Steps:
- Preheat oven to 375ºF (190ºC).
- Slice potato in half then take the half and quarter it.
- Whisk 3 eggs in a small bowl.
- Combine remaining ingredients in a medium bowl.
- Coat each wedge in egg wash, then coat in dry mix, until entirely covered.
- Place on a greased baking sheet and bake for 30 minutes.
- Allow to cool for 5 minutes.
- Enjoy!

RIDICULOUSLY EASY OVEN POTATO WEDGES
I was scrambling to make something to go with an "interestingly" spiced roast that my mum made, and came up with this combination of spices for potatoes You don't really need to cut the potatoes into wedges or any particlar shape, I never do. just make sure the lumps are around the same size

Steps:
- Preheat oven to 375 degrees F.
- Dice, cube or chop the peeled potatoes into whatever shape you feel like making them.
- Rinse then thoroughly in cold water, drain well and transfer to a large bowl.
- Add oil and toss the potatoes around so they are evenly coated.
- Add all of the spices and the cheese and toss so they are evenly coated.
- Place on a baking pan in one layer (preferably lined) and bake for around 30-40 minutes, depending on person preference of potato texture.
- Suggestions! It's really really handy to line the pan before you bake them, or else you will have a sticky baked on mess on your pans that takes an awful lot of elbow grease to get rid of. You could add lemon juice to the potatoes to give them an extra fresh taste.

Steps:
- Cut each potato in half, and each half in 3 and set aside.
- In a bowl mix all the ingredients together (except for the oil) to make your seasoning mix.
- Next lay the potatoes on a baking sheet and sprinkle with seasoning mixture on both sides.
- Place potatoes skin side down on a baking sheet and drizzle with olive oil.
- Bake at 400°F for 40 minutes and then at 450°F until desired crispiness.
- Serve as a snack or appetizer or even with eggs for breakfast. Part of any dinner or lunch from fried/baked chicken to even steak!

CRUNCHY POTATO WEDGES
This recipe delivers fast food-style potato wedges at home. The spicy, light and crunchy coating contrasts perfectly with the fluffy interior. Serve these with one or two of my creamy dipping sauces. Recipe adapted from "Cook's Country."

Steps:
- Note: If you don't have buttermilk, substitute 1 cup milk mixed with 1 tablespoon lemon juice. Let the mixture sit 15 minutes before using.
- Combine salt, pepper, onion and garlic powders, cayenne and oregano in a small bowl.
- Toss potato wedges with 4 teaspoons spice mixture and 1/4 cup oil in large microwave-safe bowl.
- Cover bowl tightly with plastic wrap.
- Microwave on high until potatoes are al-dent tender but not falling apart, about 7 to 9 minutes, shaking bowl (without removing plastic)to re-distribute potatoes halfway through cooking.
- Slowly remove plastic wrap from bowl (be careful of steam) and drain potatoes.
- Arrange potatoes on rimmed baking sheet and cool until potatoes firm up, about 10 minutes.
- (Potatoes can be held at this juncture, at room temperature for up to 2 hours.).
- Heat remaining 3 quarts of oil to 340 degrees in deep fryer or Dutch oven.
- Meanwhile, combine flour and cornstarch in medium bowl.
- Whisk buttermilk and baking soda in large bowl.
- Working in two batches, dredge potato wedges in flour mixture, shaking off excess.
- Dip in buttermilk mixture, allowing excess to drip back into bowl, then coat again in flour mixture.
- Shake off excess and place on wire rack.
- (Potatoes can be coated up to 1/2 hour in advance.).
- When oil reaches 340 degrees, add half the coated wedges and fry until deep golden brown, 4 to 6 minutes.
- Transfer wedges to large bowl and toss with 1 teaspoon spice mixture.
- Drain wedges on baking sheet lined with paper towels.
- Return oil to 340 degrees and repeat with second batch of wedges.
- Serve with extra seasoning on the side, and one of my creamy dipping sauces.

- In a small bowl, combine all the paprika seasoning ingredients, stir.
- Cut the potatoes in half lengthwise, and cut each half into quarters lengthwise, making 16 total wedges.
- Place wedges in a bowl of water to remove the extra starch from the potatoes. Drain.
- Preheat oven to 400˚F (200˚C).
- Place wedges on a baking sheet and pour olive oil, 3 spoonfuls of the paprika seasoning, and parmesan over the potatoes.
- Using clean hands, mix together to coat potatoes, then arrange potatoes in rows, without overlapping, so they bake evenly.
- Bake for 30 minutes, flipping halfway, or until crispy.
- Cut cod fillet down the middle and into 3 to 4-inch (8-10 cm) long pieces. Some of the thicker pieces may need to be cut in half.
- Mix the paprika seasoning into the panko.
- Dredge each fish stick through the eggs, flour, back in the egg, and finally, panko. Place on a baking sheet
- Bake with the potato wedges for 15 minutes, flipping halfway, or until golden brown and cooked through.
- Serve with your favorite dipping sauces.

- Heat the oven to 200C/180C fan/gas 6. Bring a large pan of lightly salted water to the boil. Cut the potatoes into chunky wedges, then boil in the water for 7 mins. Drain and leave to steam dry for 5 mins.
