3 pounds chicken breasts* (cut into 1 to 2 inch cubes)
2 sleeves Ritz crackers
1/2 cup butter (melted)
1 tablespoon poppy seeds
10.5 ounces condensed cream of chicken soup
12 ounces sour cream
3 tablespoons Parmesan cheese

Steps:

  • Crush the 2 sleeves of Ritz crackers (about 2 ½ cups).
  • Stir melted butter, 1 ½ cups crushed Ritz crackers and poppy seeds together in a bowl.
  • Fold in chicken, cream of chicken soup, and sour cream until well blended.
  • Pour mixture into a 9x13 inch pan.
  • In a separate bowl, mix remaining 1 cup of Ritz crackers and Parmesan cheese.
  • Spread Ritz cracker topping evenly over casserole.
  • Bake for 40 minutes at 350 degrees.

1 can condensed cream of chicken soup
16 ounces sour cream
3 teaspoons poppy seeds
Crushed buttery crackers, like Keebler Town House crackers (about 30)
1/4 cup butter, melted

Steps:

  • Mix together cooked chicken, cream of chicken soup, poppy seeds, and sour cream. Lightly grease 11x7-inch baking dish. Spoon mixture into dish.
  • Pour melted butter over cracker crumbs and stir together. Sprinkle over casserole.
  • Bake at 350°F for 35 minutes or until hot and bubbly.

2 (10.5 ounce) cans condensed cream of chicken soup, NOT diluted
2 teaspoons poppy seeds
5 cups cooked, shredded chicken ((about the amount of meat from 1 large rotisserie chicken or 2 smaller chickens))
½ cup slivered almonds ((about 2 ounces))
2 sleeves Ritz crackers, coarsely crushed ((about 60 crackers total))
12 tablespoons (1 ½ sticks) butter, melted
Optional garnish: chopped fresh parsley

Steps:

  • Preheat oven to 350° F. In a large bowl, whisk together sour cream, chicken soup and poppy seeds. Stir in chicken and slivered almonds.
  • Transfer the chicken mixture to a greased 9 x 13-inch baking dish.
  • In a small bowl, combine the Ritz crackers and the melted butter.
  • Add the buttered cracker crumbs to the top of the casserole.
  • Bake uncovered for 20-25 minutes, or until the filling is hot and bubbly.
  • Garnish with fresh parsley and serve.

This is different from any other Chicken Poppy seed casserole out there. It's uniqueness comes form the dillweed and the broth cooked rice. I found this on another website and "tweaked" it to make it mine. I adore it! Also "light" ingredients can be substitued with no ill effects.

2 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped celery
1/2 lb sliced mushrooms
1 can cream of chicken soup, undiluted
1 (8 ounce) container sour cream
1 teaspoon dried dill
1 tablespoon poppy seed
4 cups cooked cubed poultry
3 cups cooked white rice (cooked in chicken broth)
1 1/2 cups crushed buttery crackers
1/2 cup butter, melted
1/2 cup dry white wine

Steps:

  • Preheat oven to 350 degrees.
  • Saute the onion, celery, and mushrooms in the 2 T butter for 3-5 minutes, until still crisp-tender.
  • In a large bowl combine the cooked veggies, soup, sour cream, poppy seeds, dillweed and wine.
  • Mix well.
  • Stir in cooked poultry and rice, again mixing well.
  • Spread mixture into a lightly greased 9x13pan.
  • Combine cracker crumbs and melted butter and sprinkle over casserole.
  • Bake uncovered for 30 minutes.
  • Let stand 5 minutes before serving.

4 skinless, boneless chicken breast halves
½ cup butter, melted
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese

Steps:

  • Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.
  • Preheat an oven to 350 degrees F (175 degrees C). Combine the butter, crackers, and poppy seeds in a bowl; set aside.
  • Blend the sour cream and cream of chicken soup in a bowl; pour half of the soup mixture into a 9x9-inch baking dish. Add the shredded chicken, then pour the remaining half of the soup mixture on top. Sprinkle with Cheddar cheese, then top with the cracker mixture.

6 ounces buttery round crackers, crumbled
1 cup butter, melted
2 tablespoons poppy seeds
8 skinless, boneless chicken breast halves, cooked and cut into bite-sized pieces
2 (10.75 ounce) cans condensed cream of chicken soup
8 ounces sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the cracker crumbs, melted butter, and poppy seeds in a bowl. Layer the bottom of a 9x13-inch glass baking dish with 2/3 of the cracker mix. Mix the chicken breast pieces with cream of chicken soup and sour cream until thoroughly combined, and spoon the mixture on top of the crumb crust. Sprinkle remaining 1/3 of the cracker mix over the top of the chicken mixture.

1/2 cup butter, melted
1-1/3 cups finely crushed butter-flavored crackers
