SLOPPY JOE BAKED POTATOES

Steps:
- Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave until tender, turning once, about 15 minutes. Set aside.
- Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the onion, carrot and celery and cook, stirring occasionally, until the vegetables are tender, about 7 minutes. Add the turkey and 1/4 teaspoon each salt and pepper; cook, breaking up the meat with a wooden spoon, until no longer pink on the surface, about 5 minutes. Stir in the ketchup, chili sauce, 1/2 cup water, the chili powder and garlic powder; continue cooking until the meat is cooked through, 3 to 5 more minutes.
- Split the baked potatoes open lengthwise, dot with the remaining 1 tablespoon butter and gently fluff the flesh with a fork. Top with the turkey mixture and sprinkle with the cheese while still hot.

- Heat oven to 325°F. In large skillet, brown ground beef, onion and bell pepper over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
- Add sandwich sauce and corn; mix well. Reduce heat; simmer 4 to 6 minutes or until thoroughly heated and corn is crisp-tender, stirring occasionally.
- Meanwhile, in medium saucepan, bring water and garlic salt to a boil. Remove saucepan from heat; stir in potato flakes until well blended. Add sour cream and egg; mix well.
- Spoon beef mixture into ungreased shallow 2-quart casserole. Spoon potato mixture in circle around edges of casserole. Sprinkle potatoes with cheese.
- Bake at 325°F. for 25 to 30 minutes or until potatoes are set. If desired, sprinkle potatoes with chopped fresh parsley.

- Preheat the oven to 450 degrees F (230 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain any fat and set beef aside.
- Saute onion and garlic in the same skillet until translucent, 3 to 5 minutes. Add corn and bell pepper; cook until soft, 5 to 10 minutes. Return beef to the skillet. Stir in Sloppy Joe sauce, cream cheese, paprika, salt, and pepper. Simmer over medium-low heat until sauce is heated through, about 5 minutes.
- Pour the beef mixture into a 9x13-inch baking dish and spread evenly. Top with 1 cup Cheddar cheese. Arrange potato nuggets over the top. Sprinkle remaining Cheddar cheese on top.
- Bake in the preheated oven until the potato nuggets are crispy and golden, about 25 minutes. Serve hot.

WW SLOPPY JOE CASSEROLE
A friend gave me a copy of this recipe. I just tried it for the first time tonight. I baked it for 45 minutes and forgot to check on the progress in the oven.....half of the cheese burned! So take the baking time with a grain of salt. I would closely watch, or cover it loosely with foil partially through the baking time. We thought this was a wonderful way to have a cheesy saucy pasta dish but still be able to watch our weight! I haven't tweaked this yet or verified the points calculation - but who can resist sharing another WW recipe! 6 WW points per serving.

- Preheat oven to 350 degrees.
- Cook macaroni per package directions; drain.
- Meanwhile, brown the ground turkey in a skillet. Drain.
- Stir in seasoning mix,tomato paste, tomato sauce, cottage cheese and one cup water.
- Spray a 2 1/2 qt casserole w/non-fat cooking spray.
- Put a small amount of sauce on the bottom of the dish. Layer half the macaroni and half the meat sauce; repeat.
