1 1/4 cups yogurt, I like high fat Greek yogurt
1 1/4 cups water
1/4 teaspoon turmeric
1 teaspoon chili powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1 teaspoon salt
1 teaspoon brown sugar
2 teaspoons olive oil
1 teaspoon whole cumin seed
1 tablespoon fresh coriander, chopped (cilantro)
2 fresh green chilies, sliced, and seeded
1 fresh coriander sprig (optional)

Steps:

  • 1. Boil the potatoes in salted water with their skins on until they are just tender, then drain and set aside.
  • 2. Mix together yogurt, water, turmeric, chili powder, ground coriander, ground cumin, salt and sugar in a bowl. Set aside.

POTATO/YOGURT SOUP

Potato/yogurt Soup image

I threw this together for my infant son and my "big girls" all thought it was a treat and begged for a taste. At supper, I had to break up fights of girls stealing spoonfuls from each other. My grandmother made soup like this when I was growing up, but this is a healthier version.

Categories     Potato

Time 30m

Yield 6 cups

Number Of Ingredients 4

6 medium potatoes
1 cup plain yogurt
3 cloves fresh garlic
1/4 teaspoon dill seed

Steps:

  • First peel and slice potatoes and rinse in cold water.
  • Place potatoes in a heavy large pan and cover with water, just to cover.
  • Boil until soft but not mushy.
  • Pour about half of the water off of the potatoes, but save half, the starch that boils off the potatoes helps the soup to thicken and holds more nutrients.
  • Add yogurt and spices and simmer 5-10 minutes to let the flavors mingle, and serve.
  • I like a little shredded cheese in mine, Grew up with Cheddar, but like Mozzarella now.

BAKED POTATOES WITH YOGURT CHEESE

Baked Potatoes with Yogurt Cheese image

SECRET INGREDIENT Made by draining yogurt to remove excess moisture, yogurt cheese is a tangy, low-fat alternative to sour cream. Once you've discovered how easy it is to prepare, you'll find many ways to use it-on top of baked potatoes, spread on crackers or bread, or served as a dip for chips or blanched vegetables. Try it plain or flavored with the variation that follows.

Yield serves 4

Number Of Ingredients 4

2 cups plain low-fat yogurt
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
4 medium russet potatoes, scrubbed

Steps:

  • Line a fine sieve with a coffee filter or paper towel and set over a large glass measuring cup or deep bowl. Fill sieve with yogurt. Cover with plastic wrap, and refrigerate at least 8 hours (or up to 24 hours).
  • Discard liquid that has collected in the measuring cup; transfer yogurt cheese to a bowl. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Preheat oven to 400°F. Prick potatoes in several places with a fork; place on a baking sheet (or directly on oven rack). Bake until tender when pierced with a paring knife, 45 to 60 minutes (depending on size).
  • Split potatoes open with a fork; serve with yogurt cheese.
  • Cook 1 garlic clove in boiling water 1 minute; remove, and chop finely. Stir garlic and 3 tablespoons finely chopped fresh chives into yogurt cheese
  • Yogurt cheese can be refrigerated up to 1 week in an airtight container. Before serving, pour off any liquid that may have accumulated.
