Boneless chicken breasts are covered in a pecan praline glaze. The Creole seasoning cuts back some of the sweetness. Dark Karo® syrup can be used in place of the maple syrup if that's what you have.

2 cups all-purpose flour
1 pound skinless, boneless chicken breast halves - cut into strips
1 egg, beaten
1 cup vegetable oil for frying
½ cup butter
1 cup brown sugar
1 cup maple syrup
½ cup chopped pecans
2 teaspoons Creole seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a casserole dish.
  • Place flour in a shallow bowl and press chicken strips into the flour; tap to remove excess flour.
  • Dip floured chicken in the egg and again coat with flour.
  • Heat vegetable oil in a large skillet over medium heat. Pan-fry chicken strips until golden brown and the meat is no longer pink inside, about 5 minutes per side; drain on a paper towel-lined plate.
  • Melt butter in a saucepan over medium heat and stir in brown sugar, maple syrup, pecans, and Creole seasoning. Bring the mixture to a boil and cook for 1 minute.
  • Place chicken strips into the prepared casserole dish; pour praline sauce over chicken and toss chicken to coat with sauce.
  • Bake in the preheated oven until sauce is bubbling, 10 to 15 minutes.

1 ½ cups toasted pecans
1 ½ cups white sugar
⅜ cup butter
¾ cup brown sugar
½ cup milk
1 teaspoon vanilla extract

Steps:

  • Line a baking sheet with aluminum foil.
  • In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Drop by spoonfuls onto prepared baking sheet. Let cool completely.

Steps:

  • Sprinkle the Creole seasoning on both sides of the chicken breasts.
  • Heat butter and oil in a large skillet to medium heat.
  • Add chicken breasts and cook for 5 min on each side, or until juices run clear.
  • Remove from the skillet and put on a serving platter; keep warm.
  • In the reserved drippings in the skillet, add the syrup and sugar; bring to a boil.
  • Stir in pecans and cook 1 min or until heated through.
  • Spoon mixture over chicken.

1/4 cup butter, melted
1/2 cup maple syrup

  • Sprinkle seasoning on both sides of chicken and brown in butter over medium-high heat on top of stove.
  • Place browned chicken in slow cooker.
  • Mix together syrup, brown sugar, and pecans and pour over chicken.
  • Cook on Low for 6 to 8 hours.
  • Serve with wild or brown rice.

2 cups sugar, plus 1 cup
1 cup evaporated milk
1/4 pound butter (do not substitute)
1 teaspoon vanilla
3 to 4 cups pecan halves, toasted

Steps:

  • Put 2 cups sugar, milk, and butter in heavy saucepan over medium heat. Cook to softball stage, 234 degrees F. When almost ready, caramelize the remaining 1 cup sugar in another heavy skillet, preferably cast iron, over medium heat, stirring often, so sugar does not get too dark. As soon as sugar granules are totally dissolved, turn off heat and carefully add a few spoonfuls of candy mixture to caramelized sugar liquid, stirring constantly and thoroughly. Pour all back into saucepan of candy and mix quickly with wire whip or cooking spoon. Remove from heat. Add vanilla and continue beating candy for 10 to 15 minutes or as long as it takes for candy to lose its sheen and begin to thicken. Quickly stir in pecans and, using 2 soupspoons, scoop small mounds onto papered cookie sheets. Let set. Store in covered tins.
  • If candy gets too hard before it is all scooped, place in safe container and warm in microwave until of good consistency to finish scooping.

1 cup whole shelled pecans, toasted

Steps:

  • In a saucepan heat sugar and corn syrup over medium-high heat, stirring occasionally, until sugar dissolves. Boil until golden-brown and caramelized, 4 to 6 minutes. Remove pan from heat and carefully pour in cream. Mixture will bubble up. Stir in pecans until well-coated. Use a spoon to drop 2-inch rounds onto waxed paper-lined baking sheets. Let harden before serving.

1 1/2 cups granulated sugar
3/4 cup lightly packed light brown sugar
1 teaspoon kosher salt, plus another teaspoon for sprinkling
1 1/2 cups chopped roasted pecans
1/2 cup skim milk
1 stick (1/2 cup) butter
2 teaspoons bourbon
1 teaspoon pure vanilla extract

Steps:

  • Place a large piece of parchment paper on a flat surface, preferably granite or wood.
  • Put all the ingredients in a large pot and attach a candy thermometer to the side. You need to be sure the thermometer goes deep into the mixture. Turn the heat to medium high.
  • Fill a bowl that's larger than the pot halfway with ice water and set it aside.
  • Stir the mixture with a wooden spoon. When everything has melted together, start checking the temperature. When the thermometer reaches exactly 236 degrees F, remove the pot from the heat and stick it in the bowl of cold water to stop the cooking process. Stir for 45 seconds while the pot is in the ice bath to evenly cool the entire mixture.
  • With a large spoon, start dropping puddles of the mixture onto the parchment. Make sure you're getting some pecans in every spoonful. If you feel like it, sprinkle just a bit of salt on top. Let them cool all the way. If you're in a humid environment, they might stay sticky, but put them in front of a fan and they should get dry.
  • Store them carefully in a tin, and don't stack them very high-three layers max, separated by wax paper.

I got this recipe from an online friend many years ago. This is absolutely delicious and one of my favorite dishes. It looks so pretty, and is actually very easy to make.

4 -6 boneless skinless chicken breasts
8 ounces cream cheese, softened
1/2 cup Dijon mustard
1 1/2 cups brown sugar
8 ounces chopped pecans

Steps:

  • Pound chicken until flattened slightly.
  • Spread 2-3 tablespoons of cream cheese on the underside of the breasts.
  • Roll the breast and secure with toothpicks so all filling is enclosed.
  • Spread mustard over the chicken.
  • Roll chicken in brown sugar until well coated. (you may need to pat additional sugar on chicken).
  • Place the chicken rolls in 13x9 pan.
  • Sprinkle with pecans.
  • Bake in a preheated 300º oven for 1-1/2 hours, basting very frequently.

flavorless vegetable oil for oiling the baking sheets
2 cups firmly packed light brown sugar
1 cup granulated sugar
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon cream of tartar
1/2 stick (1/4 cup) unsalted butter, cut into bits
1 1/2 teaspoons vanilla
2 1/2 cups pecan halves

Steps:

  • Have ready 4 oiled large baking sheets. In a heavy 2-quart saucepan combine the sugars, the cream, the salt, and the cream of tartar, cook the mixture over moderate heat, stirring and washing down any sugar crystals clinging to the side with a brush dipped in cold water, until the sugar is dissolved, and boil it over moderately high heat, undisturbed, until a candy thermometer registers 238°F. Remove the pan from the heat, let the mixture cool until the candy thermometer registers 220°F., and stir in the butter and the vanilla. Beat the mixture until it is creamy and stir in the pecan halves. Working quickly, drop the mixture by tablespoon onto the baking sheets and let the pralines cool. Remove the pralines carefully and store them, wrapped individually in wax paper, in airtight container in a cool place. The pralines keep for 2 weeks.

½ cup confectioners' sugar
1 ½ cups white sugar
½ cup buttermilk
¼ cup heavy cream
2 tablespoons butter
⅛ teaspoon salt
¾ teaspoon baking soda
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C). Spread pecans out on a baking sheet in a single layer. Bake for 15 minutes in the preheated oven, or until fragrant. Set aside.
  • In a saucepan, stir together the confectioners' sugar, white sugar, buttermilk, heavy cream, butter, and salt. Bring to a boil over medium heat. When the mixture begins to boil, start stirring gently with a wooden spoon, and continue cooking until the mixture is slightly above the soft ball stage to 250 degrees F (120 degrees C).
  • Remove from heat, and stir in baking soda and vanilla. The mixture will expand some while stirring. Cool for 10 to 15 minutes, then stir in pecans. Keep stirring with a wooden spoon until the mixture loses its gloss. Drop teaspoonfuls of the mixture onto parchment paper that has been coated with butter flavored non-stick spray. Allow to cool completely.

1 cup crushed pecans
6 boneless chicken breasts
1/2 cup oil
1 cup flour
1 teaspoon chopped thyme
1 teaspoon chopped basil
1 egg
1/2 cup water
1/2 cup milk
1/4 cup chopped pecans
1/4 cup praline liqueur
2 cups heavy whipping cream

Steps:

  • In heavy saucepan heat oil over medium heat.
  • Combine flour and pecans and season to taste using salt, pepper, thyme and basil.
  • In mixing bowl combine egg, water and milk.
  • Using a wire whisk whip ingredients until well blended.
  • Season eggwash with salt and pepper.
  • Dip chicken in eggwash and then in pecan flour shaking off excess.
  • Pan fry chicken until golden brown on both sides or approximately 7 to 10 minutes.
  • Remove and keep warm.
  • Drain all but 1 tablespoon of oil from skillet keeping pan drippings.
  • Add pecans and saute 1 minute.
  • Remove from heat and deglaze with praline liqueur.
  • Return to flame being careful as liqueur will ignite.
  • Add heavy whipping cream and bring to rolling boil then reduce to a simmer.
  • Reduce cream to one half volume.
  • Season to taste using salt and pepper.
  • Place chicken breast in the center of a ten inch plate and top with 2 ounces of the praline cream.
