

Steps:

  • Gather the ingredients.
  • Prepare a baking sheet by lining it with aluminum foil and spraying the foil with nonstick cooking spray. Alternatively, use a silicone mat on top of the baking sheet.
  • In a medium saucepan over medium heat, combine the white sugar, brown sugar, and evaporated milk.
  • Stir until the sugar dissolves. Once all is well mixed, insert a candy thermometer . Cook the candy, stirring occasionally, until the thermometer reads 240 F.
  • Once the proper temperature is reached, remove the pan from the heat and drop the cubes of butter on top, without stirring. Allow the sugar mixture to sit for 1 minute.
  • Add the vanilla extract and pecans.
  • Begin to stir smoothly and constantly with a wooden spoon; the candy will begin to thicken and appear lighter in color. Continue to stir until the candy starts to hold its shape. It should still be easy to stir, but don't overdo it, as pralines quickly go from fluid to rock-solid.
  • Once the confection has a lighter opaque-brown color and is holding its shape, work quicky and drop small spoonfuls of the candy onto the prepared baking sheet. Because the pralines will start to set in the saucepan, you need to spoon out the candy as fast as you safely can. If the candy stiffens before you're done scooping, add a spoonful of boiling hot water and stir until it loosens, then continue scooping until you have formed all the pralines.
  • Allow the candy to fully set at room temperature; it should take about 30 minutes for the pralines to harden. Store the pralines in an airtight container at room temperature. Enjoy.

PRALINES

Pralines image

Provided by Duff Goldman

Categories     dessert

Time 1h

Number Of Ingredients 8

1 1/2 cups granulated sugar
3/4 cup lightly packed light brown sugar
1 teaspoon kosher salt, plus another teaspoon for sprinkling
1 1/2 cups chopped roasted pecans
1/2 cup skim milk
1 stick (1/2 cup) butter
2 teaspoons bourbon
1 teaspoon pure vanilla extract

Steps:

  • Place a large piece of parchment paper on a flat surface, preferably granite or wood.
  • Put all the ingredients in a large pot and attach a candy thermometer to the side. You need to be sure the thermometer goes deep into the mixture. Turn the heat to medium high.
  • Fill a bowl that's larger than the pot halfway with ice water and set it aside.
  • Stir the mixture with a wooden spoon. When everything has melted together, start checking the temperature. When the thermometer reaches exactly 236 degrees F, remove the pot from the heat and stick it in the bowl of cold water to stop the cooking process. Stir for 45 seconds while the pot is in the ice bath to evenly cool the entire mixture.
  • With a large spoon, start dropping puddles of the mixture onto the parchment. Make sure you're getting some pecans in every spoonful. If you feel like it, sprinkle just a bit of salt on top. Let them cool all the way. If you're in a humid environment, they might stay sticky, but put them in front of a fan and they should get dry.
  • Store them carefully in a tin, and don't stack them very high-three layers max, separated by wax paper.
  • Find this recipe and more in Duff Bakes: Think and Bake Like a Pro at Home ($27.50, William Morrow).
