2 lb ground beef
1 cup onion, diced, sauteed
3 cloves garlic, minced, sauteed
1 ½ cups grated parmesan cheese, divided
2 eggs
1 cup panko breadcrumbs
2 teaspoons salt
1 ½ teaspoons pepper
2 teaspoons worcestershire sauce
½ cup milk
½ cup fresh parsley, finely chopped
1 ½ cups ketchup
½ cup brown sugar
2 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons paprika
¼ cup tomato paste
1 lb yukon gold potato, peeled, chopped, cooked
2 tablespoons butter
1 teaspoon salt
½ teaspoon pepper
1 cup milk
28 slices bacon, slices

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large bowl, mix together beef, cooked onions and garlic, Parmesan, eggs, panko, salt, pepper, Worcestershire, milk and parsley. Set aside.
  • In another bowl, make the glaze by mixing ketchup, brown sugar, mustard powder, onion powder, paprika, and tomato paste. Reserve half of the glaze in a separate bowl for after the meatloaf is cooked. Set aside.
  • In a large bowl, mash cooked potatoes, butter, salt, pepper, milk and parmesan to desired consistency. Set aside.
  • Line a bundt pan with slices of bacon and use a pastry brush to spread a layer of glaze on the inside of the bacon.
  • Add ⅔ of the meat to the bottom of the bundt pan and spread up the sides and up the middle of the pan making a "bowl" for the mashed potatoes.
  • Add the mashed potatoes into the "bowl" and smooth out. Top the mashed potatoes with the remaining meat, smooth out, coat the top with the raw meat glaze, and fold the slices of bacon over the top of the meat. Cover with foil and bake for 1 hour, remove the foil after 30 minutes and carefully drain some of the fat before putting it back into the oven.
  • Place a cooling rack on top of the bundt pan and flip over onto a baking sheet. Remove the bundt pan and coat the meatloaf with the reserved glaze.
  • Broil on high for 3-5 minutes or until the glaze has caramelized.

We gave classic meatloaf a keto-friendly upgrade. We caramelized the roasted red peppers to add a layer of sweetness -- without ketchup -- that balances the deep flavors of tomato paste and Parmesan. The almond flour and egg help the meatloaf hold together and slice beautifully without drying it out, and the bacon renders over top to add further flavor.

4 tablespoons olive oil
8 ounces cremini mushrooms
2 scallions, whites and greens, minced
1/4 cup gluten-free tomato paste
7 ounces jarred roasted red peppers, drained and thinly sliced
1 pound ground beef chuck
1 pound ground pork
1/2 cup shredded sharp Cheddar (about 2 ounces)
1/2 cup fresh parsley, roughly chopped
1/4 cup grated Parmesan (about 1 ounce)
1/4 cup almond flour
1 tablespoon fresh thyme leaves, roughly chopped
1 large egg, lightly beaten
Kosher salt and freshly ground black pepper
6 strips bacon

Steps:

  • Preheat the oven to 375 degrees F. Grease the bottom of a rimmed baking sheet with 1 tablespoon of the olive oil. Set aside.
  • Put the mushrooms in a food processor and pulse until finely chopped but not mushy and blended, about 10 times.
  • Heat 2 tablespoons olive oil in a medium skillet over medium-high heat. Add the scallions and cook, stirring occasionally, until softened, about 1 minute. Stir in the mushrooms and cook until lightly browned, about 3 minutes; some liquid will be released but should evaporate while cooking. Add the tomato paste and cook 1 minute, stirring to coat the mushrooms. Transfer the mushroom mixture to a large bowl and set aside.
  • Add the red peppers and remaining 1 tablespoon olive oil to the same skillet over medium heat. Cook, stirring occasionally, until light brown and well caramelized, about 10 minutes. If the bottom of the skillet starts browning too quickly, add 1 teaspoon of water and scrape with a wooden spoon. Add the red peppers to the mushroom mixture. Add the ground chuck, ground pork, Cheddar, parsley, Parmesan, almond flour, thyme, egg, 1 teaspoon salt and 1/2 teaspoon pepper and mix to combine.
  • Transfer the meatloaf mix to the prepared baking sheet and form into a loaf. Arrange the strips of bacon over top in a single layer. Bake until an instant-read thermometer inserted in the middle of the loaf registers 165 degrees F, 50 to 60 minutes. Let rest for 10 minutes before serving.

1 pound russet potatoes (about 2 medium), scrubbed clean
1/2 stick (4 tablespoons) unsalted butter, cut into pieces, at room temperature
1/3 cup sour cream
2 teaspoons finely chopped fresh chives
Kosher salt
1/2 cup breadcrumbs
2 tablespoons extra-virgin olive oil
1/2 medium onion, diced
2 cloves garlic, minced
2 teaspoons dried oregano
Kosher salt and freshly ground black pepper
2 1/2 pounds meatloaf mix (or a combination of ground beef and pork)
1/3 cup grated Parmesan
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1/2 cup ketchup
1 teaspoon dark brown sugar
1 teaspoon apple cider vinegar
1 pound frozen peas
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Unsalted butter, at room temperature, for serving
Coarsely ground black pepper, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil.
  • For the mashed potatoes: Poke each potato with a fork several times and microwave until soft, about 15 minutes (or use your microwave?s potato setting). Cool until you are able to handle them with a towel, about 2 minutes. Halve the potatoes and scoop out the flesh with a spoon and discard the skin. Mash the potatoes and butter in a medium bowl until smooth then fold in the sour cream, chives and 1 teaspoon salt until well combined. Set aside.
  • For the meatloaf: Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the oil, onions, garlic, oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook, stirring, until onions are tender, about 8 minutes. Let cool slightly. Add the onion mixture to the bread crumbs along with the meatloaf mix, Parmesan and Worcestershire sauce. Toss and mix gently. Add the eggs and mix it completely into the meat mixture.
  • Transfer 1/2 of the meatloaf mixture to the prepared baking sheet and gently press into a 12- by-3-inch rectangle. Gently create a well down the middle of the meatloaf mixture with a 1/2-inch wall on all four sides. Spoon the mashed potato mixture into the well. Working with a quarter of the remaining meatloaf mixture, gently flatten the mixture with the palms of your hands. Lay the meatloaf mixture over 1/2 of the mashed potatoes. Repeat with the remaining meatloaf mixture ensuring the potatoes are completely enclosed.
  • For the glaze: Whisk together the ketchup, brown sugar and vinegar in a small bowl. Spoon the glaze evenly over the entire loaf.
  • Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.
  • While the meatloaf is cooking, cook the peas according to package directions. Toss with the butter and season with salt and pepper. Keep warm.
  • Slice and serve the meatloaf with butter, black pepper and the peas.

Steps:

  • Carefully slice off and remove the 'silverskin' (white coating) from the tenderloin; leaving any visible fat in place.
  • Mix together the mustard and spices to a smooth paste. Evenly spread the spice mixture around the tenderloin.
  • Fold under the small end of the tenderloin so it doesn't overcook.
  • Wrap the bacon as tight as you can around the tenderloin, with a slight overlap; trying to have your starts and finishes on the underside.
  • Secure the bacon by piercing with a toothpick. Place on a baking sheet; toothpick side down.
  • With a pepper mill grind a lot of pepper over the top.
  • Bake @ 425F for 15-20 minutes or until the internal temperature is 145°F.
  • Let rest a couple of minutes. Slice into serving sizes about 1 inch thick.

6 medium baking potatoes
1 pound ground beef
2 tablespoons chopped onion
1/3 cup sour cream
1 can (4 ounces) chopped green chiles
3 tablespoons butter
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
3/4 cup shredded cheddar cheese

Steps:

  • Bake potatoes at 375° for 1 hour or until tender. Cool. Meanwhile, in a large skillet, cook the beef and onion over medium heat until the meat is no longer pink; drain. , Cut a thin slice off the top of each potato. 3/4 cup V8 vegetable juice
1 egg
1 tablespoon gluten-free Worcestershire sauce
1 small onion, fine diced
3/4 cup gluten free breadcrumbs
1 1/2 teaspoons salt
1/2 teaspoon Keen's dry mustard
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon ground thyme
2 cups fresh spinach leaves, large veins removed
8 slices swiss cheese or 200 g sliced swiss cheese
8 slices freybe gluten free capicolli style ham or 175 g ham
2 sheets wax paper (10 inch by 14 inch)

Steps:

  • In a large bowl mix together the ground beef, V8 juice, egg, onion and Worcestershire sauce.
  • Mix together the spices and breadcrumbs. Add to meat and mix until well blended.
  • Place the ground beef between the layers of wax paper. Roll into an even rectangle shape, about 1/2 inch thick.
  • Arrange a double layer of spinach leaves onto the ground beef within 1/2 inch of the edges.
  • Top the spinach with the capicolli ham then the swiss cheese.
  • Carefully roll up, using the wax paper to lift. Press the edges and ends to seal.
  • Place on a lightly oiled baking pan, seam side down.
  • Brush the top with a little melted butter and sprinkle with a few breadcrumbs.
  • Bake uncovered @ 350F for about 45 - 50 minutes.
  • Let rest for a few minutes. Slice and serve.
