PERFECT POTLUCK POTATO SALAD



Perfect Potluck Potato Salad image

The perfect potato salad truly does exist, and it's incredibly easy to make!

Number Of Ingredients 14

1 1/2 lbs petite (or baby) red or white potatoes, cut into 4ths
2 1/2 tsp kosher salt, divided
2-3 Tbsp apple cider vinegar
12 oz package of bacon, cooked and crumbled
3-4 hard-boiled eggs, peeled and coarsely chopped
1/2 small red onion, peeled and finely diced
1/4 cup finely diced celery (2-3 stalks)
1/4 cup finely chopped sweet pickles (or a few tablespoons of sweet pickle relish)
3/4 cup mayonnaise
1 Tbsp whole-grain dijon mustard
2 Tbsp bacon grease (optional, but highly recommended)
2 tsp granulated sugar
pinch ground celery seed
1/4 tsp black pepper

Steps:

  • Add sliced potatoes to a large saucepan. Cover with cold water, about an inch above the tops of the potatoes. Bring to a boil over MED-HIGH heat. Covering the pan helps this happen faster, but pay attention that it doesn't boil over!!
  • Once boiling, add 1 1/2 tsp kosher salt and stir. Boil, for 10-15 minutes, until potatoes are fork tender. Watch out for the foam on top of the water, it can boil over if you're not careful. Adjust the heat so that the potatoes are still boiling, but not so hot that they're roaring.
  • Drain potatoes in a colander, then return potatoes to the same hot pot you boiled them in. Add vinegar and stir to combine. Let sit a minute or two, then return to the colander to cool slightly.
  • While potatoes are cooling, add dressing ingredients plus remaining 1 tsp kosher salt to a large mixing bowl. Whisk together and set aside.
  • Chop eggs, red onion, celery and pickles. Add cooked potatoes to the dressing in the mixing bowl and top with chopped eggs, onion, celery, pickles and crumbled bacon.
  • Gently stir it all together, until well combined. Cover tightly and refrigerate until cold, at least 3-4 hours.

3 pounds small Yukon Gold potatoes, unpeeled (about 10)
2 celery ribs, chopped
1 small onion, chopped
1 cup water
1/2 cup white vinegar
3/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 pound bacon strips, cooked and crumbled

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce the heat; simmer, uncovered, just until tender, 12-15 minutes. Add the celery and onion; continue cooking until vegetables are tender, about 5 minutes longer. Drain; set aside., Meanwhile, in a small saucepan, whisk together the next 6 ingredients. Bring to a boil; cook until thickened, about 2 minutes., When cool enough to handle, slice the potatoes; return to saucepan with celery and onions. Add vinegar mixture, tossing to combine. Add bacon. Simmer mixture 10-12 minutes or until heated through. Serve potato salad warm.

3 lbs red potatoes
1/2 cup finely chopped red onion
1/4 cup thinly sliced green onion
1/4 cup finely chopped celery
1/4 cup chopped fresh parsley
1/4 cup finely chopped sweet pickle
2 tablespoons beer
2 tablespoons cider vinegar
1/4 cup olive oil, divided
3/4 cup finely chopped yellow onion
3/4 cup beer
1/4 cup cider vinegar
1 teaspoon sugar
3/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
2 tablespoons Dijon mustard

Steps:

  • To prepare salad, place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat, and simmer 25 minutes or until tender. Drain; cool. Cut potatoes into 1/4-inch slices. Combine potatoes, red onion, and next 6 ingredients (through 2 tablespoons vinegar); toss gently.
  • To prepare dressing, heat 2 tablespoons oil in a small skillet over medium-high heat. Add 3/4 cup yellow onion to pan; sauté 3 minutes or until tender. Add 3/4 cup beer and next 4 ingredients (through pepper); bring to a boil. Cook until reduced to 1/2 cup (about 6 minutes).
  • Place mixture in a food processor. Add mustard to food processor; process until smooth. With processor on, slowly pour remaining 2 tablespoons olive oil through food chute, processing until smooth.
  • Pour dressing over potato mixture; toss gently.
  • Serve immediately.

6 medium potatoes
4 slices bacon
1 tablespoon chopped onion
1 stalk celery, chopped
1 teaspoon salt
2 tablespoons butter
2 tablespoons unbleached flour
1/2 teaspoon dry mustard
1 tablespoon sugar
1 (12 ounce) can beer, any brand
1/2 teaspoon Tabasco sauce
2 tablespoons chopped fresh parsley

Steps:

  • Boil potatoes in medium-size saucepan until just tender.
  • Peel and slice.
  • Fry bacon until crisp.
  • Break into small pieces and mix with onion, celery and salt; set aside.
  • Stir melted butter and flour in a small saucepan until blended.
  • Add mustard and sugar.
  • Slowly stir in beer and Tabasco sauce.
  • Bring to boil, stirring constantly.
  • Pour over potatoes.
  • Sprinkle with parsley.
  • Toss lightly and let stand 1 hour.

7 -8 large russet potatoes, skinned boiled and chopped into 1 inch pieces
8 -12 eggs, boiled and chopped into 1 inch pieces
1 (14 ounce) can black olives, cut in quarters
1/2-1 red onion, chopped fine
1 cup sweet pickle, chopped
3 -4 celery ribs, diced
2 -3 cups mayonnaise
1/4 cup mustard
2 -4 tablespoons Dijon mustard
salt
pepper
garlic salt

Steps:

  • Mix all veggies and eggs in a large bowl.
  • Stir in mayonnaise, mustards and seasoning to taste.
  • You can add more or less of all the mayo, mustard, seasonings to your preference.
  • I start off with less of the mayo, mustard, seasonings and add until I like the flavor!

1 small onion, chopped
salt, to taste
1 cup fat-free mayonnaise
2 tablespoons prepared mustard
1/4 tablespoon hot pepper sauce
1/2 cup beer
2 tablespoons chopped parsley

Steps:

  • Cook potatoes in skins until tender (bake about an hour at 350 degrees F).
  • When cool, peel and dice.
  • Add celery and onion and season to taste with salt.
  • Blend mayonnaise with mustard and hot pepper sauce; gradually stir in beer. Add parsley.
  • Pour over potato mixture. Mix lightly with fork. Chill.
